Roasted Red Pepper Chicken Tacos

Ole` ,did you know that yesterday was National Taco Day? It was, and since we love Mexican food I decided to do something a little different.
I threw these ingredients into my crock pot, let it sit half the day and then, wa-la...supper! Delish too, hubby gave it two thumbs up!

Roasted Red Pepper Chicken Tacos
2 TBSP home made Taco Seasoning 
1 jar sweet red roasted peppers
1/2 cup salsa
1 lb chicken, boneless skinless
1/2 head lettuce shredded
1 cup Mexican blend cheese
Ranch dressing or sour cream
Flour tortillas, small

Fire up the crock pot on high, place your chicken inside and cover with taco seasoning, salsa and the roasted red pepper puree. To get the puree dump the whole jar into a blender or food processor until smooth. Let this sit on high for 4 hours, remove the chicken, shred and return to the pot on low. When you are ready, shred your lettuce and set out your other ingredients. Now to assemble. Tortilla, chicken, cheese, lettuce, ranch. Done
This made 16 small tortillas with ample chicken in each one.
