Meatballs with Sun Dried Tomato Mozzarella Pearl Sauce served over Zucchini Noodles

Sometimes wonderful things happen, like inspiration. It can come out of nowhere or you can struggle for it. When I get bored with the same ol' same ol' supper. I start looking around. I will cruise the aisles at the grocery store, watch food network, scan through some of my older post and see if there is one I can revamp. 
Yes, sadly enough, I'll even scan through Pinterest.
Then there are days I walk into my kitchen. Stare blankly into the freezer, pantry and refrigerator bins and think...what the heck am I going to do for supper tonight. All of a sudden I see it. One item turns to two and then I smell smoke, the creative juices are flowing and the gears are a turning! BA BAM! I have it. I know exactly what I'm going to do. The birth of an idea, the creation of a recipe, the enjoyment of the finished product.
This is just an example of when thoughts turn into deliciousness.



can of spaghetti sauce
jar of sun dried tomatoes
onions diced
pearls of mozzarella cheese, cut in half
meatballs, one pound
Parmesan cheese
fresh garlic minced
dried oregano, basil, paprika
carrot sticks, shreds
diced zucchini
red wine, 1/4 cup
On medium heat, the cast iron warms up while I chop, dice and prepare the ingredients. In goes the tomatoes, onions, garlic, carrots and zucchini. Next is the meatballs, I used frozen because for some weird reason I had a bag. Pour the spaghetti sauce on top, stir in the wine, parmesan cheese and spices. Allow this to simmer for 20 minutes, then half the mozzarella pearls, simmer another 10 minutes. The last 10, take 2 medium zucchini and make your noodles. You can boil these, saute in a pan or use raw, your choice. I heated mine with garlic and olive oil in a pan.
