Funny Friday - March 2015

I love Fridays. A different post/challenge each week and you never know what's going to happen. Funny photos, tid bits from life, random words and secret subjects. Be sure to stop by every Friday.

Easter is almost upon us and with that comes the rush of recipes...I've been entirely too busy to come up with anything new, so I'm sharing a recipe from a few years ago. DELICIOUS candy, not a pretty picture but that's okay.
Holidays have always been a big deal for me, tons of cooking and feeding my friends and family. Now with my kids grown, gone and living with my mom I'm not sure what will happen this year. I miss cooking and having everyone over but I know that in time I will be able to do this again. And I also know that it will be even better than ever. 2015 has been the best year I've had in a really long long time and I am anticipating each year getting better!

What did you do for St. Patrick's Day? I worked in the yard with my mom and then we went out to dinner as a treat for ourselves. I also found out that I have NOTHING green in my closet! So... I painted my nails green :)

Life is very busy, school, work, taking my son back and forth to work, homework, social life, house work, kitties, sleep...oh wait, what's that last one?

Here is LMSP and her... interesting outfit. She cracks me up!
Phone calls:
A: Hey I was calling to see if you're home
Me: Well, you called the house and I answered so I guess I am.
A: Oh yeah I did, LOL.
Me: so are you coming over?
A: No I was just wondering if you were home
Me: smh...

B: Good morning, are you asleep?
Me: Not anymore
B: Did I wake you?
Me: Nope I was just laying here with my eyes closed waiting for the phone to ring
I'm a little sarcastic early in the morning...depending on who it is.

Here's your sign...
I'm washing dishes and my mom walks up to me:
Mom: what are you doing?
Me: building a rocket ship
Mom: smartie
Me: well, I'm washing dishes, it's kind of obvious isn't it
Mom: well I meant what are you doing?
Me: HELLO washing dishes, that's the same question.
oh lawd help me

I'm making a salad and my mom walks in:
Mom: hmmm whatca doing?
Me: Working on a microwave what does it look like?
Mom: ugh, well it looks like you're making a salad
Me: well then why did you ask what I was doing?
Mom: I don't know and walks out 

My oldest son and his wife bought a new puppy, LMSP tells me: when Daddy and A are at work the puppy goes to the other house. What house I asked. I don't know, the other house. I asked my son about it, he said WHAT? the puppy stays home. We're all confused.

My new grand pup is HULK an adorable black and white pit. OMGosh he is Adorable! Only 5 weeks old and he has stolen all our hearts! Except for Story, my DIL's cat, HE does NOT like the puppy.

Sitting in the doctors office with my son and he says "let me tell you about this dream, if it was, I'm not sure."
I said okay tell me.
He says "I'm laying on the couch and the kitchen light flips on, grandmama walks through and looks out the front door, she turns around and I'm sitting up on the couch wide eyed looking at her, she falls to the floor and crab walks out through the kitchen tries to reach up to the light switch without standing and goes down the hall."
I'm cracking up! J**** that DID NOT happen, you know my mother did not crab walk down the hall!" LOL
He shrugs, well it seemed real and I was sitting up awake.
OMG He keeps me in stitches!

Cauliflower and Cheese Fritters - CIC March 2015

Welcome to the March version of the CIC - Crazy Ingredient Challenge. Each month I assign two ingredients to our group of bloggers and then we each set about creating a new never before posted recipe to share on the 20th of the month. Recently we've been voting on the ingredients and this month it is really a simple/common pairing. So I wanted to see if I could come up with something different. I decided to make a fritter. They were yummy and I really enjoyed them.

2 cups raw cauliflower florets
1/2 tsp chili powder
1/2 tsp onion powder
1/2 tsp parsley flakes
1/4 tsp black pepper
salt to taste (1/4-1/2 tsp)
1 egg
1/4 cup sharp shredded cheddar cheese
3 TBSP flour
Blanco Queso cheese sauce
dab olive oil
Mix all of the ingredients with the mashed cauliflower EXCEPT for the last 2 ingredients.
Form patties and drop into a hot skillet with a dab of extra virgin olive oil
Flip when brown, this only takes a couple of minutes, turn and brown the other side.
Serve plain or top with more cheese, a cheese sauce or whatever else you can think of.

