ABC - who me?

As many of you know, I started my journey to weight loss and fitness last year around this time. I had just moved to GA and was trying to come to gripes with so many changes. Then I returned to NC for the holidays and so it began.

In January I went at it full force, I joined an online support group and met a great group of ladies. This was all spear headed by Kimberly Job over at Sublime Reflection. If you aren't familiar with her, you should stop by and check her out. She has a lot of great information and is very encouraging AND she is the mother of 10, yes TEN, kids.

So I was over visiting her blog and read "The ABC's of Me!!! and she said "if you're a blogger consider yourself tagged" so, here is my post. Hope you enjoy it as much as I enjoyed hers. 

A - Attached or single
I guess that depends on how you look at it. I am married and have been for over half of my life but recently that changed. He wanted out, so I guess I'm sort of single. I'm still wrapping my head around it.

B - Best Friend
Oh gosh, I don't want to hurt any ones feelings. I have several VERY close friends, each are different and our relationships are different. I have one friend I've known my entire life and we can go years without seeing each other, but then pick up where we left off. I love her like family.

C - Cake or Pie
Cake. I'm a cake person but at times I love a good pie. My favorite cake? oh gosh, cake! And any cake that is chocolate. Like this one, it is super easy, moist and always a winner!

Sunday maybe because I get to attend church. Friday because it starts the weekend and Monday because the week begins and it is full of possibilities.

Now that's easy PURPLE  and it has been for as long as I can remember. I really love all colors but do not wear yellow, grass green or pink.

G- Gummy Bears or Worms
Gummy bears and only the kind that come from Europe. I'm a gummy snob. These are the only ones I'll eat and I LOVE them. When I first returned from Germany you could not find these except in specialty stores, now Thank God you can find them most anywhere.

H - Hometown
New Bern, NC and it is gorgeous!

I - Indulgences?
Lindt Lindor Dark Chocolate Truffles, oh gosh how I LOVE these and when I get a bag I savor them.

J - January or July
I don't like the cold but I like the new year when we have the opportunity to start fresh. July is hot but I love going out on the water.

K - Kids
I have 3 biological sons and a ton of adopted kids. Working with the youth in church and then running a home school support group for years, I gained a lot of "kids" and they are now adults, which makes me feel old. There are several whom I consider "mine". My boys are all J's and go from 21 - 27. My adopted kids are Jim, Stephanie and Heather, along with a host of others. I am blessed.

L - Life isn't complete without?
God. Plain and simple. Without God my life is nothing, after that is my kids, my fur-babies and family.

M - Marriage Date?
Kinda doesn't matter now does it... but it was May 2

N - Number of Siblings?
None. I am an only child by birth right but found my heart sister about ten years ago. My Sissy Sheryl.

O - Oranges or Apples
Apples. I love apples. Crunchy, sweet, tart, crisp, baked, raw... I love apples.

P - Phobias?
By definition, I don't think I have any. Except maybe the fear of growing old and alone.

Q - Quotes
Oh gosh, there are so many wonderful ones that I love but here are two favorites:

R - Reasons to Smile
I woke up on the top side of the dirt this morning.

S - Season of Choice
Fall, I love the cooler temps when I can put on a sweater or long sleeves, curl up on the couch with a blanket, good book, my kids and kitties and enjoy a lazy day. Hot chocolate, baking goodies for the holidays, bon-fires, s'mores, a roaring fire in the fire place, these are the comforts of Fall I enjoy.

T - Tag 5 People

U - Unknown facts about me
When I was growing up I wanted to change my name to Starr and be a designer. I also dreamed of being a singer one day.

V - Vegetables
I love my veggies. Almost all veggies as a matter of fact. I am allergic to mushrooms, I don't like endive or rhubarb. I adore collards, squash, snow peas, and carrots.

W - Worst habit
Talking bad about myself, being negative and seeing the worst scenario instead of the best.

X - X-ray or sonogram
I've had quiet a few of both. I guess I'd say sonogram because those are mostly done during pregnancy and it is always breath taking to see that little bundle living and growing inside.

