salmon burger with sriracha mayo

I love salmon patties and shared my recipe ... way back when, but this time I did it a little different.

The biggest difference was making the salmon patties and placing them on a bun with sriracha mayo and a drop of pickle relish.

Great lunch, quick and easy. I enjoyed one, with the bun, then just a pattie by itself. That way I could enjoy the "burger" and have protein.

Serve this with some sunchips, baked chips or by themselves. I sauteed a sweet potato sliced really thin in a dab of olive oil and sprinkled it with sea salt.

I created this infographic last week and shared on my Facebook fan page, did you see it? I'm amazed at the response and the number of shares! Thrilled really.

No dairy chocolate ice cream

My husband is a huge ice cream lover. However, I try not to eat it. One reason, calories and another is the dairy. I do not do milk for several reasons.

I have seen recipes for making ice cream with coconut milk, so I decided to come up with my own.

A healthy version, that was delicious. Even my husband said it was good.

1 can coconut milk **
**to make this work the coconut milk needs to be placed in the fridge for at least 24 hours and up to 48 hours, in the can**
3 frozen bananas
3 tsp unsweetened chocolate
1 TBSP honey powder

I used 1/2 the can along with the other ingredients. All items were placed in the food processor and blended until smooth. I ate a serving of this as soft serve and froze the remaining mix. When it was frozen I was able to scoop it out.

California Layered Salad

I really love salads but try to make them different and exciting so my husband will continue to eat them. That can be challenging sometimes. This recipe however he really enjoyed. It is loaded with flavor and different ingredients. Noting boring here!

Chopping and shredded your vegetables make them easier to eat and you can layer them to create an eye pleasing presentation. Trust me, the presentation or beauty of a plate has a lot to do with how your spouse or guest will perceive and enjoy the dish.

Healthy and very filling.

California Layered Salad
chicken (2 boneless skinless breast tenders)
30 small shrimp sauteed with my "spicy seasoning" mix
romaine lettuce 1 head
sweet salad peppers, orange and red 4
green onions 3
grape tomatoes, halved 10
avocado, 1 diced

Top with your choice of dressing, we used 1 TBSP of ranch dressing for a large salad.

The Southern Special week 12

Last week was long for me, I was out at my SIL's farm helping with her FIL. I'm there again this week. It is a sad situation. Her FIL is dying. There is no delicate way to say it. By the time this post goes live he may be gone. I'm exhausted, they're emotional and life is but a vapor.
So do the things you enjoy! Tell those around you that you love them, make time for phone calls, visits and fun. For NONE of us are promised tomorrow.

Sorry to be such a Debbie-Downer but death puts you in a thoughtful mindset.

Enough of that.

Italian Sausage Peppers and Onions (on a bun)

We enjoy our food and I love the healthy, lean, fit recipes. My husband enjoys the meat, potatoes, bread, deep fried foods. So every now and then, well about once a week, I have to fix something that appeals to him, as I've said before, this keeps him happy and allows me to fix the 'healthy" stuff without complaints. A girls gotta do what a girls gotta do!

Sausage Peppers Onions on a bun
Smoked beef sausage 10 oz, sliced diagonally
4 sweet salad peppers, red,orange and yellow
1 small vidalia onion sliced
1 tsp Italian seasoning

saute in a dab of olive oil and serve on a roll. Super easy meal and delicious.

My new running/exercise shoes (LOVING THEM) my fresh fruit and veggie load from my shopping trip, my granola and a smoothie. This is what my normal day includes.

Slow Cooker Chunky Vegetable Pasta Sauce and Fly On The Wall

June 20th, is that for real? Good gracious, I don't know about you but I swear it was just Easter.
They say time flies when you're having fun, I don't know about fun, but it sure flies the older I get. When I was a kid it took forever for the summer to get here.
Speaking of's time for Fly On The Wall !!!

What, you don't know what I'm talking about? Well, sit back, grab a cup of coffee, tea or whatever, and be sure to go potty first! Because these post are sure to make you wet your pants with laughter!

You will get a behind the scenes look at what goes on in the lives of 15 bloggers today. We share stories, photos, recipes, crafts, and crazy things our kids say. Or better yet, crazy things that have happen to us since last month, or things we've remember from the past.

Slow Cooker Chunky Vegetable Pasta Sauce
3/4 cup water
1 can diced tomatoes
4 med/large tomatoes diced
2 carrots shredded and chopped
1 med zucchini shredded
1 small onion diced
6 small sweet salad peppers diced
1 tsp garlic powder
1 TBSP olive oil
2 small bay leaves
1 tsp basil
1 TBSP tomato paste
1 tsp oregano
1 tsp paprika
1 TBSP parsley
Saute carrots, zucchini, onion and peppers in the oil until they begin to soften. Combine all ingredients and mix well, place in the slow cooker on high for 4-6 hours.

