keto style cheeseburger casserole

 Looking for a filling, quick and easy recipe? Give this a try, even if you are not into low carb/high protein/high fat or keto, this is a delicious dish. I enjoyed this with a small salad.

Cheeseburger Casserole - keto style
1 1/2 lbs of ground beef
1 tsp fresh ground pepper
1 tsp paprika
1 TBSP parsley flakes
1 tsp garlic
1 tsp onion powder (optional as I was out and didn't use any)
Cook the above list of ingredients in a skillet then set aside.

In a bowl, beat together:
4 eggs
2 oz cream cheese
1 can tomato paste
1 1/2 cups shredded cheddar cheese

In a 13x9 baking dish, spray with a nonstick spray, sprinkle the bottom with Parmesan cheese, place the meat in next. Pour the egg and cheese mixture over the meat. Lastly
1/2 cup shredded cheddar cheese
on top and
bake at 350 degrees for 35 minutes

Keto Bread (first attempt)

Well, I made my first loaf of keto bread today...8/12/17
It is short and dense, a little dry and gritty.
Other than that, it is delicious. The consistency is that of baked cornbread. Not light and fluffy but how can it be, it is almond and coconut flour. Still it is tasty enough for toasting, smearing with butter or cream cheese. Definitely not worthy of a sandwich but it is my first attempt. I might play around with the recipe or not. I really do not miss bread enough to go at this more than one or two tries to be honest.

1 stick of butter melted
3 TBSP of coconut oil, melted
1 tsp baking powder
1/2 tsp salt
1/3 coconut flour
2/3 almond flour
6 eggs
Mix all the ingredients together and spoon into a greased loaf pan. Bake at 350 degrees for 40 minutes. Slide it out of the pan, allow to cool, slice and enjoy. It is really good toasted with cream cheese!

Work stories...
In July I was driving a gentleman to another airport, this is common. It takes several hours but it allows me to bond with my passenger(s). It is almost always a blessing. This particular day I was telling him about some of my interesting passengers or experiences at the airport. 
He said "well let me tell you, my job isn't as exciting but I do get some great excuses for missing work from my salesmen". We both laughed, I used to work on a car lot years ago and salesmen are ALWAYS trying to con you about something. So he goes on..."This young kid was working for me and left for lunch one day with his girlfriend. All the salesmen loved when she came in, a real looker. So he leaves at noon, one o'clock rolls around he's not back, two still not back, three nothing, four and he strolls in. The manager calls him to his office. Okay son, what's up. You left here FOUR hours ago for lunch. The young man replies, yes sir, I was tied up. No son not for four hours tell me the truth. Yes sir I did, I was tied up with my girlfriend. Son I'll give you one more chance. No sir you don't understand, I was TIED UP BY my girlfriend.
The manager looks at the assistant manager and says "well I've seen his girlfriend so I'm gonna let it go". ROTL WOW really?!

Driving out of town to pick up a client and I pass a gas station. There is a man standing in the middle of the parking lot blowing his nose. Okay that would be okay except he has no tissue, he is going at it! Hand to the side of  his nose just blowing into the air, snot flowing. GROSS what is wrong with people?!

I picked up a lady and then drive her to pick up her preteen from camp. Several hours later we are on our way to our final destination and she is asking him all sorts of questions.
What did you eat from breakfast? Lunch? Dinner?
What did you learn to eat that you didn't like before? Green beans, to which she was thrilled.
What new foods did you try that you now like? "OOH these biscuits from BoJangles with blueberries in them!"
She said "WHAT? A biscuit with blueberries? Dawn do you know what he's talking about?"
"Yes ma'am I do. They are called BoBerry Biscuits and they are delicious!"
"oh, well is there anyway we could stop and get one?" Her son quickly says "THREE"
She laughs and says "you can't eat three" he says "oh yes I can"
I laugh and tell her yes, there is a BoJo right down the road.
On the way in, she stopped and said, "what should I expect?"
I laughed, " well, they are buttermilk biscuits with blueberries in them along with sugar, baked and drizzled with a delicious glaze. Be careful, they are addicting."
She goes in and makes her purchases. Her son is devouring these boberries and she said "okay let me try a bite" She takes one bite and says "OH MY GOSH DAWN these are FABulous! and in a few minutes she says "OH NO I just ate a whole one!!"
This cracks me up! We're talking a tall, tan, gorgeous blonde from NY who eats VERY healthy and she just devoured a boberry biscuit! (you can find my quick easy version here) I said now aren't you glad there's no BOJO in NY? She said YES I'd be fat!
Girl friend would have to eat a LOT of biscuits to be fat!!

