Strawberry Cream Cheese Stuffed Angel Food Cake -Gifts From The Garden - BWF - May

When we chose "gifts from the garden" I thought awesome! All sorts of things grow in the garden that I can use for a recipe. A dessert was not on my mind at the time BUT when strawberry picking opened up AND hubby wanted a dessert, I said wonderful. Two birds with one stone.
All of a sudden I had this vision in my head. I'm sure it's not new. I'm sure someone has done this before but it was new in my head. It turned out fabulously!
I chose strawberries because it's that time of year. When I was in junior high, now called middle school, our FFA used to have huge strawberry fields and for extra credit, after school I'd go pick strawberries and sell at the school stand. That was in late May early June. These days, I guess due to global warming, strawberries are earlier and earlier each year. At home in NC my aunt went to White's and picked strawberries over a month ago.
There is nothing in the world as good as a strawberry standing in the field. Find the perfect one, dark red, full and ripe, wipe off the dirt and take a bite!

In this recipe I did  cheat a little. I used a box cake mix. I know I know but I just wasn't in the mood to stand in the kitchen and whip egg white into stiff peaks, about 20 minutes. I normally do things from scratch but sometimes I have to use short cuts when my fibro is in a flare. So there ya go.

1 angel food cake mix
1 pint fresh strawberries
1 8 oz block of cream cheese
2 tsp vanilla extract
1 cup powdered sugar
Prepare the cake according to instructions. Sit out the cream cheese so it can warm up, otherwise the mixture will be chunky which is not appealing. I drop mine in the mixing bowl and let it sit. Once the cake has cooled off, slice in half, try to make it even, as you see, mine was not. LOL hubby didn't care one bit. Mix the cream cheese, vanilla and powdered sugar together until smooth and fluffy. Dice your strawberries and gently stir in. Spread the mix on the cake, add the top back on and sprinkle powdered sugar, decorate with strawberry slices. This needs to be stored in the fridge because of the fruit and cc. Ours didn't last but a few days. My husband loved it and said "well we can't let it go bad". Such a sweet jester! hahaha
A very simple, light and delicious dessert.
He loved it!

  1. I actually like using a mix now and then, especially when I want to serve a dessert as beautiful as this one but have a lot going on. Nothing wrong with easy, and this looks delish!
