Pecan Cinnamon Granola

I used to eat granola a lot, as a snack, on yogurt, on ice cream, with fruit, on top of a get the picture.

Then I dropped ALL grains for 3 weeks. I am now introducing SOME back into my meals, but not a lot.

I was at the grocery store and thought I'd pick up a box. WOW wrong answer! Have you read what's in there? Talk about hidden fat, sugar and calories. Yikes. So I said to myself, "self", "let's go home and make our own". yes I talk to myself, it's okay. (wink)

This one is a little different and simpler, less ingredients, less fat which means less calories. I modified this recipe from Gooseberry Patch.This granola is also cheaper to make, I like being frugal. I had planned to put dried cranberries in but changed my mind. SO if you see them in the photo, I omitted them.

I also added some cocoa extract, yeah, have you seen it? NuNaturals carries it. You can find it HERE

Pecan Cinnamon Granola
5 1/2 cups old fashioned oats
1/2 cup chopped pecans
1/2 cup raw sunflower seeds
1/2 cup raw shredded coconut
1/2 cup honey, raw and local
1/2 cup butter, melted
1 tsp cinnamon
2 half droppers NuNaturals Cocoa extract

Stir the liquid together in a small bowl and set aside. Add all your dry ingredients into a large mixing bowl and stir well. Now mix in your wet, I used my hands, it is easier.
Next spread the mix evenly and thinly onto 2 15 x 10 sheet pans. Bake at 200 degrees for 20 minutes. Stir and return to the oven for 20 minutes. Bake 20 minutes, remove and stir. Repeat this one more time, then cool and store in an air tight container or gallon zip top bag.

Salad - more than lettuce

More questions...which I'm good with. This is how we learn and grown. I will answer this one for today.

Aren't you tired of salads? No and here's why. I don't just eat "lettuce" which is what most people picture in their minds when they hear salad. For me salad is so much more. I put everything but the sink in there.

A normal lunch time salad for me:
organic baby spinach
snow pea pods
chicken or tuna chunks
shredded carrots
diced sweet salad peppers
sliced radish
grape tomatoes
diced apple
sliced grapes
boiled egg chopped
raw sunflower seeds
dried cranberries
2 TBSP of dressing, normally a vinaigrette of some type

This salad varies, sometimes I use Romaine lettuce instead of spinach, some days there is no apple or grapes. I may use leftover steak, chicken or fish from the previous night.
GASP I might even break open a can of tuna and use that. Like I mentioned a few days ago, I am not 100% clean, vegetarian or vegan.

Chocolate Smoothie - a girl's best friend

Yesterday I answered some of your questions and I hope it helped. Today I'm sharing another smoothie, but this one is really just because...

Sometimes a girl just needs her chocolate!

I have always been a chocolate fiend...a choco-holic, a sweet addict. Since I started eating clean, that has gone away. SHOCK to my system and thought patterns.

I did buy my husband some M & M's a few weeks ago and ate about 2 TBSP, they were not good. Seriously, I did not even eat them all. Part of me was sad, how could chocolate not be good?

SOooo, I made this smoothie to see if I had lost my taste for chocolate or if it was the processed sugar that I didn't like.

The results, I love chocolate, just not the little processed stuff anymore! YAY

Healthy Chocolate Smoothie
1 frozen banana
Hershey's dark chocolate cocoa powder (yes you could use something healthier)
3/4 cup coconut water
1 scoop pea protein powder

Everything into the Vita-Mix or blender, blend/liquefy until smooth.

ENJOY, I did :) This is a great afternoon treat or breakfast.

Pre-workout Smoothie

Hey guys, hope you're having a fabulous week so far.

Today I'm going to share one of my smoothies with you and tell you a little more about what I am doing. (If you missed my earlier 2 post this year, they started with 1 and 2)

I have gotten a lot of encouragement and great comments about my weight loss and journey but I have also gotten some questions.

The #1 question is 
What type of diet are you on? I'm not. I am on a new lifestyle, not diet. I am taking care of me for once in my adult life and eating "clean". No processed foods, or very little. I am not 100%  clean, but at least 6 days a week I am at 90-95% clean.

Second common question:
What do you eat? Seriously, follow me on Instagram and you'll see what I eat during the day and make sure to follow here as I post my recipes each day. If you can't remember to stop by, sign up for the email, you will receive an email each day with that day's post. I will not spam you I promise.
What do I eat, a LOT of fresh vegetables, some fruit, little to no dairy, no sugar, no fried foods, pasta or rice once a week, lean meat and lots and lots of water.

Next question:
When are you going to post photos, before and after?
Well, to be honest, I don't know. I am very body conscience and embarrassed at how far I let myself go. I don't want to post photos. I don't want the ugly comments like other bloggers get about me being fat. Sheez I know I am, that's why I am changing. I don't want to hear the comments about my size or questions on my weight. I don't want to reveal my true size.
There I said it.

