Remember this from childhood? I scream you scream we all scream for ice cream. Right? Okay maybe not scream but it sure is a wonderful treat on a hot day and August is full of hot days especially here in the south.
Welcome to the August edition of Blog With Friends and this month's theme is...ice cream.
Tropical Sugar Free Ice Cream - no machine needed
half pint unsweetened heavy whipping cream
1/4 package Sugar Free Instant pudding mix, coconut flavor
2 frozen bananas
1 frozen peach or any other fruit
6 oz Fage 0% Greek NonFat Yogurt
Place all the ingredients in a food processor or large cup blender. Blend until smooth, it will be the consistency of soft serve ice cream. You can then transfer to a air tight container and freeze. Be ware! The longer it is frozen the harder it becomes and if you do not use fresh frozen bananas ice cystals will form. It is better to peel very ripe bananas and freeze a few hours then use. If you are like me and have bananas in the freezer for smoothies, save those for smoothies as the ice cream will not turn out as nice.
I topped mine with a teaspoon of nut free granola. You could also add toasted coconut, Fat Free whipped topping or anything else you like.
This is low calorie, low points if following WW but high in fat due to the whipping cream. This can be reduced by only using half of the small container. If you choose to go this route, whip it separate, blend the other ingredients and fold gently. You still get a nice ice cream with less points.
