Cajun Chicken Veggie Stir fry

I have read a lot of post about clean eating and being healthy. I've also read a lot of comments about how boring it is.

Eating clean is not boring nor difficult, but you must be adventurous and stock your pantry/fridge with healthy choices. Purchasing healthy items helps you prepare healthy foods.

This was a super quick dish, less than 20 minutes, all in one pan = less clean up and it's clean, healthy, delicious, quick, all the things we love and need with our busy lives.

This is a great way to clean out the vegetable bin, using what you have one hand, or a frozen bag of veggies works just as well.

I love preparing a stir fry, it is healthy, quick and uses up those last bits of vegetables that you don't really have enough of one thing for a dish. Toss them all into one!

Cajun Chicken Veggie Stir fry
5 boneless skinless chicken tenders, chopped
1 TBSP extra virgin olive oil
1 small onion, chopped
leftover veggies from the fridge OR a bag of frozen veggies
Here I have: pea pods, carrots, broccoli, red/orange/yellow peppers, green beans and squash
Cajun seasoning (premade from the store or mix your own)

Saute the chicken and onion in a pan coated with the seasoning, as much or little as you want. Cajun spices can be spicy/overwhelming, so it's up to your taste. Once this is done, toss in your other veggies, stir well and cook until they are the desired tenderness.
You can serve this with rice or noodles but I kept it clean and just served the dish as it is. No extra carbs, sugar, bread, etc...