Let's just say, I'm down 30 lbs and would LOVE to see another 75 gone. Does that suit you? YES I really need to loose that much. Maybe when I reach my next goal I will suck it up and post photos,but no promises.

Another question:
Do you exercise or what program do you follow? I don't follow a "program" I'm not on WW or Jenny Craig or anything like that. I don't go to a gym and I don't have a personal trainer.
I do work out, at the level that I am able to. I suffer from several immune disorders and if I go to hard it throws me into a flare. I have to workout at my own pace. It's slow but effective. I walk on a treadmill and use a machine similar to a total gym. I also have started doing some basic yoga. Mostly stretching. 

As I loose weight I'll be able to amp up my exercise. I didn't gain it all in a day and I won't loose it all in a day.

Pre-Workout Smoothie
2 frozen bananas
1/2 cup almond milk frozen
3 TBSP pineapple
1/2 -1 cup of coconut water
1 scoop pea protein

All of these items go into my Vita-Mix and blend until smooth. Simple but it is one I enjoy often.
I drink my smoothies before I work out and it helps maintain my blood sugar levels, as well as my energy levels. The pea protein also helps reduce my cravings for sugar.

Chicken Soup with Asian Flare - Feb. Fly On The Wall

February? Seriously? Man, this year is flying by. SPEAKING of fly...

YEP you guessed it, it's that time. FLY ON THE WALL

But before we get to the fly...let's look at this FANfreakin'tastic (yes it's a word) recipe I made! I wanted a soup but nothing heavy. My husband enjoys hot food for lunch, where I can go for a salad, smoothie or yogurt. Yeah, you can imagine how excited he gets about those! NOT

We both love Asian food or food with an Asian flare. So I came up with this recipe and he LOVED it and told me "This is a keeper, you can do this again" oh yeah. That's what I like to hear. AND it's healthy. 

Chicken Soup with Asian Flare
1 cup diced chicken
2 cups chicken broth or veggie broth
6 cups water
1 tsp garlic powder
1/2 tsp white pepper
1 TBSP smoked paprika
1/4 tsp red pepper flake
3 large Bok Choy leaves, sliced
3 organic carrots, sliced
1 cup (leftover) spaghetti squash (this serves as the noodles)

Bring all the ingredients to a rolling boil. Then reduce to a simmer and cook for 30-45 minutes.

ENJOY! A healthy soup with noodles that are not. Loved the clean, rich flavor.

Motivation for me....

Eww but funny!

If you read my post often, you know I've told you about several family member who have done this next one! LOL

As part of my #herestoahealthierme in 2014...I was blessed to use a treadmill. It is a high speed one too, meaning expensive and loaded with buttons, bells and whistles. When we first got it, my cats claimed it. They sit on it all the time! AND even after they've been shot off. Yes, I turned it on, thinking they'd move, nope. ZOOM off the end they went! It was hilarious, no they weren't hurt. AND daily, there they sit. Craziness
Let's see, my husband fought with the table saw and lost. Table saw 1 , thumb 0. Unless you count the stitches then it's thumb 7.
I have been babysitting for "LittleMan" and he keeps me in stitches! he is so darn funny. When I whistle, he takes in a deep breath and lets out a HIGH pitch noise and grins. That's his whistle.

Everything is an eye. Point to the ear and say, ear. He says, eye. Nose. Eye.

Oh wait, then there is the shoe. Socks, feet and shoes are shoes.
On Feb 4th I'm driving with Aunt Olean to Macon for a doctors appointment. We pass by a lake and she said, "there's good fishin' in there " . I said, have you been there?
Yes, she replied.
I said, did you catch a lot of fish.
No, she said. I caught a cow though.
WAIT, WHAT? You caught a cow?
Laughter from the back seat. "Yeah a cow"
Okay, you gotta tell me!
She giggles, so funny, "we was fishing and I drew back like this "demonstrates pulling her arm back, " and threw the line but nothing happened. I pulled and it was stuck. I turned around and there's a cow standing there. My hook was in it's neck. It didn't scream or nothing. I walked over to it and pulled out the hook. I looked at Tammy and she said , okay we're done fishing now." That was it, we left.
We are all cracking up in the car now! ONLY Aunt Olean could go fishing in  lake and catch a cow! ROTFL
Sitting in my living room and I hear this sound, like a giant bumble bee. I look out the window and crack up laughing. There goes a man on a bicycle with a little tiny motor attached. He is whipping down the road, head up, big grin, feet stuck out and riding his bike! hahaha only in a small Georgia town can you see these things!
Lawyer friend post on Facebook : anyone know if it is possible to fit a person in a crab pot?
She says, you can't make this stuff up. I'm doing research on a case.

sausage and greens with LouAna coconut oil

After last nights dinner of Stove Top Pilau, we sort of wanted a repeat. I had a few of the items left, so I decided to make something similar.

