Sausage Stir Fry

This is my quick go to meal. Keto friendly and delicious. A quick stir fry. Sliced bell peppers, onions, sliced beef smoked sausage and tonight I added broccoli for a different change of pace.

I have a local grocery that sells smoked beef sausage in 12 oz packages for 88 cent. YES you read that right. I was so shocked. We love smoked sausage and the fact that it is all beef is even better. They have regular and a spicy one as well. So at that price, each week I grab a few packs. We eat it for breakfast, lunch or supper. It goes great with eggs, as a quick sausage,peppers and onion, in stir fry or just split and pan fried all by itself. If we are particularly hungry I'll slice up two packages, I mean it's only 88 cent why not.

I slice it, toss in the cast iron with a drizzle of olive oil, slice up sweet baby bells, thinly sliced onions and saute. This time I added the broccoli because I wanted something a little different, a few sprinkles of  soy sauce and fresh minced garlic. Gosh dawg it! This was so good. I could have eaten the entire pan.

OH and best part...everything is cooked in one pan so there is less mess. Now that makes this dish an even bigger win win.
