Chicken No Noodle Soup #keto

Hey y'all, with the weather turning cooler it makes us all think about soup, stews, chowder and baked goods. Being that I am doing the keto way of eating, some of these things are not on my list of "okay" things.
I really was wanting some good ol' chicken soup and my (soon to be husband) had asked for chicken noodle. Hmmm now what?
Not wanting to disappoint him but stay on track with my eating. This is what I came up with.
It was a big hit, we both thoroughly enjoyed it and I will definitely be making it again.
The double winning whammy for this recipe was that I went to the store, and cheated, I purchased a rotisserie chicken and cut it in half. So I was able to use it for two different recipes AND it was only... are you ready?!
$1.98!! YES you read that right. I mean come on, when I saw that price, I HAD to buy it, I mean I can't buy raw chicken for that a pound much less a whole stinking chicken!
Another winning quality, it's done in the slow cooker so you can toss it all in and walk away, enjoy your day AND have a delicious nutritious dinner.

Ingredients and instructions
1/2 rotisserie chicken shredded
1 cup chopped carrots
Green onions, diagonal sliced
Celery, chopped
Cabbage, shredded
32 oz chicken broth
2-4 cups water
Parsley flakes, dried
Salt and pepper, fresh cracked
First thing I did was cut the whole chicken in half, then I placed the half into the slow cooker with the broth and turned it on high for 2 hours. I then, removed the chicken and shredded,removed bones and skin, then placed it along with all the other ingredients into the slow cooker on low for 4 hours.
The reason for placing the chicken half in was so it would shred easier since I purchased the chicken the day before, it was cold, hard and I was concerned it had dried out. This served as a re-hydration and allowed for easy shredding. If you are using a fresh cooked chicken or leftovers you do not need to do this unless you just want to.
Also I used the cabbage as a noodle replacement. I wanted chicken noodle soup but noodles are NOT keto friendly and my experience with the keto friendly prepackaged noodles has not been positive. So I thought why not shred cabbage instead. It added great flavor and tons of nutrition.


  1. I'm not a huge cabbage fan, but I actually love it in soup! I have a vegetable soup recipe that uses cabbage. It really is a great replacement for noodles! Using the rotisserie chickens adds so much flavor - yum:)
