Creamy Cheesy Chicken Roll Ups

I know it's too hot to use the oven but I created this recipe back in the winter...made it, ate it and forgot to post it! LOL

I know, I know, I call myself a food blogger and I FORGOT to post a recipe! BUT I did post this photo on my FaceBook and a friend asked for the link/recipe and I discovered my "faux paus" imagine my embarrassment. So this is to rectify my goof. Thanks for asking me for the recipe Eva!

Potato May LOVED this recipe and so did I. The first time it was a little runny so I cut back on the liquid the second time.

I had seen lasagna rolls and thought, what if I use chicken instead. Then I thought why use red sauce, how about something creamy...oh and cheesy. YES, that was the ticket! Hope you enjoy this as much as we did. It will be a regular come cooler weather.

Creamy Cheesy Chicken Roll Ups
9 lasagna noodles
2-3 cups leftover rotisserie chicken, shredded
cream of chicken soup
1/2 cup Parmesan grated cheese
1 tsp fresh ground black pepper
1 TBSP parsley flakes
1 tsp garlic powder
provolone cheese, 9 slices
6 cups water and the rotisserie chicken bones

In a large pot pour the water and drop in the chicken bones. Bring to a boil and simmer for 30-45 minutes. Drain or spoon out the bones and skin. Use this broth in other dishes as well as this. You can freeze the leftovers or store in the fridge for approximately 7-10 days safely.
Shred the chicken, mix in the Parmesan cheese and set aside. In a large pot boil the lasagna noodles in the broth or in water. I use broth because it adds more flavor.
 Lay out your noodles and place 1/3 cup of chicken on one end, Then roll. Place in a 9 inch casserole dish, repeat until you have all 9 complete.
In a bowl, mix spices, 1/2 cup of broth and cream of chicken soup. Pour this over the rolls. Top with Provolone cheese. Pour the soup mix over the cheese and pop in the oven. 350 degrees until the cheese is melted and bubbly. Approximately 20 minutes.
Allow to cool slightly so the "sauce" thickens. I served mine with garlic bread and salad.
You could use a 13x9 pan and make more rolls. I didn't need a pan that large. Do what works for your family.

Blackened BBQ Chicken Medallions Ding Ding Ding August FF

After being on recovery from my surgery for Soooo long, when I could finally eat "real" food again, my creative juices were really flowing. I had so many ideas in my head and was so hungry for something to eat that I spent several days cooking at least twice sometimes three times a day trying to satisfy my hunger/cravings. I came up with what I think are some great recipes. One was "The Kitchen Sink" which I fix on a weekly basis and these blackened bbq chicken medallions is another.
You can judge for yourself, a quick, easy and satisfying meal.
3 boneless chicken breast sliced from end to end into medallions
BBQ sauce
coconut oil
1 tsp each: paprika, chili powder, cumin,pepper, salt, onion powder, garlic powder

Chicken Parm Patties: Fly On The Wall

Well with surgery done the road to recovery has been very difficult. The site got infected, for 10 days I had no food except liquid and I could not talk. No voice! Yeah W loved that but to be honest it was really beginning to worry me something fierce.
Update...the infection was NOT. It was actually an allergic reaction to the surgical glue and to the prep they did. Lovely. Still no voice, swollen and irritated but on the REAL road to recovery now. Finally

Prior to surgery I was cutting back on fat and calories, why, because I need to. So one night I made these delicious chicken parm patties! W says I can't call them burgers because that means "real" meat like beef. LOL but that's okay, Potato May enjoyed them with me. And I mean it, he wolfed down 3 before I finished one!
1 lb. ground chicken
1/2 cup parm cheese
1 beaten egg
2 TBSP melted coconut oil
salt, pepper, paprika, oregano, parsley, garlic and onion powder 1 tsp each
1 slice stale bread
1/3 cup chicken broth or water
Smush it all together and form patties. I placed mine in the freezer for about 10 minutes, then rubbed the outside with coconut oil and placed the patties on my indoor George Foreman grill. Chicken will cook quickly and dry out if you are not careful. So lightly brown the patties, shut off the grill and allow to sit. Maybe a total time of 8 minutes. 
Serve on a bun with lettuce, tomato, onion, marinara or whatever you choose.
Potato May topped his with ranch and crushed Dorito's. Don't ask. Jesse put mayo only on his. Both boys thought they were great and very moist. I loved them and will do this again. Of course W had a bacon cheese burger and wrinkled his nose at our "patties".

Five days after surgery I'm at my mom's. She is telling me about ants she found IN her microwave. "IN it. I had no idea they could get in it but I guess they could cause that's where I found them. Running all around. You know I cut that thing on HIGH and it didn't kill them?!" My mom can be so funny at times.