It was a big hit, easy and frugal.

Sausage and Greens
3 smoked beef sausage, sliced
5 slices bacon, diced
1 medium yellow onion, diced
3 cups collards, shredded
1 TBSP LouAna coconut oil
smoked paprika
red pepper flake
water or broth

In a large sauce pan, add your oil, sausage, bacon and onion. Saute until the bacon is done, add your spices, collards, water/broth and cover. Simmer for 20-30 minutes.


You could add rice or serve it over rice. I did not as I am cutting back on carbs.

Stove top Pilau AND giveaway

Southern Living has another new cookbook coming out. YES! and I have it! It is due for release on March 4th. Comfort Food Made Easy

WHO WANTS TO WIN???? A copy of the cookbook AND a LouAna coconut oil!**

This one is Comfort Food Made Easy. Well, when I first received it, I thought, oh no, comfort food is delicious but not healthy. I was pleasantly surprised to drool  gaze through this book and see there were some wonderful sounding recipes that would not kill my healthy eating. Also, there were a number of them I knew I could alter just a tad to suit my needs.

This recipe is one of them. It was "oven baked pilau". I did mine on the stove top in my awesome Cuisinart pan. My family knows, when that pot is on the stove, something fabulous is coming out of it for supper.

This recipe did not fail and as we like to say "it's a keeper."

If you're not familiar, pilau is a rice dish, cooked with broth,spices and a meat normally chicken.

Stove Top Pilau
2 large chicken breast, diced
3 beef smoked sausage, Louisiana style
1 TBSP extra virgin olive oil
1 tsp smoked paprika
1 tsp garlic powder
1/2 tsp celery seed
2 tsp parsley flakes
1/4 tsp red pepper flake
1 tsp white ground pepper
1/2 tsp fresh black cracked pepper
3 cups broth, vegetable or water
4 cups chopped collards
1 medium yellow onion diced
3 carrots, sliced
1 cup uncooked rice, Jasmin or basmati

In a dutch oven or a large sauce pan, place oil and sausage. Cook and remove. Toss in your chicken, diced up, and cook until the outside is no longer pink. Now add your seasonings, sausage and stir well. Next add in your water, broth,rice and vegetables. Stir well, cover and simmer for 30-45 minutes depending on how soft you want your vegetables AND to make sure the rice is done.

Chic-ger with balsamic ketchup AND fried pickles

After having such great success and responses from the Fried Green Tomato slider, I decided to try something else.

Similar but different.

A Chic-ger. YES a chicken burger slider, but nothing plain, a kicked up version. Lettuce, tomato, bacon, mayo, balsamic ketchup and fried pickles on the side.

No, not exact diet friendly, clean or the "best" way to eat. However, without a little guilty pleasure now and again, I won't stay true to this healthy eating AND this is not totally 'bad' either.

Besides, eating clean and healthy is something I wanted to do, not my husband. So every now and again I have to fix something that makes him think he's eating 'good  bad-for-you' food.

 Chic-ger with balsamic ketchup and fried pickles on the side
1 lb ground chicken
1 tsp white pepper
1 tsp smoked paprika
1 tsp garlic
1 tsp onion powder
4 TBSP Italian bread crumbs
1 egg beaten

Mix all these ingredients and make 8 patties. Saute in a pan with a dab of oil. Chicken is lean and will stick and be dry without some oil added.

Cook your bacon and set aside. Slice a tomato and tear some lettuce to fit your buns. I used slider size buns. (soft whole wheat buns)

Balsamic ketchup, you can find in the grocer or make your own. 4 TBSP ketchup and 1 TBSP balsamic vinegar with Modera. You can also make the ketchup from scratch if you prefer.

Fried Pickles
2 large kosher dill pickles, Mt. Olive
slice into 1/4 inch slices
roll in buttermilk fine ground corn meal
saute in oil, drain and serve

Tropical Green Smoothie

HAPPY MONDAY... well, it's going to be Monday whether you're happy about it or not, so you might as well set your mind to be happy. Being ill, crabby or moody just sets you up for all sorts of failures and set backs.

With my new clean eating, I'm setting myself up for success and not failure. Failure in the form of Negative Nelly talk in my head, no more! I kicked her to the curb and replaced her with the ever annoying Smiling Sally who is a ray of sunshine and positive. LOL...not really, I'm sort of in the middle but in my head Sally and Nelly are having a knock down drag out!

Okay, before I scare you off...let's move on.

I'm down a total of 25 lbs!!! GOAL 1 met...whew. The last 2 lbs were a bugger to get off. NOW to get the remaining...cough 75 off. OH LAWD help me!

