Stuffed Cheeseburgers and November Funny Friday

Hope you all had a fabulous Thanksgiving and I'm sure you're ready for something besides turkey or you will be. SO...How about some good old man food? Or a fabulous burger? Or both?
I made stuffed cheeseburgers one night and they were a big hit. Simple to make and less messy than a burger with cheese dripping off of it. YES we use that much cheese!

1 lb lean ground beef
3/4 cup shredded sharp cheddar cheese
1/2 tsp each: onion powder, garlic, paprika, parsley flakes, white ground pepper
Mix the meat and seasonings well. Make your patties, press the center to make a well and place about 1 TBSP of cheese in the middle, fold the burger over and flatten to a patty again. Grill! Done!
Now of course, we topped them with more cheese, mustard and bbq sauce, oh and pickle relish. Side of salad and seasoned fries.

1. Look mom, I put the sgetti in a pot. Aren't you happy? Said 10 year old Billy.

2. Tom...the stoned high school student put the spaghetti in a pot and ran from the room screaming "IT'S alive!!"

3. Paul looked at his wife and said "what do you mean it doesn't work? When the noodles melt or cook they'll fit in" Rolling her eyes she replied "YEAH If they don't catch on fire smartie we use a gas stove!"

4. Half blitzed and cooking dinner for his wife as a surprise, Mike stood and looked at the noodles thinking how they reminded him of fireworks in the sky, or the tentacles on a jellyfish...whoa

5. Looking at the pot of noodles, Tam thought, well dang it did say EXTRA long noodles but this was crazy!

November FOTW - Buffalo Chicken Egg Roll

Hi and welcome to another edition of #FlyOnTheWall, a post where you get to "buzz" around and see/hear what's been going on. At the end of the post you'll find links to 11 other great bloggers that are participating this month. It's always a lot of fun, tons of laughs and even a few recipes thrown in here and there.
Buffalo Chicken Egg Roll
rotisserie chicken, shredded
8 oz #ChobaniGreekyogurt plain
hot wing sauce
mozzarella cheese sticks sliced in half length wise
egg roll wrappers
#madewithchobani (find more recipes made with Chobani HERE)

Dice or shred the chicken and mix well with the sauce and yogurt. Place 1-2 TBSP of the mix on top of the cheese stick on the egg roll wrapper. Wrap and cook in a hot skillet with melted butter. You could fry these or even bake if you choose to. Fix a whole batch and freeze them for an after school snack. Fry them up, cut in half and use as a party appetizer! 

We are sitting at the house and W is answering FB quizzes. He does one about "what one word describes you" so I take it. His says "charming" which I totally agree with. Mine says "successful" which I totally do not agree with. 
He says why? 
I said because I'm not. 
He replies, "no when I ask a question I need an answer not a "because". 
I said, well I have no college degree, I work a dead end job that will never lead to a promotion or more money, I can not provide for myself, I have one son going through a ton of crap right now and the list goes on. 
He said, "wrong, we have different definitions to success. I would not have chosen that word to describe you but I do agree. Look at what you've been through the last year. You've survived, you have a job, are a full time student and you have 3 sons that are well adjusted intelligent adults. I've met them all and they were homeschooled by you. You need to stop looking at what you are not and what you have accomplished. You ARE successful. Now the word I would have chosen for you is adorable."
NOW this is just one of MANY reasons I appreciate this man!

I'm on my way home from work and get a text... "Can I use this pan?"
I said sure for what? W replies to bake the burgers. I said "why not use my George Foreman grill?" He says "because that seems like a lot of work, Can I use this pan?" I'm like, I"ll be there in 15 minutes. He is serious, HE wants to cook AND use my pan. Okay fine, use the pan, but I'm talk texting because I'm driving. My phone did not understand "pan" obviously! See below!!

I'm parking my van and one of my co-workers walks up, I put down the window and said "hi dee ho neighbor" .
She looks at me and says "I AM NOT" 
LOL so glad to work with quick witted folks!

