Get Out and Play - Photo Challenge June 2019

Happy Sunday and welcome to the 6th Photo Challenge of 2019 BUT my first! I was so excited about this challenge when my friend Tamara from Part Time Working Hockey Mom told me about it. She mentioned it to me after reading my 7th blogiversary post. In that post not only did I celebrate seven years of blogging but also a reintroduction of myself and the changes of my blog. The photo challenge is a perfect fit for me and is put on by A lil'HooHaa. with each month having different theme. You can visit PJ's blog to find out all the details and if you're a blogger who loves to take photos why not join in the fun. There is a Facebook group as well for those who participate. This has been going on for some time now, since 2013 to be exact.
Some of you reading this may already know about the challenge because I sent out a few messages inviting you to join. I was so excited to find this and join I started inviting folks and had not even participated yet. How's that for jumping in with both feet?

The theme "Get Out and Play" is subject to interpretation. It can mean a number of things to many folks. For me, getting out to play means this, get out, get off your butt, do something, walk, hike, take pictures just don't sit inside and do nothing.

This first photo, I was waiting outside. Enjoying the sun while my husband was in a cigar shop making a purchase for his addiction. He loves cigars. I glanced up and saw the wall sconce, lantern, light fixture. I thought wow what an interesting shot that would be. I didn't have my camera on me, so I used my trusty phone. It serves me well. 

Ohh my little Honey. She comes to visit each day. I will see her little face up to the screen door peeking into my kitchen. If I don't see her, I can go out and call her, make my little kissy noise and she will come. This is my play time. I love the squirrels and feeding them is pure joy to me. I almost have her eating out of my hand!

The next three photos I took while visiting our youngest son and his family in Biloxi, Mississippi. I had never been to the Gulf Coast until last November and instantly fell in love with it. Being a coastal girl I have salt water coursing through my veins. Salt water therapy, THAT is definitely my "get out and play" card! I could sit here by the water for hours, listening to the water, watching the clouds floating by. Ahh yes. Heaven.

To Spend or Not To Spend

Tell Your Story is my theme. How in the Sam Hill do I write about and weave in a recipe to this? 
How about we start here.
I saw this on Facebook and of course I had to run through each month with my kids, grands, in laws, etc...it became apparent that maybe these things know more than we give them credit for. Example...
Jan. would be my mom's youngest sister, my Aunt W. birthday and YES, she LOVES to buy clothes but not just for herself, she buys them for everyone if she knows your size and even if she doesn't. You'll get the size she thinks you are. Which can be insulting or embarrassing!
My good friend Di, she is a clothes shopper.
My youngest son's wife K. Oh man, talk about loving to buy clothes and shoes. She has a small trailer full when they move I honestly have never seen so many shoes before except in a store.
Feb...overthinking. My maternal grandfather, my mom's oldest sister's husband and my cousin T. NONE of whom I would say every could have been accused of over thinking. My grandfather was a very quiet man, so he may have been deep in thought.
March...eating. My husband. Enough said, I mean it says eating. He loves to eat and we all need to in order to survive.
April...sleeping. My cousin E, my friends K, L and C. Oh yes and my cousin S. Sleeping? No, they are all pretty much go, go, go personalities. Can't win them all FB.
May...being lazy. WOW I would not say this but my niece is the one who posted it and she said it was spot on. I would say she goes with April and March because this girl loves to eat and sleep. My nephew has the same birthday as she does and no, he is not lazy. He is a work horse.
June...spending money. My MIL loved to spend money. My oldest son fits this and he is a June baby. I don't, I spent so many years living hand to mouth that spending money causes me to be very anxious. I do enjoy it when I have extra and know everything is paid. I buy for the family, the house, the grandkids but rarely for me.
July...being late. OMG my Aunt L wrote the book on being late. We used to tell her one o'clock for a family event that was at three and she'd still be late.
August...being beautiful. We are all beautiful in our own way so this could be every month.
Sept...making a mess. None of my children were born in September but ALL the boys fall into this category. Mess making at it's finest was perfected by my husband and his birthday is in March.
Oct...fishing. I have a sister in law who loves to fish as good as any man I've ever met. She would do it every single day and did for a while.
Nov...being loud. This made me laugh so hard. My youngest son, sorry JR you know it's true, is LOUD. He has been loud most of his life and is now blessed with a loud child.
Dec...getting drunk. Unfortunately I have a loved one, well two, born in December and getting drunk is a favorite past time for them. 