Next mom is telling me about the mice, well "Rats! Because I tried every mouse trap they sell and nothing worked. So I went on over to Tractor Supply and bought me one of those big rat traps. Those puny things I was getting at Wal-Mart were not working. I think they ate the bait and used the trap as a trampoline." Oh my gosh! Here I was in pain and trying not to laugh, but with her severe Southern Draw and this commentary it was hard not to bust a gut.

Listening to the radio at work and the dj ask people to call in with something funny from the week.

First caller, a lady says her two year old used a tube the of icy hot instead of chap stick all over her lips and inside her mouth. They are cracking up and I'm thinking aw that poor baby.

RN administering my meds before surgery explains that this med will soften up the small tissue which will help with the type of surgery you're having. She explains that she's diluting it with the iv fluid because it causes a warm tingly effect in the lower crotch region and will make you hyper if not diluted. Not a way that go into surgery. She said little old men love this stuff. I cracked up.

After surgery I could not talk. Wade smiles and said so how long will this last doc ? I kicked him. Doc laughed and said not long enough. You'll pay later.

That's okay. After me texting my him everything I needed to say in a few hours he was wishing I could talk. Heehee

After leaving the surgery center we stopped at WM for my prescription. At the drive through the pharmacist tells Wade the total. He said "WHOA that's highway robbery" and laughs. The lady gets all in a tizzy and is "well sir this is very reasonable " blah blah blah
He says, "ma'am I was joking just trying to lighten your mood. Smile have a nice day. Thank you" and we left.
She was not amused. I swear I heard her say ass as we drove off.
At my mom's LMSP looks at the Beta fish and said "WHOA GRAMMA he's grown!" Yes he has and he's pretty too. "NO Gramma, boys are NOT pretty, he's sexy" Oh Mylanta! And she's only going into Kindergarten!
Here is LMSP above, "reading" a Harley Quinn comic on a road trip. She is very intent as you can tell.

Me: oh you poor deceived thing, you think you're going to play. LOL

Reading Karen's post on Monday and her sharing the boys special cooking skills. I remembered I had forgotten to tell you all that ALL the recipes I make, Potato May dumps crushed spicy Doritos on top of or in. On all his sandwiches, his burgers, in rice, on top of spaghetti, it doesn't matter. The kid is obsessed with Doritos.

The Kitchen Sink

I'm still recovering and getting super bored, which means the healing is finally in process. I want to get out of the house but the heat is unbearable. My a/c in the car is out and my top will not go down. Ugh! So not happy about all this. oh well, so I'm staying in. Why you ask? Because the incision seeps and swells more when I get too hot. With a heat index of 108+ the last few days, inside is where I'm staying. 
I am feeling well enough that I FINALLY had REAL food! Yes I had been on a liquid diet but am finally able to swallow so this means real food. I was so excited. On Friday I ate some fried potatoes and grits. Saturday I ate scrambled eggs, potatoes and had some summer squash sauteed. Not all at the same time just in case you were wondering. I was on a roll!
Sunday I made a wonderful little dish I'm calling "the kitchen sink". It is so simple but I know will be a repeat. You can vary what's in it but here is what I did...

The Kitchen Sink
2 small red potatoes, sliced thin
1/2 small red baby bell pepper
1/2 small onion
minced glove garlic
1/2 tsp each: onion, paprika, cumin, pepper, salt, chili powder
Saute all of the above in a couple tablespoons of coconut oil 
When the veggies are tender:
2 whipped eggs, pour over the veggies
When the egg is set top with:
cheddar cheese
1-2 slices crispy crumbled bacon
Oh yeah babe! ENJOY

I loved it and will make it again and again but with whatever veggies I have in the fridge, maybe some leftover ground beef crumbed in or sausage. I might go onions, peppers, potatoes, mozzarella, Italian sausage and throw in some oregano or fresh basil!! Oh and tomatoes! Like I said, you can change it up to suit your needs.

You will see several new recipes coming soon due to my being bedridden. My mind goes crazy and I have all sorts of recipes written down that I plan on creating. My creative juices have been on overdrive. Maybe just the boost I needed. Stay tuned....

Taco Pasta: Life is but a vapor: UYW

A quick simple meal for those who love meat, pasta and cheese but don't tell, there's tomatoes hidden inside! Yep, I said tomatoes, but shhh don't tell and no one will even notice. Win

One box elbows, cooked and drained
One pound ground beef cooked with the following spices
1 tsp Paprika
1 tsp Onion powder
1/2 tsp Cayenne pepper
1 tsp Cumin
1 tsp Pepper
1 tsp Parsley
Six tablespoons salsa (put in AFTER the meat and noodles are done, then combine)
Two cups shredded cheese (stir in lastly)

We never know in advance what words we will receive but this month's were timely and right where I am.

