Sausage Balls - revamped - KETO version

With the holiday season upon us, I normally do a lot of baking and goodie making. Yes those are words and terms. Party time, entertaining, holiday family meals and it is also football season, which means game day food. Ugh, alas, keto is not exactly friendly when it comes to these things.
One of my favorite things the last couple of years has become sausage balls. I know you are thinking this is not healthy. Well, cheese, meat and biscuits, what's not to love? Oh yes, the biscuit part, dough, flour, bread, carbs that evil 5 letter word. With that, I set about revamping my favorite little treat so that I may continue to enjoy them for snacks, breakfast, parties, football games, etc.
I did it, it worked and they were wonderful, even cold out of the fridge over the next several days. No I didn't heat them up. Do you heat up pizza the next day? NO!
Sausage Balls - revamped Keto version
1 lb bulk pork sausage
1 1/2 cups shredded cheese
1 egg
1/4 cup almond flour
Mix thoroughly and drop 1 heaping teaspoon size into a mini muffin pan and bake at 350 degrees for 16 minutes. The mix made 48, two batches.
Since there is no flour to soak up the fat from the sausage, it is a must to bake these in a mini muffin tin, if you use a cookie sheet the fat will run off into the bottom of your oven, NOT something you are going to want to deal with. Also, there is less breading so they will be smaller. You could make these without the almond flour all together but it gives it texture.