What no recipe? Nope not today. Like I mentioned on June 18th, there's a lot of changes and some will be popular, some not, and I am perfectly okay with that.

Summer, Grandkids, Life - June 2019 FOTW

Jesse was outside smoking and came in the kitchen door. "Mom I just opened my Facebook and do you know the first thing that popped up on my page?"
Me, "no."
Jesse, "Easter eggs!"
Me laughing really hard. 
I had shared a photo of two men’s butts painted like Easter eggs. 
He walks out. "That’s distributing."
I yell "YOU'RE WELCOME" laughing so hard!

Seriously, do people REALLY respond to these things?? The above photo is a screenshot from my local yard sale/trade it FB page. Someone seriously posted this. SMH

Did you know that you can turn yourself into a Funko Pop doll????? OMG I was looking at them online because my oldest son's wife has a HUGE collection. So I was looking for one maybe that she does NOT have. Well...she doesn't have me! LOL

Jesse is a craft beer lover. He tries something new each payday. This particular day he has a chocolate peanut butter ale. So we start discussing different flavor combos that would be good. Maple bacon was the last suggestion. Jesse "uh no! It would end up tasting like grease. Then you’d really have the $h1t$. It would be like an oil slick." LOL this boy I tell you. He tells it like it is.
Come on over, you can't miss us. It's the green house about 1/4 mile from the light. LOL Every time we pass this house, this is our conversation.
"So where do you live?"
"Turn R off Chapel Hill and you can't miss it, it's on the right, the green house."

For my birthday my wonderful husband surprised me with a trip to Biloxi, Mississippi to see our youngest son and his family. I was thrilled. We last saw them for Thanksgiving. Once there they all surprised me with my birthday gifts. A camera (which I've wanted forever it seems), lens, tripod, flash, filters, bag, etc... so y'all look out. Because once I get it figured out, you'll be flooded with pictures!
While there we had some great laughs. If you are familiar with 3 year olds, you can imagine.

H:I had fun with you today grandma (this came with the good night hug, totally made my whole day!)

H to me:Take my picture. Again. Again. Again.

Are you a cowboy? You got a hat like a cowboy. (every time we'd leave the house, she'd say 'are you a cowboy' and giggle)

H to grandpa: You have a big nose. A cowboy hat and a big nose. (wow the honesty of little children. You need thick skin to stay around them)

No Fuss Muffins and The Re-Invention of Me

Today will be a lot different than usual. If you've been around before then you are noticing some changes. New profile picture on Facebook, new header (both thanks to Karen!) and more than just recipes.

Life’s a parade: sometimes you stir the pot, sometimes you just march along.

Hey y’all, can you believe it’s been 7 years? Seven! Seven years of blogging, sharing my life, shooting photos, writing recipes, and changing my lifestyle about seven times.

Today I’m introducing my new look and “re-introducing” myself to you.

If you’ve been around then you are familiar with the writing challenges and group posts that I participate in each month. I used to share six different ones on here, then I split them between this blog and my other blog, Cognitive Script. However, with a busy life, keeping up with two blogs is a daunting task. So I am combining them again here on my first love, Spatulas on Parade. You know the old adage,” if it ain’t broke don’t fix it”.

I have been and will continue to participate in the challenges, write recipes and share stories, BUT I will also be including other aspects of my busy life. My Origami Owl business, my love for photography, our upholstery business will be included, as will stories about life growing up. I am a foodie, have always been a foodie but my blog will no longer be ONLY food. Yep, that’s right. Not every post will be about food. Change is necessary, and not focusing on food all the time has to be one of them. Focusing on my new health challenges has proven to stifle my creativity some, but that’s OK, there’s plenty of new ventures to share. Change, sometimes we all need it for growth.

SPATULAS ON PARADE

Now since I started off seven years ago with a recipe, it is only fair that today include one as well. This recipe is not WW friendly but was delicious and one I'm sure will make its way to our table again real soon.
No Fuss Muffins
1 cup self rising flour
1/2 cup milk, reduced fat
1/2 cup sugar
2 TBSP mayo (I only use Duke's)

** quick side not** The first time I made these I used 1/2 cup sugar! I thought it was CUP not teaspoon. And they were supposed to be ROLLS NOT muffins!! They were sweet and delicious! SO...I decided to keep them that way. I can't remember where I saw the recipe but I took a snap shot from a magazine. Well, obviously I need new glasses. But the second time I used the teaspoon, great rolls but we preferred the muffin version or the Oops! ones. LOL You decide which you want, rolls with 1/2 tsp or muffins with 1/2 cup.