Having had thyroid surgery one week ago, August 4th, and it being very invasive. I was nervous
The analysis from my biopsy were questionably confusing, inconclusive. That's what it said. That was NOT what I wanted to hear.
The lump now being called a tumor had really grown and was causing me some serious issues.
The surgery went very smoothly and the surgeon said he saved my thyroid, only a small section was removed. The vocal cords and nerves, which the tumor had also attached to, were unharmed during surgery.
But as I found myself four days after surgery still unable to talk and now with a raging infection on the site, my surgeon said "huh, surgery went so well." REALLY that's your response?? If I could, I would have screamed.
He went to work, scrubbing, debriding the area and took a culture to see what type of infection had invaded my body so viciously. The pain was...well I have a HIGH tolerance and almost passed out, so you can imagine. My poor mom, she faints at a paper cut but she sat there with me like a trooper.She didn't look but she stayed in the room.
Now four days since that, I still have no voice. Still can't eat and the infection rages on.
It is slowly improving and I am increasingly concerned about my voice not returning. I could not work at my job if I could not talk to the customers. What will I do? So as not to panic, I am assuring myself all will be fine it just takes time.
Why did I say, Life is but a vapor? It is. It is here and gone. My pathology report came back and it is NOT cancer! But there was a precious 11 year old boy in surgery the same morning as me and his prognosis was not good, he did not have good news. We blink and we're gone. Enjoy life, tell the ones you love how you feel, laugh, enjoy what you enjoy. Eat dessert first, have cake for breakfast, stop and smell the roses, feel the breeze, hug a baby, pet a kitty, ride with the windows down radio turned up and singing at the top of your lungs because we never know and there is no reboot button on life.

Wonderful Wacky Weird Days - Poetry Challenge

Before I run you off with my attempt at poetry, I will keep you here with this amazingly wonderful moist cake!

Fresh Blueberry Tangy Lemon Bundt and yes I'm obsessed with my bundt pan. I really do love using my Pampered Chef bundt pan, and no I'm not being paid to say so. I truly love the thing. It bakes perfectly even every single time and I like how the cake looks, plus you don't use as much frosting or glaze when it's not a layer cake. Okay, I know you're laughing because you've seen some of my cakes and I PILE on the frosting, but this one needed just a tad because I didn't want to over power the delicious fresh blueberries and the tang of lemon. It cleans up in a snap and speaking of snap...it's a springform pan. 
I had to slice it up and place it in a air tight container because a hoard of ants moved into my kitchen and they were NOT getting my cake!
 This cake is as simple as it is delicious. I used local fresh blueberries and some store bought stuff to create a delicate deliciously moist cake that was gone in less than 2 days. Yep, you could say they enjoyed it. One of my favorites so far this year but of course it has two of my favorite things, blueberries and lemons!

1 box Lemon Supreme Cake Mix (I used Duncan Hines)
1 small box lemon instant pudding
1 lemon, juiced and zested (use for glaze)
1 stick butter, unsalted, melted
1/2 cup water
1/2 cup milk (I use unsweetened original Almond Milk)
5 eggs
1 1/2 cups fresh blueberries

In a large bowl mix your cake mix and pudding mix, combine well. Next add your wet ingredients, stir well but don't over mix. Lastly add the blueberries. Pour into a greased bundt pan and bake at 350 degrees for about 50 minutes or until a toothpick comes out clean. Allow to cool and drizzle with glaze.
1 cup powdered sugar
1 TBSP lemon juice and zest
Stir well and drizzle on top!

