Fiesta Skillet Dinner - KETO

We love Mexican food and TexMex flavors so when it comes time to cook supper, I tend to gravitate toward meals with certain flavors. This is a favorite of ours and so quick, easy and packed with flavor. you can add the mixture to tortillas if you are not concerned about carbs or chips.

saute 1 lb lean ground beef with 1/2 large onion, 3 each sweet baby bells...yellow, orange and red diced. 1/4 cup olives sliced after the mix is done, stir in cumin, paprika, chili powder, garlic powder and parsley flakes. Top with shredded cheese, your choice, cover and allow flavors to marry and cheese to melt. Serve with chips if you are not keto and if you want to keep it keto friendly then dip with pork rinds, cheese chips, zucchini chips. Serve with a nice salad, add sour cream for the fat and you are good to go.

Slow Cooker Herb Roasted Chicken - KETO and FOTW

Fly on the wall time! I know I've said it probably two dozen times but it's my favorite time of the month.

First how about this super easy and delicious slow cooker KETO LOW CARB friendly herb roasted chicken! Mmm mmm
3-4 lb roasting hen
place in the slow cooker with 1 cup chicken broth
sprinkle liberally over the chicken:
thyme, rosemary, parsley flakes, fresh cracked pepper, salt, paprika, onion powder, garlic powder, chili powder and a dash of cumin.
Place the lid on top.
High for 4 hours
low for another 2-3
That simple! Serve with a side dish of fresh veggie or a nice big salad. The leftovers are great diced up and placed on a salad the next day or used in a lettuce wrap.
What a month it has been! We moved..again. I know. We must have gypsy blood in our DNA but it's all due to his job. It's okay.
Now some trivia for you. This was my 51st move!! AND I'm 51. How crazy is that??? Now what makes it even more unreal is that this was my 5th move in 6 months. Mind blown!?!

The night before we left for NC we are sitting in a very well known chain restaurant. We had just finished and were waiting on the bill. At the table next to us was an elderly couple who had...well, consumed a LOT of food and alcohol. Probably in their late 60's. She starts coughing. She looks at me and says "Excuse me, it must be the tomatoes, I'm allergic. She fans the air and says "It's too tomatoey in her, I can't breath let's go" and gets up to leave.
I almost lost it! Seriously!? Too tomatoey??? OMG I laughed so hard ONCE she was outside. She had just eaten a ton of shrimp with cocktail sauce. HELLO it is made of tomatoes. AND tomatoes in the air???? OMGosh
The pollen is HIGH, we walk outside and there she is. Sitting on the bench, which is green from pollen, smoking a cigarette. I laughed and said "but it's to tomatoey inside" right!

We saw our youngest son, his wife and my youngest grandbaby! My husband had not seen him in 4 years almost to the day and had never seen our granddaughter who turned 2 in February. So this was a very big deal for us. It also gave us some great laughs!

We are sitting at lunch and the 11 year old step brother to my daughter in law says, out of the blue. "Hello, My name is Christie Brinkley" we all just look at him. WHAT? He said it again. We all laughed. Who knows WHAT goes on in the mind of an 11 year old. We honestly might not want to know.

Our last night together we are all in the living room, we stayed at my DIL's father's home. He was gracious and offered. It was wonderful. So we are all in the living room and J walks through to the bedroom, says goodnight, then we hear the door open and he says "LET GO his wiener!" We look at each other and no one can contain themselves, we crack up. My DIL said "I don't even want to know!" LOL

On our way home from NC to GA...saw this store in a very small town. It made me laugh.

On our way back from NC to GA we are on the interstate and pass the speed limit sign. I said...wait TWO signs. Side by side? Yep. One said 60 the other said 70. I said so how fast do you go? Can they give you a ticket for going 65 in a 60/70 or do you have to be going 75+? Only in SC folks!

We pass a billboard and it says "RENT ME, OUTDOOR BILLBOARD SIGN" I'm like well no duh! Of course it's outdoors, whoever saw an indoor billboard sign. SC again.

I've driven a ton of miles in the last almost 4 years but never had I seen stop lights on the interstate until moving to HOTlanta. If the interstate is too congested the on ramp has a light that turns red. Then it only allows 1-3 cars on at a time when it turns green.

Slow Cooker KETO Mexican Chicken Soup

Our weather has been so stinking crazy. Hot, cold, rain, wind, hot, cold, I'm beginning to think Mother Nature is going through the change. Someone help her out and give her some hormone regulatory pills. sheez!
So with the up and down weather, we enjoy a nice bowl of soup. Soup is so extremely versatile. It allows you to use up leftovers, bits and pieces of veggies that don't make enough of any one but in a soup they are great. Fresh, canned, frozen it doesn't matter. Cook it on the stove or in a slow cooker. Soup freezes well and makes great leftover lunches.
This particular recipe is a tad different than my norm but we enjoyed it just the same.

8 chicken tenders, boneless skinless chicken breast
6 baby bells diced
1/2 large Vidala onion thinly sliced
1 can fire roasted diced tomatoes
2 cans chicken broth
2 cans water
3 cloves minced garlic
spices: chili powder, paprika, cumin, oregano, parsley
Everything goes into the slow cooker-high for 4 hours, shred chicken, low for 2
serve topped with diced avocado, sliced lime and shredded cheese

Bacon Cheeseburger Salad

This is about as simple as it gets folks. Low-carb and keto friendly. My go to. We love this and yes even my husband is happy to see a salad at the end of a hard day if it has bacon!
You can substitute any of the ingredients. Use as much or as little depending on how hungry you are. This is definitely a recipe that is quick, easy and adjustable. Make it your own. Have fun.

cover your plate with salad, your choice of lettuce mix
chop and fry up the bacon and 1/2 of a large onion
drain and set aside
cook 1/2 lbs of ground beef, season with salt pepper
drain and set aside
top the lettuce with the bacon, onions and ground beef
sprinkle finely grated colby jack cheese or your preference
top with diced tomatoes
hamburger dill chips
fresh cracked pepper
1000 island dressing
