Dark Chocolate Cranberry Bread:Oct SSS

Remember I told you I made 3 recipes in my slow cooker. If you missed the other two, check it out. Lots of helpful hints, tricks and tips if you are not experienced in baking with your slow cooker/crock pot. Recipe 1  Recipe 2

I used small loaf pans and placed them inside my slow cooker to create these delicious little loaves.
This is a delicious snack bread or breakfast bread. It is sweet but not over kill.
Dark Chocolate Cranberry Bread
2 eggs, beaten
1/4 cup margarine
1/4 cup coconut oil, you can use a different type if you have an allergy
1 cup sugar
2 cups flour
1/4 cup baking cocoa
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 cup dark chocolate covered cranberries
Beat your margarine, oil and eggs together. Now beat in the sugar. Stir in your other dry ingredients. I find it works best if I add my dry ingredients to a bowl and stir well to incorporate them well, so as not get bite into the bread and find a salty spot. Once everything is well combined, fold in the cranberries. Pour the batter into a well greased slow cooker/crock pot.(OR like I did this time use a large loaf pan or several small ones) Place your paper towels on top then the lid. THIS IS VERY IMPORTANT. Cook for 3 1/2 hours covered. Remove lid and bake another 30 minutes. Allow to cool slightly in the pot then invert onto a wire rack to cool completely. Store in an air tight container for 3-5 days.

When I received this prompt I thought "WHY" me, why did I get this one? I mean, come on, have I figured out who I am? Not really but I have discovered who I am not.
I am not a stay at home mom anymore.
I am no longer a married woman of over 25 years.
I am not a good student.
I am not a sales person.
I am not a door mat.
I am not a victim.
I am not a push over.
I am not what you call me no matter how many times you say it.
I am not a woman who shares her man.
I am not going to put myself on the back burner anymore.
I am not as trusting as I once was.
I am no longer afraid to be alone.

I may not know who I am, but I know who I am not. I know that I enjoy my job, am a dedicated friend and mom, I am a woman who will thrive and not just survive. This has been a growing process for 2 years so I guess I learned who I was at the age of 50.
