Rainbow Muffins And Sprinkled Treats - BlogWithFriends

Over the years I have always baked goodies or made candy for my husband's co-workers and staff. I have missed doing this and I thought "well shoot, they're not keto, so I get to make goodies, pass them out, see them enjoy them, come home to a sugar free zone and still be happy." YES, it makes me very happy to feed others especially if they enjoy it.

For the muffins I used my basic sweet muffin recipe and added sugar free whole fruit spread to each one. Several different types and sprinkled gold eatable glitter on top. Because WHO doesn't love glitter? Well, moms who have to clean up after a kids craft but otherwise, glitter is the $h!t man.
The candy was super sweet and easy. A can of cream cheese frosting, a dab of coconut milk, blend until smooth, pour in a whole container of sprinkles, that's right. Mix it all up. Drop by the spoonful onto wax paper and pop in the freezer. Now this will not freeze but it will firm up. Drizzle with bittersweet chocolate to cut some of the sweet and sprinkle with glitter. Yep, that's it! And by the way, the staff ate it up. You would have thought they never had sweets before. I left the office feeling like a stuffed fat kid leaving the candy store but without all the calories and guilt. Win win

This is a Blog With Friends post and our theme this month was "rainbow". Check out the links below to see how each writer/blogger interpreted the theme.

  1. What great recipe ideas, love the simplicity of it.
I used to send food into work with my husband, although he'd come home and tell me everyone loved the treats, it would be so much more fun to actually get a chance to bring it in myself.

  2. Haha, you got that right, sprinkle and sparkle are all fancy and fun until it turns up EVERYWHERE in the house. Think socks, bed covers, school backpack,...
I do hope you make an exception from KETO for some St. Patrick's Day treats?

  3. This all looks super delicious and easy! YUM!

  4. Cute! I love the lots of glitter. Everyone loves glitter! :)
