Kiwi Strawberry Banana Smoothie

Time to taste the tropics!

Actually truth be told, I had purchased a ton of strawberries (6 lbs) and a bunch of kiwi. We were eating through the strawberries but the kiwi were sitting there all lonely. SO I decided to pop them into a smoothie. I will NOT waste good fruit!

It was simple and delicious. I wanted it to look pretty for you, so I enjoyed it in this slammin' margarita glass. You could add alcohol if you wanted, but I don't drink.

Kiwi Smoothie
2 kiwi
1 frozen banana (this makes the smoothie thick and creamy)
5 large strawberries (I toss them in the freezer for a bit this helps make the smoothie cold without the use of ice)
1 cup almond milk (I purchase the original unsweetened)

Peel and slice the kiwi, place one along with the other ingredients into a blender or VitaMix. Blitz until smooth. Decorate your glass with the second kiwi, or you could toss them both into the mix. It's up to you.

ENJOY I sure did :)

Remember that healthy doesn't have to be boring! Pour your favorite smoothie or protein shake into a fancy glass, it taste better. ;)

Madeleine interview and book review

Good morning or it may be afternoon or evening for HEY, how's it going?

If you've been around long, you know from time to time I do reviews on cookbooks or books that mean something to me. Well, today I'm going to tell you about a new book that Viva Editions sent to me for a review. I'm not obligated to do a review and received no other compensation than a free book. However, I am doing a review because I enjoyed the book. Not only was it informative but funny! She is definitely someone I could see myself spending hours with making soap, hanging out clothes and laughing on the front porch watching the world go by.

About the author: She adores writing in all its incarnations, and has a popular blog at  She has a B.A. in sociology and became an unrepentant, tree hugging hippie after moving to British Columbia eight years ago. She lives in Vancouver, Canada with her husband Adam, her baby Olive and their dog Gus.

I loved this book, she is down to earth, funny, even a little sarcastic...hmm she might be my long lost sister that I never had!

Seriously, she pretty much covers everything you ever wanted to know about living the simple life. NO that doesn't mean she does without all the comforts of home, but she has learned a valuable lesson. Less is more. I love the concept and tried in vain over the years to convince my husband and sons that "less is more" they weren't buying it.

She writes passionately about the 3 R's and the 3 B's. Reduce, Reuse, Recycle and her Beg, Borrow, Barter idea. Actually it's not a new concept, it is going back in time, when life was simple, we were less hurried, busy, cluttered and frantic. People sat on the porch at night, visited, wrote letters and shared their lives and NOT on Facebook.

I have many similarities with Madeline and I am sure that is why I enjoyed the book. I was privileged to be able to interview her. Here are a few of the topics we discussed:

I would so love to hang out with her, but instead, here are the questions and answers for the interview:

Hi Madeleine, it was exciting to read a book by someone as nutty as myself. My husband thinks all the RRR and BBB is nuts... I love it!
First important Question: How is Olive and is she walking yet? 

Olive is indescribably delightful. She is nineteen months old, walking and talking and coming up with some hilarious mispronunciations. Adam and I think they are adorable and we do nothing but bore everyone around us with imitations. We have unabashedly become THOSE parents. 

1. When did you first decide to write the book and did your family say "no one will buy that, it's crazy?"?

I actually entered this whole book publishing world kind of backwards, because a publisher contacted me after seeing a list I wrote for, titled "10 Crazy Hippie-Lady Things You Should Be Doing, But Aren't". She loved the tone and content of the list - which was filled with simple little eco-friendly changes like using an ice cream cone instead of a cup, and using soap instead of body wash.

So she contacted me, and asked if I would like to write a book. And when you are a writer and someone says they would like to publish your book- I mean, I couldn't say yes fast enough. I was elated. All of that time spent rambling on The Internets had finally paid off!

My family has been hugely supportive of both my writing and my eco-friendly shenanigans, so they were all on board right from the get-go. Especially my husband Adam, who promptly began calling himself my manager. (He is not my manager. If he contacts you please hang up immediately.) 

