Stuffed Mushrooms #keto

You guys know I'm always on the look out for something new. I know, stuffed mushrooms are not "new" but they are for me and these are keto friendly. I tell you these were so much better than anything I've eaten. The only thing that would have made them better was some fresh crab meat added in. Mhm mmm mmm yeah

I made these for lunch. D loves mushrooms and he didn't complain about them being keto at all. You could use these as a side dish, appetizer or like I did...lunch. So good!

You could use portabella's, mini's or button like I did. I found a  beautiful package with medium to large buttons. They were 1-2 1/2 inches in diameter, so good size.

Stuffed Mushrooms
12 medium/large mushrooms
1 clove garlic, minced
6 slices of bacon, cooked crispy and broken up
1 green onion, diced
4 oz cream cheese, room temp
salt , pepper, paprika
Pop the stems off and dice up, slice the onion and mince the garlic. Fry up the bacon, break up the pieces and set aside. Place the stems, garlic and onion in the bacon drippings (with spices)and cook until golden brown. Remove from the heat and cool off. Mix in with the cream cheese. I placed my mushrooms in the pan, drizzled with olive oil and stuffed, this allowed the tops to cook some and become tender but not mushy. Lastly I sprinkled with fresh cracked pepper and a little more green onion.
SOOOO good!
