Fiesta Skillet Dinner - KETO

We love Mexican food and TexMex flavors so when it comes time to cook supper, I tend to gravitate toward meals with certain flavors. This is a favorite of ours and so quick, easy and packed with flavor. you can add the mixture to tortillas if you are not concerned about carbs or chips.

saute 1 lb lean ground beef with 1/2 large onion, 3 each sweet baby bells...yellow, orange and red diced. 1/4 cup olives sliced after the mix is done, stir in cumin, paprika, chili powder, garlic powder and parsley flakes. Top with shredded cheese, your choice, cover and allow flavors to marry and cheese to melt. Serve with chips if you are not keto and if you want to keep it keto friendly then dip with pork rinds, cheese chips, zucchini chips. Serve with a nice salad, add sour cream for the fat and you are good to go.