My little buddy "Little Man" was playing around Thursday night. His Daddy told him to do something and he turned, looked at him and said "OLD MAN" everyone was stunned. Asked what and he said it again. I think he meant "aww man" like shucks, but he kept saying OLD MAN. It was really funny.

I was texting my Sissy in AZ and kept trying to type psychiatrist, it was late and I was tired. My iPhone auto-correct changed it to "puss tattling" WHAT??? I'm afraid to even look that up!

My SIL's husband has a tattoo on his arm, it is a circle with Tinkerbell in the center...we keep telling her it was a prison tattoo and he is the wife of some serial killer. WHY else would a 47 year old man have a tattoo of Tinkerbell on his arm? LOL

We spent 4 days on the farm helping my SIL this last week. I have to share the farm animals with you. Plus it is just a GORGEOUS place.

 THIS has been lunch 3 out of 5 days.... so loving summer !

Cantaloupe Gazpacho - CIC June

Hi everyone and welcome to the June 2014 issue of the CIC - Crazy Ingredient Challenge. If you're new and have no idea what I'm talking about... once a month I give a group of bloggers 2 crazy ingredients. They in turn take those 2 ingredients and create a new recipe, never published on their blogs and we all share them on the same day. We link to one another, you can see them below, and see who did what with the ingredients. It is great inspiration, creativity and fun!

I thought about this one for a while. I had planned one thing, changed my mind, settled on a second recipe and then changed it at the last minute.

Seriously, I got home last night at 8 p.m. and began preparing this recipe! Talk about cutting it close, had it not worked out...not sure what I would have done.

But it did! I really liked it, my husband did not. And to think! it was his idea!

Cantaloupe Gazpacho
1/2 small cantaloupe
1 lime, zest and juice
2 inches of an English cucumber diced finely
1-2 TBSP capers

Place the diced cantaloupe, zest and juice into a food processor. Blend until smooth. Pour into a chilled bowl. Top with diced cucumber and capers. Serve chilled.

What else is going on?
My blog, right here, was 2 on Wednesday! Man, I can not believe it has been two years. I have met some wonderful bloggers, readers and have received such support on top of gaining new friends near and far. It has truly been a spectacular blessings.

Lots of changes have occurred since I began. From creating down home, comfort fattening foods to applying what I've learned about healthy, nutrition and eating clean. I have gained followers and lost weight. I have learned about HTML, codes and embedding images just to mention a few things.

Sunny Granola

I love granola and was out, so I needed to make more. I decided to change up my previous recipe and do something different. Why? Because I did not have the ingredients for the previous recipes I had done, so I used what I had. It's called being frugal. Don't go out and buy ingredients, use up what you have. I find I am more creative and spend less when I use what I have. Plus I hate to waste food. I think that comes from growing up without a lot.

Previous recipes: 
Pecan Cinnamon Granola
Basic Granola

Sunny Granola
1 1/2 cups whole oats
1/2 cup dried cranberries
1/4 cup chia seeds
1/2 cup raw sunflower seeds
3 TBSP coconut oil
1 tsp pure vanilla extract
3 TBSP raw honey
1/4 cup raw shredded coconut

For the first batch I stirred all the ingredients together and spread it on a baking sheet. Baked at 325 degrees for 20 minutes, my oven bakes VERY hot, and it was almost burnt.

The second batch I left the coconut out, baked on 300 for 20 minutes and it was pefect. Then I sprinkled the coconut on top and allowed it to cool.
I mixed both batches in a Tupperware container.

Top ice cream, yogurt, fruit or eat with almond milk. Also a great grab and go snack.

Tuna Bites

I've had tuna at least once a week for over 3 weeks now. NOT normal for me.

So when I saw this idea on Instagram I made it as soon as I went to the store and bought a cucumber. (There was no recipe just a photo) I like the idea of using a cucumber as the base instead of a cracker, bread or lettuce.

I made my normal tuna salad:
tuna, packed in water, drained
mayo, 2 tsp
sweet pickle relish, 1 TBSP
fresh cracked pepper
a dash of sea salt

Peel and slice 1/2 English cucumber. Top the slices with 1/2-1 tsp of tuna salad. Slice grape tomatoes in half and top the tuna. Cute!

It was delicious and even my husband enjoyed it. This would be a great appetizer, party food or to serve to the ladies at tea.
This was his lunch plate, just to keep it real for ya~ wink

The Southern Special week 11

This week I am out on the farm, staying with my sister-in-law and helping her care for her father-in-law. It is so beautiful out here! Their farm is a fruit farm, tons of trees, bushes and vines with fruit galore! Plus a lake and horses. I may not go home. LOL , I will, I miss my kitties.