School Spirit - Crazy Hat Day and More #BlogWithFriends

Can you believe it's August already? This year has flown by and summer is quickly passing. However,  here in Eastern North Carolina, summer will be around for several more months. During this time of year, so many are getting their kids ready to return to school. Oh how well I remember those days. The supply list, new school clothes, shoes, back packs, lunch boxes and open house. As a former home-school mom I did not have to comply with a list forced on me by the school system or buy tissues for the entire classroom. I did buy supplies but they were few. My expense came in the form of curriculum, books, sports fees, music lessons and science equipment.
During the year a lot of school have what's referred to as "Spirit Week", this normally happens about half way through the year. I think they do it to keep moral up, encourage the students and allow them to let off steam at school in a productive manner.
As a home-school, we did the same, but in a different manner. On cloudy days, we would grab a book, blankets and hit the couch or watch documentaries on a subject that interested them. We would do "Spirit" days. No a week but random days. When I was feeling burnt out I would declare a day of silliness. This helped all of us.
Crazy Hat Day, Crazy Hair Day, PJ Day, and on and on. AND yes, we would leave the house this way. I know we had some strange looks when out but who cares, I can guarantee you that my boys remember those days of mom being silly more than they do the Battle of 1812.
This is my son Jesse and his creative crazy hat day. He loved to dress up as a little kid and at almost 25 still does. I joked about this photo and his inner Elton John coming out. Not something his Dad appreciated.He is creative, artistic, loving and funny! Love you Jesse!

What do you do with your kids to keep them motivated during the school year? Leave notes in their lunch box, take them out for ice cream when they've had a hard day at school or a disappointment like not making the team?

A note in the lunch box, maybe pick them up early from school and hit the local ice cream parlor? A favorite dinner? I feel it's important to keep them motivated, encouraged and focused.

My grand daughter LMSP starts school in a few weeks, Kindergarten. Hard to believe it but it's true! I was going to do a post with her, but she's been on vacation and then at her mom's house. So I didn't have opportunity to do anything and haven't seen her. Oh well, maybe next time. I do hope I'll at least get a photo of her first day.

It seems like just yesterday her dad was starting school and now she is. Kindergarten is such a magical time. New friends, school, learning new things every day, growing, changing, babies no longer, finding who they are as people and dreaming of what to be when they grow up. What an exciting time!

I'm excited to see her "school spirit" come through as I watch her grow this first year of school.

Pepper Jack Stuffed Arancini - August SSS

As I sat looking over old photos from when I lived in Europe, I was thinking about Potato May and his upcoming trip. Which is now over, but at the time it was upcoming. For graduation he went on a 10 day tour to Europe. London, Paris and Barcelona to be exact. MAN I would have loved to have gone.
So anyway, thinking about the trip and discussing areas of interest, he talked about food. It was funny, the girls were talking shopping, sight seeing, photography and Potato May was thinking FOOD. Just like a man!

When I was in Italy, one of the street foods was arancini, or fried rice balls. I thought about those for about a week. I would have made them earlier but these guys LOVE rice and so there is never any leftover. I even considered making rice for the purpose of making arancini but figured that was frivolous.

Having fixed cube steak, rice and gravy one night, there was actually leftover rice! YAY and I was off work the next morning. Now was my chance. Crazy thing, at 8 o'clock in the morning, I was making fried rice balls stuffed with pepper jack cheese! and man were they ever good!
In Italy they stuff them with meat, peas and tomatoes but I thought cheese would be great and it did not disappoint.
This recipe goes perfect with this month's SSS, Tamara gave me a British term and well, Potato May went to London, Paris and Barcelona. So yeah, you see the fit right? haha
To make this recipe I used what I had, leftovers. Cold sticky rice and a few slices of pepper jack cheese.

beaten eggs
seasoned bread crumbs
1-2 cups leftover cold rice
4 slices of pepper jack cheese

Three small bowls, one for the egg, flour and bread crumbs. I took the cold rice and wet my hands, formed a half circle in my hand, placed the cheese and then added rice on top, squeezed to form a ball. Then pressed it together tightly. Rolled it in flour, egg and then bread crumbs. Dropped the ball ever so slightly into a small sauce pan with hot oil. Cooked until golden brown, which takes only a few seconds really, turned it over and drained on a paper towel. You could dip these in a marinara or a cheese sauce. I ate them just like they were. Delicious!

Here is what it said: 
"If you're going to take a risk at all, you might as well make it a big risk." 

From an old British expression (thus "pound" instead of "dollar"); the original reference was probably to theft (though this is not certain), saying that being arrested ("taken in") for stealing a small amount is just as bad as for a large amount, so you may as well steal a lot and hope to get away with it. 

An equivalent expression is, "As well hanged for a sheep as a lamb", where it's implied that you are stealing the animal. If the punishment for failure is the same, you may as well try for the largest possible reward. 

The phrase is often misused with reference to a punishment that is out of proportion to a crime, but this is not the actual meaning.
"I could get fired just for talking to you. Well... in for a penny, in for a pound! Come on in."
This is what you call an idiom definition: a group of words established by usage as having a meaning not deducible from those of the individual words (e.g., rain cats and dogssee the light )

See, you're never too old to learn something new. I had no idea what this meant but now I'm enlightened. I'm guessing I've been "in for a penny in for a pound" in relationships where I should have been debt free.
