Okay this recipe will not go along with my "healthy" eating but man...you've got to admit they are yummy to the tummy!
I originally found this recipe on BHG but changed it a bit. These are great tasting, super easy and NO BAKE which is perfect right now because our weather has REALLY heated up!
My mom won't touch them because they have coffee in them and she is VERY anit-coffee, I know, I know it's unAmerican but that's her.
You could omit the coffee if you want, but why? LOL
Mocha Nut Chewy Bars
1/2 cup Almond Milk
1 TBSP coffee granules
1 cup dark chocolate pieces
1 7 oz container of marshmallow cream
1 15oz package of chocolate Oreo's CRUSHED(or any other sandwich cookie you'd like to use)
1 cup powdered sugar
1 cup chopped walnuts
1 cup semi sweet chocolate
1/3 cup whipping cream
Grease a 9x9x2 pan and set aside. (this was the size the original recipe called for however I did not have one so to kill two birds with one stone I used a shoe box size plastic storage container with lid, so I could prepare and store in the same one) In a sauce pan melt the dark chocolate pieces, almond milk and coffee until it is smooth, do not boil, then add the marshmallow cream, remove from the heat and stir until smooth. Next add the crushed cookies and powdered sugar. Still well and add the nuts. Pour into the prepared pan, smooth and set aside. In a microwave safe bowl or stove top pan, melt the semi sweet chocolate and stir in the cream. Blend well and smooth. Now pour over the mixture in the pan. Set in the fridge for at least an hour, cut into 32 bars and store in an air tight container for up to a week.
Believe it or not these have less than 175 calories per bar, but you can make them bigger but of course the calorie count goes up as well as the size.
