Zucchini Day

I am declaring it zucchini day! We have fried them, stuffed them, shredded them and added to baked goods, frozen them and given them away. Yet we still seem to have a ton.
Not going to complain. It could be worse.

Since it is Zucchini Day, we need to start our day with breakfast. What is your favorite dish to serve? Do you have a quick grab and go during the week and then splurge on weekends?

Garden Omelet/Zucchini Day breakfast
1 small zucchini
1 small squash
1/2 red onion
5 eggs
1 TBSP oil
2 slices crumbled crispy cooked bacon
First saute the zucchini, squash and onion in oil, then add the bacon. Stir until it is heated through. Next whip 5 eggs with a dap of water, this adds fluff. Next pour in the pan and allow it to cook until set, carefully flip and cover with a lid. Allow it to set for 3-5 minutes. Cut in half and serve.

How about lunch? I normally eat leftovers. And sometimes I will fry up some zucchini fries.

These hot summer days make it a great time for grilling, or if your weather is like ours and raining everyday, how about a great side dish to go with your indoor meal. Cynthia over at Feeding Big has shared her wonderful dish that would go great with my grilled teriyaki chicken sandwich that I did indoors due to the rain.

Of course there will be supper or dinner depending on where you are from.
And last but not least dessert! My friend Jutta over at HungryLittleGirl is famous for her 'odd' combinations. So she sent this lovely cake over to help with my zucchini day. I have used zucchini in desserts before and it is really good and a great way to sneak in vegetables to your kids.