Y - Your favorite food?
I'm torn, really I am. There are 4 things you will probably never ever see me turn down, Mexican food, Chinese food, chicken and chocolate. Seriously, I could eat these 4 items every single day.

Z - Zodiac

I'm not much into the "signs" but know that I am a Gemini and from what I do know. I AM a Gemini. This is what I found online:

The constellation of Gemini depicts a set of twins, Castor and Polydeuces. It is from this picture that the zodiac draws the archetypal Gemini sign. Gemini is the legendary dualistic sign of the zodiac and is rumored to have almost a split persona, thus channeling the twin depiction. However, this dualism isn't as simple as a personality split. Oftentimes, what is believed by others to be a dual personality is really a discrepancy between how the Gemini would like to be seen, and how he really is. (for me I have to say this is true. I do not have 2 personalities but struggle with being a people pleaser)

The Southern Special week 34

Welcome to week 34 and HAPPY THANKSGIVING! I know if you're like me, your kitchen counters are crowded with ingredients for tons of recipes especially for Thanksgiving/Thursday's meal and what a meal it will be.

Turkey, stuffing, rice, rolls, collards, green beans, sweet potato casserole, cranberry sauce, deviled eggs, mawmaw pie, cheese cake and cup cakes. Most of the family will "gobble 'til ya wobble" but I will eat in moderation. Honey Nut Snack Bites

 With the holidays fast approaching and lots of time on my hands, I needed a snack that was satisfying and somewhat healthy. I'll admit, the cereal may not be the best choice, but you could use an organic brand that is better.

I have been enjoying these and my son, who is a sugar-aholic like his mom, has been eating the heck out of these things.

Quick to make, no baking required, chances are you have the ingredients and nut free.

A few years ago I developed an allergy to peanuts. Being someone who literally ate peanut butter everyday of their life, this was a big deal. Other nuts do not bother me but the price of other nut butters did. It is outrageous what they charge.

I tried the sunbutter and even made my own but it just was missing something. Then one day at the store I saw this... WOWbutter, it said it was nut free. I thought why not, it won't be the first $3 I ever wasted and come on, it was $3. So I bought it, took it home, opened it up and read the label again. Yep, nut free. MAN it smelled JUST like peanut butter. I took a taste, whaaat?? I read the label again, yep nut free. I was thrilled! I could again enjoy "peanut butter" but without getting sick! I have used it in cookies, brownies, pies, fruit dip, etc... and no one knows it is not real peanut butter. So if you miss out eating peanut butter due to someone in your family having an allergy, give the WOWbutter a try and no I'm not paid for this endorsement. I'm just sharing what I like and why.

Honey Nut Snack Bites
2 TBSP Greek Yogurt, I used salted caramel
1/4 cup honey
1 cup coconut
1 cup mini chocolate chips or cocoa nibs
2/3 cup WOWbutter (this is a plant based butter that taste and smells like peanut butter)
3 cups crushed Honey Nut cheerios (or whatever cereal you like)

Crush the cereal in a large bag or your food processor. I did not crush mine as much the first time as I will the second time. The smaller the pieces, the easier it bonds together.
Stir together your honey, nut/soy butter and yogurt. In a bowl combine all the dry ingredients and mix well with the wet.
Form ball or bite size pieces (however small you prefer - mine were golf ball size) and place them on a cookie sheet, then place in the fridge until they are firm. Store in an air tight container for a week if they last that long.
Because of the size, I was able to get 24 bites. This may vary depending on your cereal and bite size.

Fly On The Wall - November 2014

First I have to say this:

HAPPY BIRTHDAY JOEY!!! My youngest son is 21 today.
 21 on the 21st
Oh how I love and miss this kid. sigh... He is proudly serving in the USAF and far from home but I'm super proud.
Last year I shared some of his favorite recipes, you can see that HERE

Today is the monthly "Fly On The Wall" post and I know y'all look forward to reading about Little Miss Sassy Pants, Little Man and other crazy stuff in my life.
Well, this month it's just not happening.
My life has been turned upside down. My son, J2 and I are living with friends. All our stuff is in storage, I have enrolled in school (starts in January) and the holidays are looming. BUT God is faithful to provide and I refuse to be depressed. However, not a lot going on that I can "Share" on this post as my friend (where I'm staying) is SUPER private.
So I'm just going to share random stuff with you. Hope that's okay.