Good gracious I love auto-correct! As you see, when you speak to your phone so you can text while driving. It does not always come out like it should.
I'm not the only one who 'talk text' with their phone AND the phone just doesn't get it! LOL
It should read "good timing" 
"If you could leave it in the oven a minute longer so that the crust gets crispy I like crispy crust"
HOW did the phone come up with "swagger crispy crossed"??

Loaded Baked Sweet Potato #CIC

Crazy Ingredient Challenge...have you been here before? Okay good then you know what this is. Oh wait, what? You HAVEN'T heard of this?? Well, here it is. We, a group of bloggers, vote each month on 2 ingredients. The winning two are what we HAVE to create a new dish with. You can use anything else you choose but the two voted on are a must. It can be sweet, savory or anything in between. We all prepare our creations and post on the same day at the same time linking to one another for more exposure. Pure genius!
This month our ingredients are sweet potatoes and jalapenos. At first I thought, "how in the heck am I going to do that?" but then I was hit with a bolt of genius!

I decided on a loaded baked sweet potato. I love sweet potatoes and well who doesn't love loaded baked potatoes? So I thought, why not combine the two. But with what? Here is what I decided on.

No one in my house likes sweet potatoes so this was an easy fix. I prepared just 1 baked sweet potato for myself.
In a skillet I sauteed about 1/2 cup of pork bulk sausage, 1/2 of a small jalapeno, 2 sweet salad peppers, 1/4 tsp garlic and 1/4 tsp white pepper. Once this was done I split my hot baked sweet potato and smothered it with the mixture. THEN I added melted gooey yummy blanco con queo on top! OH MY WORD talk about good! The sweet mixed with the savory and cheesy goodness...on man. My gang just doesn't understand good!

This was so delicious I will definetely be making this again. You can have this with or without the cheese or change the type of cheese if you'd rather. Either way, it was DEElicious!

Thanksgiving Haiku AND a holiday dessert

If you missed it, don't be sad, I participated in a Halloween poem (link here) group post. LOL it's wasn't fabulous and I am obviously a glutton for punishing myself...masochist? Lord I hope not. But here I am...participating in another "poem" of sorts. A Thanksgiving Haiku. Indulge me and check out the dessert.

Thanksgiving Day
family and tons of food
cooking and baking

Driving to and from
traveling near and far away
family, friends

holiday visits
gluttony, pounds gained
Black Friday race

shopping list in hand
perfect gift hunt in demand
mall crowd traffic

come end of the day
exhausted, broke, hungry
Christmas smiles

now credit card debt
making payments all year long
so we can repeat

it all over in
November the next year
it's a tradition

Happy Thanksgiving!!
Glitter Brownies
  • 1 cup plus 2 Tbs flour
  • 1/3 cup plus 2 Tbs cocoa powder
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup oil
  • 1 3/4 cups sugar
  • 2 tsp vanilla
  • 4 eggs
Mix your wet ingredients first, then add in the sugar. In a bowl add dry ingredients and mix well, stir in gently to the wet mix. Now pour into a greased 13 x 9 pan and bake at 350 degrees for 30-45 minutes depending on your oven and altitude. I used a Pyrex pan and it took -- minutes.
After the brownie has baked I frosted them with milk chocolate frosting and I sprinkled eatable glitter on top. Just for fun!

The 17 yo boy in the house said "Dawn these brownies are #dank " which by the way is a compliment. LOL

UYW-November 2015 and CRISPY HOT WINGS

My honey is a HOT WING fanatic. I mean seriously, he could eat wings EVERY day of the week and not complain. His favorite are Hooters wings, he says they are the best because of the breading. We do not have one near us, but we do have a BWW. Which we frequent often.
I have cooked wings before and it is no big deal but REALLY wanted to cook wings for him and see if he liked them as much as his famed H wings...
The results? T his son gave the wings a "finger licking seal of approval" and together they ate 5 lbs of wings. YES I said 5 lbs. These fellas can eat!
The recipe is simple.
5 lbs wings, drums and winglets
1 1/3 cup flour
1/2 tsp of: salt, white pepper, cayene pepper, garlic powder, onion powder, paprika, parsley flakes, and 1/4 tsp cumin
All the dry ingredients were placed into a gallon size zip top bag. I placed 10 pieces of chicken in at a time. Shook it very well and then shook each piece to remove the excess. Dropped into a skillet with hot oil. After they were cooked and crispy I drained them and tossed them in a hot wing sauce that I purchased at a local store.