I had a WONDERFUL weekend recently, I visited Minette and Mike. Minette is Southern Belle Charm! We had the best time. And that precious dumpling in the bottom corner is Duke, my new buddy. NO the LEFT bottom corner silly, the right corner is me!!
My DIL - Daughter-in-law (one of them) is a radio production manager and DJ. The perks, free concerts and other events. She had the joy of attending SuperCon a few hours from us recently and she took my granddaughter. LMSP...oh you can only imagine! Yep she was the hit, the bell of the ball, the queen of the day. The only kid there AND dressed up! Several characters wanted their picture taken with her, to include...TOMMY the original Green Ranger then turned White Ranger from the original series Power Rangers!!
Isn't that the coolest thing ever? If you think not, just nod and smile, it's okay.

Working so many hours, when I am home on weekends my poor kitty wants to do nothing but lay me. serious I kid you not.

So Jesse and I are having this discussion about life, relationships,and hard lessons we have both learned over the past few years. He says to me "well mom, I've learned a lot and back when I was in my 20's..."
I said "wait a minute, Jesse you ARE in your 20's!"
We both start laughing and he says "okay, back in my early 20's"
I said "Jesse, you're only 25!"
He says "MOM...okay fine, when I was 18-20 is that better?!"
ROTFL poor boy has been through so much he has an old soul now.

So much more has happened to include finding a condom in the back seat of one of our cars at work, being hit on by every man under 90 this past week, seeing a dog take a dump in the middle of the airport, watching a fight break out at the rental counter, and much more. My life is definitely not boring.

Cabbage Rolls In A Bowl #Keto Style

I have gone through some of my old recipes and am currently revamping some for my new WOE (way of eating) #keto. It is very simple and I'm surprised at how many of my recipes I can do this with, with great ease and pleased too I might add.
One recent one being cabbage rolls or "undone" or "unstuffed"  or cabbage rolls in a bowl. HA! A rhyme! 
Here are the original recipes if you are not into keto.

Super simple and so delicious.
Cabbage Rolls In A Bowl #Keto style
1 lb ground beef (I used 73/27)
1 lb ground pork (I used 80/20)
2 tsp each of garlic powder, onion powder, paprika, fresh cracked pepper, salt
1 TBSP parsley flakes
1 can original Rotel
2-3 cups chopped green cabbage
2 cups cauliflower florets, riced/chopped finely (I used frozen, see notes below)

In a large skillet brown your two meats with the veggies. I did not drain any fat but allowed it to soak into the cabbage and cook. While you are doing this, soak the frozen cauliflower in warm water and drain well. Then chop finely, you will see it in the collage photo.

Once the meat is done, add the cabbage and allow it to cook down ( about 10 minutes), next add the tomatoes and stir well. 
Lastly add the cauliflower rice and stir well.
Allow this to all marry in flavor and simmer about 10 minutes or so.
Serve in a bowl and enjoy! No side dish needed as you have cabbage, cauliflower and tomatoes all in the dish. It's a simple one pot meal, quick clean up and delicious to boot!

Breakfast Cloud Bread #keto

Since starting the Keto way of eating I really and truly have not missed bread, my son however has. I have offered to buy bread but he says no. So I thought I'd make some keto friendly bread. I have seen the cloud bread talked about for a long time now. Even waaay before I decided to go keto. After reading recipes, reviews and even watching a few videos I finally decided on a way to do this.
It was not perfect and definitely not bread, but tasty. A good treat, dessert or breakfast tag-a-long. I had read where some said it tasted eggy. I did not notice this, could be because I did mine a tad different. Honestly it was more like a sponge cake in the shape of a pancake. I plan on trying again to see what happens.

**Important note, if you do NOT put them in a zip top bag, they WILL be dry and crumbly the next day. They do not have to be in the fridge but will not last or be fresh for more than a few days. The recipe makes a small batch.

Breakfast Cloud Bread
3 eggs, separated
3 TBSP cream cheese, I used blueberry
1 tsp baking powder, I used aluminum free
Have 2 bowls out and ready, preheat your oven to 300 degrees and line a cookie sheet with either parchment paper or silpads. I LOVE mine! 
In a medium bowl drop your egg whites and place the yokes in a smaller bowl.
With the yokes you will add the cream cheese and beat until smooth. Be sure the cream cheese is room temperature otherwise it will be grainy or lumpy and not smooth.
In the medium bowl add the baking powder ONLY when you are ready to whip the egg whites. Do so with a hand mixer until peaks form. Like when you make meringue for a pie.
Then FOLD gently, the yoke mix into the whites. Be careful not to over mix or it will break the whites down and be runny.
Now by the TBSP drop and spread into a circle the mix. You can use two pans so they don't spread and stick together if you make them about 3-4 inches in size or make them small for little slider type bread disk. I make larger ones and put it all on one sheet. IF you use two sheets you need to be able to put them in the oven together, otherwise it will run and separate before baking.
Watch them closely. Some suggest allowing them to cook and just before they brown turning on the broiler but I was leary of doing so.
Bake for 25 minutes or until golden brown be careful not to burn them.