However, don't feel too bad, I get to look at this view everyday. It's a 3.4 mile walk from where I live. So round trip is almost 7 miles. YES I have done it, NO I won't be doing the whole trip again this week. WHEW
While typing a text to someone I tried, okay I was tired, to text the word "anything" and auto correct changed it to: antler huna ? WTH

I said this one night when we were having a discussion about crazy family members and how years ago everyone went to a facility. I said not us, we put our crazy on the front porch and let them wave at the traffic.

My cousin says " aww wee" instead of awe when something is cute. She said "well that's how it's spelled. aww we. SMH lord help us
My  reply, when you are in "awe" of someone or something, it is great, awesome, wonderful. WHY would you say aww we?

I want to paint my chest of drawers and I'm thinking a nice dark steel grey. Similar to this.

I say 'boot' for the trunk of the car, grew up with it and no I'm not English. (found the photo online and someone has a soda addiction)

I miss my little man, he just turned 2 and I wasn't there for his party, broke my heart. Some of the cute things he says:

Citrus Chicken Patties - CIC November

Another month has flown by and it's time for the...
For the month of November our ingredients are:
For the last several months the ingredients are chosen by vote. I give the group two list and they pick one of each list. The two items with the most votes and wins and those are what we have to work with.

When these two won, citrus and bread crumbs, I had several ideas in my head but what I decided to go with was a winner. I hope you will agree.

Citrus Chicken Patties
14 oz chicken, leftover about 1 1/2 cups
juice and zest of 1 large Meyer lemon
1/4 cup bread crumbs
1 TBSP parsley flakes
1 egg, beaten
1 tsp garlic powder
1 green onion
2 TBSP butter

Mix all the ingredients (except the butter)in a food processor, until it is all crumbly and comes together. Heat a skillet and melt the butter, take your mixture and form patties, then saute your patties in the butter. Serve on a bun with lettuce, tomato, and a dab of mayo or with a nice salad.

Parmesan Garlic Shrimp Pasta

Happy Monday folks, yes I said Happy Monday. I mean, you might as well be, it's here and if we are positive in our attitude it reflects in our lives. At least that's what I'm telling myself these days.

Being a dislocated housewife sucks, no home, no car, no job, no money and no kitchen of my own BUT I will survive and be better for it. I have enrolled in school and Lord willing the financial aid comes through I'll start in January. In the meantime I'm beating the proverbially pavement looking for employment.

My recipes will be few and far between instead of a new one every day, as I don't get to cook often anymore. This is the sad part.

I did get to cook on Saturday night, and as I would have added a ton of veggies to this dish (they don't do veggies here) it was still delicious. Simple and quick.

I did make a lemon meringue pie last week, as a thank you to my friends for letting myself, my son and our 3 kitties live with them. I used a deep dish pie crust, Meyer lemons and no peeps this time. If you missed that reference, see the CIC from April for the pie.

Parmesan Garlic Shrimp Pasta
1 lb cleaned fresh shrimp
3 TBSP butter, no salt
1 TBSP parsley flakes
2 tsp garlic powder
1 lb angel hair pasta (I used Barilla Plus, it is made from whole grains and legumes)

Put a pot of water on to boil and toss in your pasta, this takes only about 6 minutes to cook. I cleaned my shrimp earlier in the day and had them covered in the fridge. Next take the shrimp, sprinkle the parsley and garlic and mix well. Toss into a wok or deep skillet with the butter, cook on med/high until the shrimp become pink and curl. Add the pasta to the shrimp along with the Parmesan cheese, about 1/2 cup, and 1/4 cup of the water from the pasta. This helps create a creamy texture. Sprinkle with fresh black pepper and serve.
I would have added in some snow peas, sweet peppers diced, maybe even some chopped broccoli.

Italian Fried Rice - Use Your Words - Pearl and William part 10

Good gracious, half of November has already passed us. This year has really flown by and so many changes have taken place in my life but that's a post for another time.