Ham and 3 Cheese Tortellini Primavera - Use Your Words-March

March is here and half over can you believe it? How many times have you written or typed 2014 instead of 15 and three months are almost over with?! Wow
Now here's the exciting part, SPRING is almost here! WOO HOO I have been loving the weather the past few days unlike last week or the week before when we were having sleet, snow, rain and just pure yucky weather.
Wednesday here it was 86, YES, 86 degrees so it was a perfect day.
As you can see my mom's flowers know Spring is around the corner, they are starting to bloom and I love it. However, the part I don't love is that soon everything will be a yucky greenish yellow color due to the pollen, fun fun but that's okay.
Today I'm sharing with you the flowers above, 9sorry for those of you still buried in snow but maybe this will give you hope),and my UYW post along with a recipe.

Several months have passed and Pearl is growing and glowing....

Pearl walked out to the barn and passed a large pile of wood and on top she stopped to see a paper with a sketch of a dragon? What in all that is good is this she thought. She continued into the barn to find William at his carving table hunched over what appeared to be a piece of oak that he was diligently carving, alongside on the table she saw paint, more paper, wood, another dragon drawing and her silk handkerchief given to her by his grandmother on their wedding day. Now why was that out here in the barn she wondered.
She walked up behind him and cleared her throat, not wanting to startle him for he could make a deep gash in the wood or his hand.
Hearing Pearl close by, William tossed the silk handkerchief over the wood. He turned and smiled at her. Oh...her heart did a flip flop and melted like it always did when he looked at her.
He stood and met her at the middle of barn, looked about and kissed her square on the mouth. She took a sharp intake of breath and smiled. Oh this man, thank you Lord for him she thought. She reached up and touched his face. He reached out and placed his hand on her ever growing belly. They both smiled. It was moments like these that she cherished and held dear to her heart.
They stood for only a moment but it was an eternity in their hearts.
They moment was broken when they heard the children running and calling "tag you're it, am not, are too" and they both laughed. They did love Sarah and Abe's children as their own, but this wee baby growing in Pearl was their's, not one to be shared, but loved by all and they could hardly contain their happiness.
Pearl paused for a moment, then dared to ask. "William my love, what are you working on?" Oh she had become so bold in her speech, I'm sure Pa would not approve she thought to herself.
William smiled and said "this will be a surprise for you and our babe". "Now go on with yourself so I can return to my work" and he turned her around and led her out of the barn.
She giggled, just couldn't help herself but marched on over to Sarah's to see what she was up to this fine afternoon.
Abe walked into the barn and said "well old man, she almost saw didn't she. She is quite the wild one she is. Not conventional at all in her ways or speech." this sat none to well in William's spirit for he felt that the ribbing that Abe was giving was speaking none too highly of his Pearl. She was an intelligent woman and yes given to speaking her mind but he loved that about her. She wasn't a dowdy woman, she didn't just cook, sew and mind her manners, she had a brain and wasn't afraid to speak it. He smiled and turned to return to his carving, rude as it was, he ignored Abe and his comments.
As William ran his hand over the wood, he admired the dragon and thought Lord I do hope this is pleasing in your sight and does not bring more ridicule on my house but I believe you put this vision in my head and so I am following through. This cradle will hold our wee one and I'm praying that you bless this child to be your warrior like the one on this wood slaying the dragon. A warrior for you Lord. A strong child of God and a protector of your people.
He lifted his head, wiped the mist from his eyes and set to work again.

Ham and 3 Cheese Tortellini Primavera
Saute veggies
Add the ham
add the broth, butter, cream and pasta

Ham and 3 Cheese Tortellini Primavera
4 TBSP butter ( cut into 2 TBSP each)
1/2 lg yellow onion, diced
1/2 tsp granulated garlic
1 tsp dried parsley
1/2 cup diced carrots
1 cup chopped cauliflower florets
1/3 cup white wine
1 cup chicken broth
4 oz heavy cream
1/2 cup Parmesan cheese
ground pepper to taste
1 cup finely diced ham
1/2-3/4 cup frozen peas
1 lb package fresh 3 cheese tortellini
extra parm to serve on top

Dice the onion, carrots and cauliflower. In a large skillet add 2 TBSP of butter and the evoo (extra virgin olive oil)sprinkle with the garlic, saute the veggies. Once they are softened to your desired tenderness add the ham and frozen peas. Stir well. Add the broth, wine, butter and cream. Stir well and allow to simmer for 5-10 minutes. Stir in the parmesan cheese and ground pepper to taste. Add extra broth if needed and simmer until the pasta is done.
