Spicy Chicken Stir Fry and Fly on the Wall

It's that time of the month, NO not that, Thank God. But time for "Fly on the Wall" a time when you get to take a peek into my life/house/outings.

PLUS as always a recipe. This was a "I have veggies in the fridge that if I don't use them I'll have to throw them out and I can't do that" kind of a meal. LOL

Seriously, I looked in the fridge, saw all the vegetables that were a week or more old, still good, but needing to be used. So what better way than a stir fry.

Another great thing about a stir fry, you can load up on vegetables, use less meat and your husband will not complain. shhh don't tell.

Spicy Chicken Stir Fry
4 boneless skinless chicken tenders, cut into bite size
1 large red pepper
2 lg gr onions
1 bag snow pea pods
5 baby Bok Choy

1 tsp sesame oil
2 Tbsp soy sauce
1 Tbsp honey
1/2 tsp ginger
1/2 garlic
2 tsp fish sauce
1/2 tsp paprika
1/4 tsp red pepper flake

I like it simple so, I pan saute the chicken, toss in the vegetables, add a couple of tablespoons of water so it will sweat the veggies. Then add the sauce, cook for about 5 minutes. I like my veggies to still have some crunch.

Points to my husband and says, "what him doing"
"him, you son"

Want a wing?
"eww no"
Want some chicken?

"Hey Hey Hey, you know what. I'm 2 and 1/2"
Yes, you'll be 3 next month.
"NO I'm 2 and 1/2"

"I'm gonna half a can-null cake"
You mean a cake with candles?
"NO, a can-null cake"

Sits in my lap, pushes on my chest and says
"You got big ninnies"
Yes and they are mine so don't touch.
She cracks up laughing and says
"My mommy gots big'uns too"

"Why you no got games on you phone?"
Because it is a phone.
"YEEEAAHHH and you need games, get me one"
Gramma she no get me a game
Takes my face in her hands and says "You pose to share"

I go in my moms house early on her birthday with cupcakes.
Miss Sassy Pants says " I wanna cuppa cake"
Well, did you eat breakfast?
"uh huh"
Okay, if Gramma says you can.
"her will, open it"
My mom on her 68th birthday opening her cupcakes and on the right, Miss Sassy Pants "I got a cuppa cake"
No my Mother does NOT color her hair, it is natural. Very little gray, you have to hunt for it. Yeah, I missed that gene. :(