Mix the dry ingredients, then stir in the wet. It is a thick smooth batter. Scoop into 6 muffins, bake at 450 degrees for 15 minutes. Depending on your oven. Mine runs hot, so after 10 minutes I reduced the heat to 350 and baked 10 more minutes.

Shredded Taco Chicken Salad

Taco Tuesday!! How about taco salad? How about if we drop the calories and fat but pack on the flavor? Sound good? 

This is the simplest recipe and we do this a lot. Sometimes the ingredients vary, sometimes more is less, ya know?

There are days where I am so busy there simply is no time for complicated meals. I am sure you find yourself in that spot at times. When I do have extra time, this is when it becomes possible to plan, prepare, meal prep, and store food/meals for later.

Something as simple as cooking a bunch of chicken breast in the crock pot. Shred the meat, toss in taco seasoning. I make my own to reduce the sodium and then also I know it's fresh. Only takes a few seconds.

Chop up tomatoes, cucumber, avocado*don't forget to squirt on some lime if not using them right away, peppers, onions, shred some cheese and lettuce. Now you're ready to put it all together later. I do this in the afternoon after lunch, zip it all up in bags so when it's supper time, we can use what we want and put it back in the fridge. The leftovers are great for salads the next day.

You can add refried beans if you want, leftover grilled corn, a can of black beans rinsed and drained will work as well. Salsa over the top and BAM you're done in a few minutes.

Due to cutting back on calories and fat, I place my salad/lettuce on the bottom, sprinkle over the shredded chicken, veggies, salsa and I'm done. I take 5 tortilla chips and break them up, drop over the top and I still feel like I'm enjoying Taco Tuesday without breaking the bank of my WW points.

We use the shredded chicken later for quesadillas, more taco salad, mix the chicken with some bbq sauce a toasted bun and leftover salad or slaw. There are so many options.

5-6 large chicken breast, cook in the slow cooker for 4-6 hours on high.
Shred, mix in the seasoning and you're ready to go.
3-4 TBSP of taco seasoning, once the meat is shredded
This will make 10-12 salads or countless tacos!!

Shrimp Summer Salad Fireflies BWF

It's June and time for our monthly group post of Blog With Friends. For this month, since it's Summer time, we chose Fireflies. How fun is that? At the end of the post you will see a lovely collage created by Karen at Baking In A Tornado along with links to each project.
I have very fond memories of fire flies. We used to catch them as kids and put them in mason jars. My mother told me that I could not keep them because they would die. So I would have to let them go each night. My neighbor Lisa and I would run around the yard barefooted, laughing and giggling, chasing fire flies and putting them in jars. We would then go sit under the big Gum Tree in our front yard or climb up in the mimosa tree, looking at our little catch, watching their tails light up and talking. Then we one of us got called in, we'd release them to fly off into the night.
Fire flies have always held a place in my heart. I remember that seeing those little lights in the evening as the sun went down meant it was time to go play and it was summer. You never saw them until it was officially summer.
Last week we were watching TV and I saw something outside of the living room window, I looked really hard, and got all excited! It was a fire fly!! YES! Officially summer. 😊💜🐝
Now here are a few oddly known facts about fireflies...and here is how the conversation started.



My wonderful husband says "did you know that shrimp are the cockroaches of the sea?" I'm like, ugh! NO, but growing up on the coast with uncles and a grandfather that did commercial fishing/shrimping, I do know that they are bottom dwellers, bugs, and they eat crap.
He said, "yeah, Joe Rogan from Fear Factor, he once said on the show
'this is why people who have a shellfish allergy after eating a roach have a reaction.'" 
Now what  does that have to do with fire flies? They are insects. And we were discussing them, when he saw the above post on Facebook and the conversation went down hill from there.

How is that for a segway into a recipe post? LOL not good but seriously, if you knew my dad, you'd understand this stuff does not faze me one bit in the world.


The first photo you saw was for this recipe. A light delicious salad with a Mediterranean or Latin flare. The flavors are screaming summer to me. I hope you enjoy it.

Shrimp Summer Salad
1 avocado diced
1 tomato diced and seeded
1/2 onion diced
1/2 cup diced cucumber
1 lb medium grilled shrimp
two tablespoons of salsa
Next time I'll use fresh lime and omit the salsa, also fresh cilantro.
It will be similar to guacamole but with shrimp.

Mix it all together and chill if not serving immediately.
