No Crust Layered Pizza Bake - KETO

Hey y'all!! So if you've been following long you know I love pizza, but changing my lifestyle to a low carb keto way of eating, well, it is not pizza friendly. Unless, you drop the crust!
Yes I know, the pizza bones are the best part. BUT you can still have all the great flavors of pizza without all the carbs so that's nice to know, right?
It's simple and delicious. Promise.

Cook your ground beef with salt, pepper and Italian seasoning. drain if need be. mix with sauce and Parmesan cheese, olives and diced peppers
The amounts are up to you, use as little or as much. Whatever your preference.
In a 13x9 pan layer pepperoni, top with sauce mix and mozzarella cheese 
repeat until all items are in the pan and finally layer is cheese
bake until cheese is melted and bubbly
Serve alone or with a salad

Keto Ground Beef n Broccoli Stirfry

It was near payday and I was running low on groceries and ideas. Yes, I could have gone to the store but I like to use what I have. So looking in the freezer I took out a package of ground beef. So many things can be done with this. I really was craving Chinese food but refused to order. I mean, it's not very Keto friendly and I didn't need to spend the money when I had food available. Yes I will talk myself out of most anything.
I looked around and saw I had some broccoli, hmm that needed to be cooked before it went bad. What if...did I dare? I mean, ground beef and broccoli stir fry? Nothing else? No carrots, no slices of tender steak or chicken? What they heck.
So I sauteed the beef in my trusty cast iron skillet that yes I use for most everything. Then I added some fresh garlic and fresh cracked pepper. Stirred it around a bit, the a few dashes of soy sauce, okay maybe more than a few, tossed in the chopped broccoli florets and let it all meld together.
That was it. Quick, simple and to my pleasure it was a delicious surprise. No fuss, no mess and no waste. Frugal and keto to boot.

Portabella Pizza - Feb FOTW 2018

February, how did that happen? I can hardly believe that the first month of 2018 is gone and most of the second month. Not sure how it happened. I guess I blinked.
So, welcome to the Feb. edition of Fly On The Wall where you get a peek into the lives of bloggers. Sit back, grab a cup o' joe, prop up your feet, relax and see what's been happening at my house.

Portabella Mushroom pizza
2 portabella caps
12 pepperoni slices, cut up
4 TBSP finely shredded mozzarella cheese
dried basil and oregano, a sprinkle of each
olive oil
In a cast iron skillet, drizzle the oil, about 1 TBSP, the place the mushrooms open side down. AFTER you pull out the stem. Chop the stem and place in the pan as well, allow this to cook for a few moments, the mushroom will become warm and soft, flip it over. Now place the cooked stem, sliced chopped pepperoni, spices and cheese. Cover with a lid, cook on low for 3-4 minutes. Serve!
See, super easy and filling. My hubby loved it!

OMGosh it has been a day I'm here to tell you. I hear this dog yapping. I mean high pitch, make your ear drums bleed squeal. I look out side and what do I see, nope, not Santa and his reindeer but two, yes two poodles. Yuck and one has purple ears and a tail and the other one has pink ears and a tail. Poor things. I do hope they were girlie girls. Oy
I was told by my trucker friends that this means "thirsty and hungry" like hangry means "angry and hungry". 

Then I go to the bookstore and I'm sitting in the parking lot between the bookstore and Starbucks. Across the parking lot comes a lady and her two daughters along with a gorgeous big black dog. I hop out of my car, they are headed straight for me. I stopped, aww the dog, so pretty and sweet. They get in their BIG expensive SUV right next to my 18 year old car. They daughter getting in the back seat with the dog says "have a nice day" I turn to say thank you and about trip and fall. She's a pretty young lady, probably 20ish, shorts, t-shirt, ponytail and legs hairier than the dog! WOW not sure if she was doing the whole No Shave Vember and decided to keep at it or what. But wow.
My hubby with his baby sister's puppy. This is Diesel and he is only 4 months old.
 My darling hubby fixed my lights. I know it's hard to tell but before they had a yellow tint and were very hazy to the point that I stopped driving at night. Now...nice and clear and bright. And for $15 and about an hour. YAY the guy at the inspection station told me about $100 each side for new light covers HA to him!
Yes, we had more snow and not only did we have snow, but the Outer Banks of NC did as well. This is VERY unusual. Below is the ferry ramp. Covered in ice. brrr
 I step out of the shower to this...two of my three waiting. Why? So they can rub all over my wet legs and make me look like them. All  black hairy legs not cool guys not cool.
While riding in the car with my husband and father in law, they were having a discussion. My husband said "No matter how good I am at what I do, I'm only as good as the next time I mess up."
I have no idea the rest of the conversation because I sat in the back thinking on this.

