FF Best Buds: Spicy Fried Pork Chop and Gravy

I was in the mood for a pork chop. I know, crazy but I was. So I stopped at the store and picked up a nice package of center cut boneless pork chops. When I got home I promptly placed the chops on a platter and slathered them up with Texas Pete hot sauce. I left them alone while I shucked the fresh corn and peeled potatoes. The corn, which was silver queen and white, turned yellow after blanching. THIS was exciting because I knew it would be super sweet and it did not disappoint in any way shape or form.
So, back to the chops. In a zip top bag I added 8 tablespoons of all purpose flour and 1 teaspoon of each of the following spices: paprika, garlic powder, onion powder, chili powder, white ground pepper and a few dashes of cayenne pepper. I shook the bag and then dropped the chops inside. Shook it again and placed the chops slowly into a hot skillet with hot oil, about 1/4 inch. I cooked them until they were done, not fried to death and dry. Topped with gravy and served with a salad, fresh corn and homemade mashed potatoes. YES! Delicious, crunchy, moist and just a tad spicy.

Chicken Cheesy Bacon Rice Dinner and FOTW November

Since I love chicken and who doesn't love bacon, here is a simple dish that combines all the yummy comfort ingredients I enjoy. I know, I know, the plate is basically one color BUT I did eat a salad first it just isn't included in the photo.
I sauteed the chicken, boneless skinless chicken breast in some butter. Then in the deep dish skillet I added a cup of rice, salt, pepper, and a tablespoon of parsley flakes. Stirred in 1/3 cup diced bacon, a cup of chicken gravy, placed the chicken on top and placed a lid. When the rice was done, about 20 minutes I sprinkled shredded cheddar cheese on top and allowed it to melt. Served with fresh pineapple, corn and sliced tomatoes. Simple and full of all the comfort ingredients.

I love this time of the month "Fly On The Wall" when you the readers get to have a peek into the day in and day out of the lives of bloggers, myself included of course.

I was dropping off a group of VIP's for a company when one of them, who was young and not bad on the eyes, asked me if I was married. I said no I'm not. He said "oooh good" I just laughed told them to enjoy their stay and went on my way.

Several things...Hurricane Matthew didn't do any damage. The flood after did. I was evacuated and lost my home. Moved to a bigger, newer, nicer place. My mom's oldest sister passed away. All within a 3 week period. Stress? Nah...eye roll.
I work for a transportation company, transporting VIP's , business men/women , young Marines and more. This enables me to travel each day and meet some very interesting people. I have some being little Brenden. I pick him and his mom up each morning, drop him at day care then take his mom to work. Little Brenden is 4. He is the sweetest little guy. Each morning he says "have a nice daaaay!" then "Mommy I love you".
LMSP has become quiet the artist as you can see above. That's my kitty, Beau.

LMSP started kindergarten which I mentioned before, well...she is so funny. Saturday she told me "I have SOOO many new friends!" It was really cute. Then I found out she was elected class president. I was like ??? class president in Kindergarten?? Really what do you do? She shrugged her shoulders and said "I don't know". LOL

Exciting news... I am flying to Texas to see my youngest son, his wife and my grandbaby! I have yet to meet her and she is now 9  months old. I'm sooo excited I can hardly stand it.

uyw - You're FIRED!

