Dessert Heaven - Cinnamon Apple Caramel Dumplings

Here is a delicious Fall recipe. It is very simple and delicious, you could use pre-made items to make it quicker  but I prefer to make my own, when I'm up to it.
These were delicious and definitely something I will do again. You could use any fruit or pie filling from a can if you prefer. Great for potluck, or even a small party. 
Cinnamon Apple Caramel Dumplings or little bites of apple heaven as I like to call them.

4 large Fuji apples, peeled and diced
3/4 cup brown sugar
2 TBSP cinnamon
1/2 stick butter
2 oz bourbon

12 yeast rolls, thawed
caramel sauce, optional
vanilla ice cream, optional

I used a square baking dish, 9x9, rubbed it down with butter to prevent sticking and add an extra layer of flavor.
In a non stick skillet, place the apples, butter, brown sugar, a splash of bourbon, and cinnamon. Cook until the apples are tender and allow to cool.
Take a roll and flatten it by hand, stretch it out or roll it. Fill with 1 TBSP of apple mix and fold shut. Place in the baking dish. Repeat until all rolls are stuffed. I had apple mix left over so I poured it over the rolls. Sprinkle with more brown sugar and cinnamon. 
Bake until done. 400 degrees for 25 minutes, depending on your oven. I have gas so it tends to be hotter.
Drizzle with caramel and serve with ice cream.