2. Have you been able to influence family and friends to embrace your RRR and BBB? If not in whole maybe in part?

In the beginning these endeavors were approached with a sort of indulgent kindness, somewhat akin to how you'd treat a small child with an imaginary friend, "Oh, you're going to wash your floors with tea, are you? Of course you are! How nice!".  I think over time as they saw that my floors were still clean and my laundry detergent worked, and my hair was no worse from my homemade shampoo and conditioner, they began asking for recipes.

I think this is the best way to go about it - don't preach, just do your own thing and let your fabulous patchouli-scented hippie vibes lure people to you.

Like the pied piper. (But with more baking soda and less rats.)

Over the years both Adam's family and my own have naturally gravitated to the same fondness for reducing and reusing, as well as the concept of beg, barter, borrow. Gifts are often secondhand or hand made, and we try to give experiences too, instead of things.

I do have a friend named Tyler who lived with us a few years ago and still hasn't forgiven me for the time we ordered takeout and I made him bring containers from home to avoid the Styrofoam ones the Sushi place used. He still speaks of it to this day. I think it was deeply traumatizing for him and I'm not sure he will ever fully recover. 

3. Have you started making dog food for Gus? (I used to make my dog her food due to allergies and all the junk/byproducts found in her food)

Gus (our English Mastiff) has some food sensitivity issues too (because, of course our dog is allergic to pork, oats, feathers, and cotton. Why wouldn't he be?) so we have had to choose his food carefully. But he is also almost 200 lbs and eats approximately eighteen cups of food and three small children at every meal, so I have to confess that making food for him from scratch was never something I really considered, especially because before Olive was born I barely even cooked for myself. 

(Some would say I "never" cooked, but that's because we disagree about whether or not opening a can of soup and heating can be called "cooking" . Of course it can, I mean what the hell else are you doing to it, I'd like to know?)

I have since started cooking on a daily basis (having a child to feed will do that to you) but I still don't cook for Gus. Sorry, buddy.

He eats a great brand of dog food that comes in an easily-recyclable pager bag so I haven't had any concerns with things in this department, but I think that for those with the desire to do so, making your own pet food is a fantastic way to ensure they are getting a healthy diet free from unnecessary preservatives and fillers. 

4. Have you or will you make your own baby food? YES! Sort of!

Olive ate her first meal at six months old, we pureed avocado with a bit of breast milk. For the first few weeks we steamed and coarsely pureed simple things like sweet potatoes, carrots, parsnips etc. After that we just started letting her eat small, well-cooked pieces of veggies, and soft fruits. She seemed to like that better because she could feed herself, and I've since heard that avoiding purees does a lot to help kids become good eaters because they get accustomed to different textures of food right from the start.

Whatever the reason, she's an incredible eater and eats whatever we do - salmon, elk, spinach, broccoli, beans- quite literally anything and  everything. 

One of the reasons we avoided store-bought baby food was that in addition to all of the packaging and waste, most were made with a pear or applesauce base. Everything was sweet. I don't think she would have the appreciative palate she does now if she had been eating sweet food for the first few months of her life.

5. Do or did the neighbors cross the street to avoid you on the sidewalks? (there comes the kook)

Ha! I like to think that my neighbours and I become really close because they get to see my dainties on display as they line dry on laundry day. Is there really any better way to get to know someone than seeing what their underwear looks like?

In all seriousness though, I think a lot of the initiatives I talk about in 'All You Need Is Less' have the potential to foster a really close sense of community with your neighbours. Being outside drying clothes, being able to talk over the sound of a push-mower, or feeling comfortable going over to ask to borrow something are all little things that go a long way toward creating the types of relationships that we've been lucky enough to enjoy with all of our neighbours in the past. I wouldn't have it any other way!

6. Any plans for a second book? Absolutely.

I can't help but write, it keeps me sane and fills me up in a way I feel completely inadequate attempting to describe.

I'd love to write a collection of stories about the chaos that is growing up in family with six kids, what marriage really feels like (blissful! infuriating! stabby!), and this exhausting, heart-bursting, soul-stretching thing called motherhood that I've been doing lately.
So, fingers crossed that will be on the horizons in the distant future. 