Actually I do feel better, stronger, my clothes are looser, my sleep is better, my pain is less and I can wear my engagement ring again. First time in 4 years!

HOW you ask? Clean eating. No processed foods. Nothing from a can or box. Well, almost nothing and the VERY FEW things that are not fresh are frozen or have nothing added to the can. I also replaced my oil. I either use extra virgin olive oil OR
LouAna coconut oil. health benefits — it's vegan, as well as well as contains beneficial fatty acids, zero trans-fats and no cholesterol.

EVEN in my smoothies. YES you read that right. In my smoothie. Coconut oil is very good for you and no, it doesn't make your food taste like a coconut.

Tropical Green Smoothie
1 mango
5 TBSP crushed pineapple
4 TBSP Greek yogurt
2 tsp organic ground flax seed
1 scoop Pea Powder protein
1 cup coconut water (Cocozia)
1 1/2 frozen bananas
3 handfuls chopped kale
1/2 cup mango juice
1 TBSP LouAna coconut oil

All ingredients are tossed into the Vita-Mix or blender and liquefied. The frozen banana helps make it thick and creamy. You can add or substitute whatever ingredients you have on hand.

A story of love...Feb. 2014 USE YOUR WORDS

I love participating in these challenges that Karen over at Baking In A Tornado came up with. I hope you enjoy them as well.

Here we are in February and our second UYW post. Let's see if I can get all the words into this story...maybe true, maybe not. Here goes:
Back in 1890, she was just a whip of a girl. Her eyes were seldom on her work, her momma would say "your head is in the clouds" stop daydreaming and do you work.

Pearl was in love. Not with a person, but with the stars, moon and things not of this world as folks would say.

You see, Pearl was not like most girls her age, at 18 she was unmarried, had no betrothal and of course no children. All of her older sisters and one younger had already said "I do". Each week when the woman gathered to do their quilting, this was cause for Pearl to turn red. Her well meaning mother would totally embarrass her and she would glow red most of the day. It was a complete and utter embarrassment to her folks that she was 18 and no man in sight. If only they understood.

Time passed and her siblings all married, now at the old age of 21, Pearl still resided at home, an unwed spinster. No hopes of finding love and saying I do were in her future. She was fine with this, her family was not.

Upon arrival of her 22th birthday, and feeling at a loss. Her father, took her aside and told her they were sending her to stay with relatives in Ohio for the summer. Her cousin had just delivered twins and with 3 other small children under foot, she was in need of help.

Pearl did not argue but went willingly. A summer away would be nice, even if it was only to care for children.

Upon Pearl's arrival, she was met by a most handsome older man. She felt all jittery near him and this made her face turn red on several occasions on the drive to the farm. He was a neighbor of her cousins and helping them out by fetching her at the train depot.

It was long ride to the farm, hours actually and the last several miles were in the dark. Pearl looked up at the Ohio sky, the stars, the moon and wondered if anyone was up there, besides in heaven of course. She was lost in thought, starring up in complete amazement at the celestial glory above her...wait, what did he say?

This man sitting beside her, this stranger, he was telling her the NAMES of the stars? Oh my, someone besides her and authors of books, a simple farmer who knew of these things. She was overjoyed. 

The last several hours of the trip were spent in utter abandonment of her proper ladylike demeanor, chatting like a magpie about stars, the moon, astrology and the likes. Oh papa would have her hide!

Just as her thoughts went to papa and his outrage at her behavior, the man beside her, William, said," I have never before met someone as beautiful and knowledgeable as you Miss Esch. I hope you do not feel I am too forward."

Pearl, now a nice shade of red, thought to herself, this must be what love feels like. She dipped her head and said "I fear I have been to giving of myself this night, alone with a strange man and talking of such things. Please forgive my impetuousness. I do love hearing all you have told me about the stars, but fear I may have led you to think I am an un-virtuous woman and if you would not think me too brazen," ( a deep breath and hard knot in her throat) she whispered... " please call me Pearl."

William pulled on the reigns and stopped the horses. He looked over at Pearl and said, "No, not at all. I feel that this day, the Lord has granted me the opportunity of a lifetime. Finding my soulmate. I know I am being forward but feel I must say this while I have the nerve. Pearl, (he stopped and took a deep breath) I am a 29 year old unmarried man, one is not interested in frilly, giggly girls. A man looking for a woman who can converse with him about things other than planting, crops, and child rearing, one who has a love for the things as I. I feared I would find no such, and then you appeared."

Pearl, feeling heady looked at William in the moon light and knew she had found love on her way to care for her cousins children. A whisper of thank you to her God left her lips as she smiled at William. Knowing that one day, she too would say "I do" to her love and she found him in Ohio under the stars.
