One for the guys

My guys are 'meat and potato' guys, they love it and if you add cheese to it, they will eat just about anything.

This recipe satisfies all those "hankerings" for them, because we know only ladies have cravings, ha-ha.

This is my youngest sons best friends favorite recipe. He request this when he stays over. Aaron says "these are the best potatoes ever".

Potatoes Rancheros

1 lb lean ground beef ( or ground turkey)
2 boxes of Betty Crocker(c) Au Gratin Potatoes
4 1/2 cups boiling water
1 1/3 cup milk
2-3 cups shredded cheese ( Mexican blend)
2 cups coarsely crushed tortilla chips
2 TBSP taco seasoning (I make my own)

Heat the over to 400 degrees
Cook beef with taco seasoning and drain if needed.
In a large bowl, add potatoes, sauce mix from the box, boiling water and milk. Stir well and add the cooked meat plus half of the cheese.
Pour into a 13 x 9 baking dish, spray with a non stick cooking spray.
Top with crushed chips and the remaining cheese.
Bake for 30 minutes or until the potatoes are tender.

A tasty treat for meat and potato loving guys, or girls.