Today's post is a writing challenge, you know the one, Use Your Words, this is where a blogger gives me a random 4-6 words or short phrases for me to create a post with. Well, as you know if you've been by before, since February of this year I've been taking those words and continuing along with a story "Pearl and William - a love story" and you my loyal readers keep asking for more. So today that's exactly what you'll get. More of the story.

Along with a recipe of course. This recipe was created using leftovers, however, you could easily create it from scratch. It's quick, simple, filling and a crowd pleaser to those guys in your family, especially if they are under 21.

Italian Fried Rice
2 cups cooked rice, cooled
olive oil
Italian seasoning (basil, oregano, garlic,parsley, fresh  cracked black pepper)
diced onion
diced sweet peppers, red, orange, yellow (whatever you have on hand)
chopped pepperoni
1/2 lb lean ground beef, cooked
3-4 TBSP tomato sauce

In a large skillet heat your oil, just enough to "fry" the rice, 2 TBSP max, toss in the veggies and cook until they become tender, add the meat, rice and seasonings. Stir quickly and cook until everything is heated through, lastly add in the tomato sauce. 
Serve with a salad or something fresh like my apple basil slaw for something fresh and different.

Installment 1 :a love story

Pearl stood looking out the window frame which had been cleaned and polished until they shown like new. Oh, Thank You Lord for this day, this miracle and the man I'm about to marry.
Tears slid down her cheeks as she thought back over the last year, oh the events that had taken place.
She wiped away the tears and shook head, no today was not the time for tears, except happy ones.
She was finally going to marry her man William. Her man. Oh how giddy it made her feel. Pearl's family had surprised her the day before, all of them traveling to Ohio to join her for this joyous occasion. she was overwhelmed. Again she thought, thank you.
Looking out one last time before she set about redding the room and dressing, she looked out the window frame at the art work of the sunrise. She smiled and started about her day.
Over in the Dawdi house, William was also looking out the window and saying his own thanks. November had arrived, the wedding month, Thanksgiving and his wedding day. Yes, his, one he two years ago never thought would happen. He was marrying Pearl today. A day that would forever be etched in his mind and on his heart.
Abe walked over to William and placed his hand on his shoulder, William he said, we have much to do, corn to haul in and animals to feed so get yer head out of the clouds and let's move on. William laughed, head in the clouds. Yes he guessed it was.
The children were all a twitter, Sarah was smiling, Pearl's Ma was smiling and humming. Oh the joyous sounds that filled the room.
The day progressed and Ma took a moment to steal Pearl away, give her the "talk" and prepare her for what lie ahead that night. Pearl blushed and did not speak but Sarah had already talked with her. During that same moment, the men were getting ready in the Dawdi house, putting on suits, who would ever have thought, an Amish couple devoted to their faith and life style adding in Englischer ways.
After much debate and counsel with the bishop, it was agreed upon that suits were in order.
The tables were set, there was enough food for a small army or at least a village. Corn, the wedding salad, carrots, cakes by the mile, pies, roast, turkeys, bread...oh so much food prepared by family with loving hands. Tears again formed as Pearl passed the tables on her way to her groom who stood waiting under the big oak tree in his suit.

The bishop started the service with a small sermon, saying thank you to all who traveled and shared this day with the couple. Admonishing them to hold the couple in prayer, to keep them on the narrow way and to train them in the ways of the Lord as their families had done with them.
Bishop motioned for Pearl and she along with her Pa made their way to William who stood waiting for her. By his side was Abe and her brothers. On the other side stood Sarah, the children and all her sisters. Tears of joy ran down her face and she tried to compose herself in a respectful way but it was awful hard.
They stood, Pearl and William in the sight of man and God and pledged their love to one another, made their vows and then...shared their first kiss.
Oh and what a sweet knee weakening kiss it was.

The rest of the day was full of toast, cheers, hugs, well wishes, words of wisdom given my friends and family and of course lots and lots of food.
But to take a peek and see Sarah and Abe sitting side by side, holding hands was more of a miracle than any other. Pearl smiled, gave Sarah a knowing nod and held on to William's hand a little tighter.