Yes, very random questions, but honestly except for just chatting, she pretty much tells you EVERYthing in the book.

Glazed meatballs

I have never been a fan of meatballs, not sure why. I used to love burgers and a good meat loaf but for some reason meatballs just didn't do it for me.

Last year I made a chicken Parmesan meatball and we loved them! My husband loved them and he's no meatball fan either.

So when I made these the other night, he just looked at me. I said, I know I know, just eat it.

So he did. He's so funny, he looked at me in this weird way and said "what's that taste?" I wasn't sure if he wanted an explanation or a smack side the head. I said, "I don't know, there's a lot of things in there". He didn't like my answer. Can't imagine why.

I said, the "meatball flavor or the glaze?" He wasn't sure. So I said, "well do you like them or not? "

"Oh yeah! I just can't place all the flavors." (sheez now he thinks he's an iron chef judge or something)

I loved them and the recipe made enough that the two of us ate them for supper that night and then had 2 lunches after that. If you're counting that is 6 servings off of 1 cooking/preparation. So if you are single, you could freeze some and if you have a big family you know you don't need to 'adjust' the recipe. It made 60 good size meatballs. The would be a great appetizer for a party!

It was simple but had several steps, not my norm. I like quick easy and no fuss. But these were worth the effort.

I ground my own chicken, yes I said chicken. My husband didn't even know they were chicken until I told him, so you'll love it! You can buy ground chicken or turkey if you want. I found chicken on sale and it was less expensive to do myself, plus I have a butt kicking food processor that made it a snap.

Glazed meatballs
1/4 cup honey
2 TBSP low sodium soy sauce
1 TBSP Dijon mustard
grate 1 lemon and use half in the glaze
juice from 1 lemon
oil or cooking spray (total I used less than 3 TBSP of oil) you could also bake these but I did a light pan fry/saute
2 tsp oil (for cooking the vegetables)
1 small sweet onion, diced
1 cup diced sweet peppers (you could use bell peppers if you want)
2 cloves minced garlic
1 1/2-2 lbs ground chicken ( I ground my own)
1/2 cup Italian seasoned fine bread crumbs
1/2 cup zucchini finely grated
half the lemon zest
1/2 tsp white ground pepper
1/4 tsp fresh cracked black pepper
1 lemon juiced
2 tsp Dijon mustard
1 tsp low sodium soy sauce

In a pan, place oil, onion, peppers and garlic. Saute and set aside to cool. While that is cooling, prepare your glaze by combining the first 5 ingredients. Set aside.
Grind your chicken in the food processor, if you purchased ground, skip this step.

Place the cooled vegetables in the food processor along with the 8 ingredients listed AFTER the ground chicken. Process until pasty and add it to the ground chicken, mix well.
Prepare 60 little meatballs about 1 1/2 inches in size. Saute in a dab of oil. Don't add too many at one time as it makes it difficult to turn them. Remove, set aside and continue until they are all cooked.

Now add the glaze to the pan and stir, allowing it to thicken just a bit, then return the meatballs, carefully turning to coat. Allow this to simmer for about 10 minutes and serve over veggie noodles, rice, pasta or as an appetizer.

**Note, the day after I fixed these, I prepared another batch of glaze and poured over the meatballs heated them and served over rice. My husband was happy.

FYI: these meatballs have 35 calories each , Protein 3.2 g Fat 1 g Carb 3.3g Sodium 86g

Spiral Swizz review

Now that I'm eating clean and trying to go without pasta, which really hasn't been that hard, I have seen a lot of recipes using a spiralizer. That wonderful little kitchen gadget that turns ordinary veggies into noodles! I wanted one, so when Tomoson gave me opportunity to review one, I JUMPED at the chance.

It's a little thing, hardly takes up any room, which is great because my kitchen is pretty packed with gadgets, gizmos and doo dads.

This is hand held, no batteries or cord to worry about but unlike a lot of hand held gadgets, it is simple to use.