Since I used the blueberry cream cheese, with real berries, it made the bread a little sweet and I think made the batter more liquidy/runny. HOWEVER, they did turn out. As you can see they ran together in the baking process and I cut them apart, hence the straight sides. LOL

Once they were cooled, it is suggested to allow them to "sit in a bag" for a day or two. I had mine the following morning with cream cheese slathered on and rolled up, like a little swiss roll. Perfect dessert or breakfast sweet treat. I forgot to take a photo of it that way but it was very good, even my work hubby said so. hahaha Right Sasha?

The next ones I do the plan is to use the regular cream cheese and see how they taste. I think the blueberry prevented the eggy taste that some refer to. We shall see.

Parmesan Chips #ketosnack - Happiness Happens - #BlogWithFriends

Happy Day everyone...well, our #BlogWithFriends theme this month is... Happiness Happens. When I saw this at first, I thought, oh yeah, an easy one. Well, then life happened and it was not an easy theme. As a matter of fact I considered sitting this one out due to life being so extremely opposite of happy. But then I thought to myself, "self, happiness is an emotion, it is a choice, an action and YOU CAN be happy EVEN in these dire circumstances. Now what makes ya happy?"
I thought on that a bit. What makes me happy? My kids, my grand children, my kitty boo, my friends, cooking, reading, creating tasty healthy food and being on the water. So looking at that list, I decided something else. Snacking makes me happy! Especially after a stressful day. But snacking can ruin good intentions of weight loss.
On June 30th, one month ago, (I am writing this on 7/30). I started the #keto WOE, way of eating. Doing so I gave up carbs. Potatoes, bread, rice, pasta, starchy veggies and you know what I miss. Nothing. Honestly, nothing. BUT I was eating a bunless cheeseburger, loaded with all the goodies and I thought, man chips would be good right about now. So I started looking around at what I could do to fix this predicament.
Parmesan Chips! They sell them at WM and I thought, shoot, I can do that.
And so I did!!
Here ya go, chips. The salty crunchy craving keto friendly it's safe to eat them all chips!!
It really doesn't take much these days to make me happy.
Don't they look great? And oh so yummy!
 So good in fact, I decided to make a second batch with seasonings! Ooooh yeah, now we're talking.
 How about stacking the chips with some pepperoni? Oh yeah!

Creamy Bacon Chicken #keto

I was very hungry and looking for a new recipe. After seeing several delicious looking keto recipes I kind of combined two and made it my own. I love chicken and what goes better with chicken than bacon?! Well, cheese! Now throw all these together and you have yourself a wonderful meal.

This was really simple.

Here is what I did:
8 slices of Applewood smoked bacon, chopped into 1 inch pieces
8 boneless skinless chicken thighs
2 TBSP butter
1/4 cup half and half
1-2 cup(s) broccoli
1/4 cup Parmesan Reggiano grated cheese

First I chopped up the bacon and let it cook in a non stick skillet. When it was almost done I added the chicken thighs and butter. Browned on one side and flipped over. Once the chicken was done I removed it from the pan and added the Parm/Reg. cheese and half/half. Stirred it well and it will thicken up almost immediately. I added the broccoli and chicken. Allowed the flavors to marry and served it up!

Yes it was that simple and super delicious!

Breakfast Cups #keto

Hey howdy hey people! So...I'm going to jump right in here, with this new way of eating, #keto, I need a lot of protein. I also am finding that I MUST eat breakfast. Before I was only eating breakfast on weekends due to the fact that I get up at 0300 and head to work. Who wants to eat at that time? Not me. So I need something quick and easy that I can carry with me. I fell into a routine of taking boiled eggs, quick and easy, but after two weeks I was tired of them. I really wanted sausage and eggs, so I now have them. How you ask? In the form of a cup/muffin but without flour.

This is genius and so good.

Breakfast Cups
I used prepacked items, except eggs of course, one to show you how easy it is and two because it was on sale and actually cheaper this way.
I used 1/2 bag of mixed pepper/onion mix, chopped
1 package of Jimmy Dean sausage patties
8 eggs, beaten
a splash of cream
1 1/2 cups of double cheddar cheese, shredded
butter to cook the eggs in
salt, pepper, paprika, garlic powder, parsley flakes (1 tsp each)
Saute up the sausage, while there is still some pink, add the chopped peppers and onions along with the spices. Cook to the desired tenderness. Spray a muffin pan, put 2 TBSP of the meat/veggie mix in. Pour the beaten eggs over the meat. Sprinkle generously with cheese.
Bake at 350 degrees for 22 minutes or until the center is done. My oven was 22 minutes yours could be more or less.
Allow them to cool, but eat one while it's hot! Delicious, then place the cooled ones in air tight containers and place in the fridge. You now have breakfast for a week.