Shell waited on the last customer of the day. Slowly she walked to the front door, flipped over the sign to read closed and locked the door.
Breathing a sigh of relief she uttered thank you God, she had survived another grueling day. Here she was fast approaching thirty and still single, and as quickly as that thought hit her mind the song on the radio changed - she laughed out loud "Don't stop believing" was echoing through the now empty diner but it filled her heart.
No, she must not stop believing. There was light at the end of the tunnel. She had almost completed her courses and soon she would have a degree in hand. 
As she walked, no trudged toward the kitchen the owner came busting in through the door. He wore his normal greasy look of slum lord mixed with hood gangster wanna be.
He stopped, gave her an evil grin and yelled "you're FIRED!"
What? Why??
"I don't have to give a reason but if you insist. You're uncooperative and I found someone who is" She chose that moment to sashay through the doors.
Ah yes, of course Charlamain with her dress so tight it looked like a second skin, skirt so short you could almost see 'neverland" and of course boobs pushed high enough to create a shelf. Oh I'm sure she's VERY cooperative, Shell thought.
Slowly she removed her apron and name tag. Placed them on the counter and reached for her tip jar.
OH NOT SO FAST sweetheart! The slime-ball jerked the jar out of Shell's reach. Char gave a sickening giggle and rubbed his arm.
You're not getting any tips today accept this one sweetie: fix yourself up, show some cleavage, loosen up and maybe some poor sap will take ya.
Angry was NOT the word, violently sick, disgusted and so pissed Shell wanted to slap that smug look off his face. Oh she'd loosen up alright!! How about loosening his teeth??when she slapped him cross-eyed!
Instead she took her coat and walked toward the door. Shell stopped, turned around and said "thank you this is the push I needed. I will move forward and make my dreams come true"
Or do they? he sneered
Shell said "or do they what?"
Come true. He laughed.
Shell straightened to her full 5 ft 2 inches and said "YES! they do and will, one day I WILL show up and when you least expect it, I will rub your nose in my success. Success that YOU pushed me towards so for that, thank you" and out into the cold Chicago night she went.

Poem: Thanks

I said many years ago that Thanksgiving is a holiday we should practice all year long- not just one day. We all get so caught up in the rat race, working, packed schedules, kids activities and such, we run low on sleep, high on anxiety and low on patience.
This causes us to lose sight of the most important things. We complain, grumble, mumble and soon are discontent with life in general. If we help more, and see what we do have instead of what we want our attitude of gratitude fills us with joy. Our world would be a much better place. I TRY desperately hard to be thankful each and everyday because there is ALWAYS someone worse off. I don't have everything I want, but I have everything I need.
So with that... Here is my poem for Thanksgiving.

T - take nothing for granted
H - help those in need
A - always be kind
N - neglect no one
K - keep a grateful heart
S - spread joy as you go

Turkey, rice and stuffing

Tree of Thanks #BlogWithFriends

Our tree of thanks...
When struggling to come up with an idea for this month's #BlogWithFriends I decided to do something with LMSP. Little Miss Sassy Pants is my granddaughter that lives to closets to me. She just started kindergarten and turned 6 last month.
We talked about Thanksgiving, what it means and that gave me the idea for the Tree of Thanks or the Thankful Tree.
We discussed what being thankful meant, blessings and what she is thankful for. I cut out the pieces and she wrote what she is thankful for. Now that was a chore. She would say "how do you spell Hulk?" And I would spell while she wrote. Sometimes she would stop and say is that the letter with one stick and three little lines? Meaning an E. LOL it was lots of fun!

SSS-Volunteer Vacation

When I was given this subject, I thought, volunteer vacation? Who wouldn't volunteer to go on vacation?! Then I gave it another thought. What if the vacation was all about being a volunteer. I have friends who used to do this very thing. They would take vacation and go with our church to very out of the way places, ultra rural, back in the holler to build houses, schools, clean up after storms and other events. They would take time out of their lives to go help others. I always envied them in a way. Being so selfless and giving of their time, sacrificing vacation family time to go and do for others. How wonderful and admirable I thought it all was.
I always thought when my kids were grown that this is how I would spend my time. My empty nest would allow me time away from home, a vacation as sorts, and go help others. I had no idea that it would not happen and that I'd be knee deep in work and survival.
So spending my time off giving to others seems like a dream vacation to me and one of these days I will do that very thing. Or at least I hope so.
I would go to Papua New Guinea because a long time ago my (now ex) and I were supposed to go there as missionaries. As we were nearing the end of our application process I was diagnosed with cancer. That put a total stop to any talk of going to a foreign land in the 'bush' far from medical care. It was a blessing that they found it before I left the US because I most likely would not be here if we had of made it to PNG but I've always regretted not being able to go. Thankful, but regretful. So if I were able, I'd go to PNG and volunteer my teaching services or handyman skills to those who serve so selflessly there on a daily basis.