It is designed to make raw vegetables "pasta" with ease from carrots, zucchinis and the like, the Brieftons Spiral Cutter is the perfect gadget for raw foodies." This is what the box tells you, now I'm not a raw foodie, but was at one time. I do enjoy raw food but having pretty veggie pasta instead of carb loaded wheat pasta sounded great to me. I have had 'veggie noodles' before and enjoyed them.

I purchased some zucchini and carrots to test it out. It really was as easy as it looks. Just stick the veggie in and turn it, out comes your pretty new healthy pasta! You can then cut this and put on salad , in soups or use it as pasta for a fresh pesto or raw pasta sauce. Even saute the noodles in a little olive oil and garlic, Viola! Done.

It is affordable, easy to use, easy to clean, sharp, compact, safe finger guard and no attachments to get lost.

I highly recommend this product. If you even THINK you might use it a couple of times a year, it is worth it. But if you're like me, you'll use it once and then over and over again.

The kids will love the veggie noodles and it might help them to eat more.

Getting Up and Getting Down

No recipe today, just some news for you all. I'm a TAFFY Ambassador! WHAT am I talking about? Read on!!

Most of you know, that in January of this year, I decided to change my life. Get on track, get up, get moving and get my weight down. (eating clean and exercising)

I have lupus, fibro, crohn's and a few other issues. I was not on any medication and trying to tough it out each day. But it was becoming increasingly difficult. You can read more Here, here,  Here or Here

When I made the decision it was because the nail hurt bad enough. It was either, change my life or go on medication for life. The latter was NOT in my plan.

I joined a wonderful online support group and started moving. That's it, it's all I could do. Walk, sit down and rest. Walk, sit down and rest. It took me 6 different times on the treadmill throughout the day to go a mile. Sad but that's the truth of it.

Now I'm bustin' a move! I can walk the mile, I can set the incline to 6.5 and not die, using the bowflex, total gym, doing upper body, lower body and cardio each day! It's amazing what I can do now.

In the beginning I was wearing my regular clothes, no gym around here plus I would have been to embarrassed to go. I wore my fat clothes. You know the ones. Baggy t-shirt and sweat pants. As time has passed, I've lost weight (47 lbs and 56.2 inches so far) and wanted some "cute" workout clothes.

HA! Well finding cute workout clothes for a "big" or curvy girls was HARD. Then Kim (from Sublime Reflection) told me about Taffy. OMGosh I was in love! So cute and made for us BIG girls. 
One problem, my husband lost his job and money was so tight poor Abe was crying on my pennies.

I was on the Taffy Facebook page one day and saw a giveaway! OMG I was so excited. I hurried to the blog and entered. I mean, what did I have to loose? Then I followed Taffy on Twitter and saw several, six to be exact giveaways. I entered them all. Shared them on twitter, on FB and guess what... I WON! I was super excited.

When my Taffy Capri pants came I could not wait to try them on. NOW I know what I see ladies in these workout pants in Wal-Mart and all over. GOOD GRIEF they are comfortable. I could live in them, honestly I could.

I sent Taffy and the blog a thank you, posted it on twitter, on FB and sent an email. I was chosen as the "Fan of the Day" on FB for Taffy. I was so excited.

THEN Kim told me that Taffy was looking for ambassadors. So I quickly applied and guess what, YEP you guessed it, I was chosen. I feel really honored as I am the only "food blogger" and all the rest are "healthy, fitness" blogs. I'm special. lol

As an ambassador they sent me another pair of Capri's, a racer-back top and a jacket. I'm stylin' and profiling now! (yes my adult sons just cringed if they read that)hahaha but that's okay.

Fresh Strawberry Sauce AND Fly On The Wall - May

I have been doing some #cleanup for the #lgkspringfling challenge. Let me tell ya, I did not realize just HOW many photos I have.

Yeah, thousands is an understatement and not all of them are printed yet. sheez and they may not be considering I have over 5000 on 1 flash drive and I have NO idea how many on the other one.

Yes, I'm a shutterbug. I love taking photos almost as much as I love cooking.

While going through these photos I found a few sheets of paper with things written down that my boys had said when they were little. Oh the flood of memories and perfect timing...