Looking at my FB memories, this was 5 years ago on the news last month:
2 guys stole 10 pallets of chicken wings. Facing felony charges...for a bunch of chicken. Really?
A funeral procession went through the drive thru at Burger King for one last burger for the deceased. They buried him with a whopper.
Okay we have nothing better to report?

We were watching TV one night and I was looking at my phone. I "heard" the guy say "I used to be a gangster" and I went what?! Then I see him dancing...OH it clicked then. He said "I used to be quite a dancer." LOL

stuffed chicken breast

I had taken chicken out to thaw and was contemplating stuffing it with spinach, oh crap that had gone bad. Okay second idea, stuff it with sun dried tomatoes, pesto...crap that was bad. Third idea...I had this type of bok choy, the sun dried tomatoes and lots of cheese. What the heck let's try that.
I'll admit I was nervous.
THEN...I take the chicken breast out of the packet and, well, it's not the breast, it's tenders. Dang gum! This was just not my day.
So...I changed it and put the oil from the sun dried tomatoes into the cast iron skillet, just a few tablespoons, placed the chicken in the pan. Topped it with salt, fresh cracked pepper, the sun dried tomatoes and then the bok choy. I slid it into the oven. 350 degrees for about 15 minutes. I started thinking, what if it was bitter??? I was nervous, it was starting to smell good so hopefully it would be okay. Out it came and I added the mozzarella cheese. Back in for another 5 minutes.
The oil really baked and made a sticky mess in the pan but OMGosh! Happy surprise, it was wonderful.
I served it with a salad and a sigh of relief.

chicken breast tenders 4 large
half a jar of sun-dried tomatoes
1 small bunch baby bok choy
mozzarella cheese, 
cooked in the oil from the tomatoes, baked until done. 20 minutes at 350 degrees

Not the prettiest picture but it was very good! AND totally Keto friendly

Sausage Stir Fry

This is my quick go to meal. Keto friendly and delicious. A quick stir fry. Sliced bell peppers, onions, sliced beef smoked sausage and tonight I added broccoli for a different change of pace.

I have a local grocery that sells smoked beef sausage in 12 oz packages for 88 cent. YES you read that right. I was so shocked. We love smoked sausage and the fact that it is all beef is even better. They have regular and a spicy one as well. So at that price, each week I grab a few packs. We eat it for breakfast, lunch or supper. It goes great with eggs, as a quick sausage,peppers and onion, in stir fry or just split and pan fried all by itself. If we are particularly hungry I'll slice up two packages, I mean it's only 88 cent why not.

I slice it, toss in the cast iron with a drizzle of olive oil, slice up sweet baby bells, thinly sliced onions and saute. This time I added the broccoli because I wanted something a little different, a few sprinkles of  soy sauce and fresh minced garlic. Gosh dawg it! This was so good. I could have eaten the entire pan.

OH and best part...everything is cooked in one pan so there is less mess. Now that makes this dish an even bigger win win.

Chocolate Walnut Gooey Snowflake Cake - Blog With Friends Feb2018

Welcome to the February edition of Blog With Friends, a group participation where several of us get together and create recipes, crafts, DIY projects and writing about the same subject. One subject/theme with several takes. This month we chose "Winter Activities" perfect considering most of us have been hit more than once with snow, ice and severe cold temperatures.
As you know, I've been doing keto since last July but my husband is not. He is a real dessert person, which I have been my entire adult life, so I decided to bake on a very cold wintery afternoon. That was my activity. Baking. It warms up the house without having to raise the thermostat which in turn raises the electric bill. AND it gives us a delicious smelling home and a treat after dinner.
However, on this particular afternoon, it did everything but give us a treat!
I had to laugh. Karen and I had just had a conversation about how she struggles to perfect her recipes and I never do. I come up with an idea, gather what I need, bake or cook and BAM we have it. Delicious and done. Well, the joke was on me this day. Because I did all those things, but BAM we had a dessert but honey let me tell you it was far from delicious. As a matter of fact it was so far that I'm not even giving you a recipe. That's right.
I will however, attempt it again. But baking keto is a tricky thing. It was so bad I even made a glaze to go over the top. I swear even using regular powdered sugar on top didn't help the taste. YUCK, the entire thing went straight into the trash.
I stood there, shook, shocked and saddened. Than I laughed and said, well this will be an interesting blog post. Humility. That's really what this post is about. Never think you "have it all together" because weather, kids, pets and baking will prove you wrong given the chance.