Cindy had just pulled the roast duck from the oven. Man what a feast they were going to have this Thanksgiving. She was so excited. All the kids would be home this year. It had been a long time. It felt strange somehow thinking over the years past and the many celebrations they had had in this house. Their children both biological and adopted.
Around 2 p.m. Cindy stood with a puzzling look on her face. The traffic must be terrible coming from D.C because her daughter Ashley had not arrived yet.
Finally, all present and accounted for. All 5 of Cindy's children, well adults, sat around the table. Several were looking at her with great curiosity. They knew their mother and something was up, what they were just not sure of.
Well into the meal Ashley spoke up. "Mom, just what is going on?" The others nodded or murmured their agreements.
Cindy sat, not sure where to begin, so she started from her most fond memory.
It was summer and we were visiting my aunt. She gave us a box of old books, papers and a diary that had belonged to Pearl. Did you know our family was Amish? (yes they knew but really had no interest in the past) She continued. I started reading that diary and funny thing is, I met this boy. Well, he was quiet a big older than me but I was in love. His name was Dillion.
Ashley interrupted her. "Mom PLEASE what does all this have to do with anything?"
Jim looked at Ashley harshly and said "You know how mom is, she has to tell a story, she can't just get to the point"
Cindy signed... "well the point is this Ashley. His name was Dillion and I was in love. He was much older and never paid me the attention I wanted. Last week I received a phone call. It was Dillion, we lost contact many years ago when he went into the Army. I met your dad, we married and the rest you know. What you do not know is that I never forgot Dillion and apparently he never forgot me. We have been talking and well....
The kids all exchanged looks. What was mom saying? Talking to a man? Okay, yes they all knew their parents were divorced and that it had not been a happy marriage. One that was riddled with infidelity and financial ruin due to their father.
Cindy paused, I know it may be difficult but I don't want to do anything that will upset any of you. You kids are my world. Dillion has asked to see me, in a "more than friend" capacity. She paused and cleared her throat. She was so nervous.
Jill said "MOM that is FANtastic"
Jim said "Mom if this is what you want go for it"
Ashley said "Mom...I want you to be happy but I will admit it will be hard to see you with anyone that is not my Dad."
Dillion sat quiet, then said "Mom, is Dad "my dad"?
Cindy, "OMG YES Dillion. Jimmy is your dad but I will admit I named you for my first love and no your father never knew."
Cindy looked over at Jess, the only one who had no said anything. Jess said "mom I want you to be happy, I am not sure I have ever seen you happy. So please, if Dillion is what you want, that is what I want for you."
Cindy smiled. "I do want to see where this will go. I'll be honest, I'm nervous but excited as well. We haven't seen each other in 35 years. I feel like a school girl." and she was blushing.
Several days later Cindy stood at the front window looking out. Her daughter Ashley by her side. "Mom relax."
Cindy laughed, relax. How could she relax? Dillion would be there any minute. Would he look the same? Would he make her heart skip a beat? Would she make his? Where would this go? So many years had passed, she had wrinkles, grey hair, and way too many pounds since he last saw her.
The silver convertible pulled into the drive and she thought she would pass out. She took a deep breath and watched as the door opened. He stepped out of the car and it was like time went in reverse. She was a teen sitting on the porch railing and he was pulling up in his hot rod. Oh man, her heart was pounding. Dear God did he have to look so good?