Joey (our youngest) was brushing his teeth and Jesse said "hurry up in there, I'm growing a beard out here" LOL Jesse was 10 at the time

May 2, 2002 (our anniversary)
We took the boys to dinner with us, on the way home it was silent and I said "are you guys asleep?
In unison I get "NO"
Then Joey says "No, I'm just resting (pause) I have jumped over the edge of fullness"
We almost ran off the road laughing!

**This was sooo good! Eat it on yogurt, ice cream, fresh fruit, pancakes, waffles, salad or like we did on English Muffin French Toast! I used Thomas' new cinnamon vanilla OMGosh so good!

Fresh Strawberry Sauce
1 pt strawberries, washed and hulled
2 1/2 TBSP raw honey
1 lime juiced and zested
Blend into a smooth sauce. store in a glass jar in the refrigerator. 

When Joey was 7 or 8 years old his laundry needed to be put away. He had missed a shirt. I said "Joey, put your shirt up"
He picks it up and holds it in the air.
I said "WHAT are you doing?"
He says, "Putting my shirt up"
His father thought this was hilarious, I did not, it had been a long day and I was not in the mood.
Looking back, it was hilarious and quick witted. I knew then I was in trouble with this one.

When Jesse was just a toddler, we were having supper one night. Fried chicken (yes we're Southern to the core) and my husband said
"Hand me a leg"
Jesse lifts his leg out of the high chair and holds it towards his dad.
We fell out laughing.
Yes, my kids are quick witted and yes, they were a handful at times but gosh I miss those days!

Little Man was running around playing and dropped his sand bucket, when he tried to pick it up, he kicked it. Nema cracks up and says "he kicked the bucket" and she could NOT stop laughing...we think it's due to lack of sleep!

Here is my little man, he's been really sick and I've been at his house keeping him a lot...such a sweetheart.

Shrimp with wasabi dipping sauce and couscous salad

Yesterday I shared my CIC creation with you. Well, I made it over a week ago, JUST in case it didn't turn out I had time to come up with something else.
We loved it!

I love it so much that I made more of the dressing and served it with shrimp. As a little dipping sauce, it was great!

This recipe is similar to a previous one, as far as how I cooked the shrimp:
crispy shrimp with Asian dipping sauce

Shrimp with Wasabi dipping sauce
1 lb shrimp
2 TBSP oil
3 TBSP flour
1 TBSP cornstarch
In a bowl mix your flour and cornstarch, heat the oil in a pan. Dip the shrimp, shake off the excess and saute for about 3 minutes until done. They will turn pink and curl up. Do NOT over cook or they will be chewy.

Wasabi Dressing (see yesterday's post)

CousCous Salad
1 cup chicken broth
3/4 cup pearl couscous

Bring the broth to a boil and pour in the couscous. Turn off the heat and cover. Allow to sit until the liquid soaks up. About 5 minutes.
While this is going on, dice up:
1 cup tomatoes
zest 1 lemon
2 green onions
1/2 cup diced yellow or orange sweet peppers
Stir the vegetables in with the couscous along with 1/2 tsp celery seed and 1 TBSP dried parsley flakes.

In a separate bowl, prepare the dressing for the salad.
3 TBSP balsamic vinegar
1 TBSP olive oil
1 TBSP Dijon mustard
1/2 tsp lemon rind
1/4 tsp pepper
Blend well, pour and stir into the couscous salad. Serve warm or chilled.

Wonderful Wednesday Blog Hop May 20

My apologies that this post is late. It has been a busy couple of days and I missed the email with the code. :(

Sunday at 3 a.m. my husband passed out and hit his head on our cast iron tub. Knocked him out. So we spent time in the ER only for them to say he was ok, just whiplash. Well, here we are Tuesday evening and he is still not doing well. We have already driven the 4 hour round trip to the VA hospital once.

Then today on top of that I kept Little Man, I love him so! And that was a fun but hectic break. The child ran through the house at break neck speed pretty much all day! MAN I'm tired. is the post that should have been up already. SORRY SINEA!
