Gooey Candy Bar Cake

Almost two years ago for my sons birthday, I made him a gooey candy bar cake. We have this thing, on birthdays you have a choice, either we go to a restaurant that you like OR I fix a meal of your choice. Of course for my birthday we go out :-)

Two years ago my son said, surprise me. So knowing how he is, I started my search a month before his birthday. I found this recipe(in an old copy of Better Homes Cookbook)and when I read it, I KNEW this was what he would flip over.

I was right! It was a big hit!

I have been told since then that it has several names. All I know is, the recipe   I copied out of a book, which one I have no idea, called it Gooey Candy Bar Cake. So that's what we call it. That and DELICIOUS.

Gooey Candy Bar Cake
1 Can Sweetened Condensed Milk (I usually use Eagle Brand)
1 Box Chocolate Devils Food Cake Mix (You will also need the ingredients indicated on the cake box, such as eggs, ect. but now I only make my own cake and no mixes)
1 bottle Caramel 
4-5 Bars of Heath candy, Crushed. ( I used 2 full size)
1 Container Whipped Cream

Preheat your oven to 350 degrees 

Prepare cake mix per instructions on the box.
Pour cake mix into a 9X13 pan.
Bake for approximately 30-35 mins. (depending on your oven or until a toothpick in the center of the cake comes out clean.
While the cake is baking. Mix the caramel topping and the can of sweetened condensed milk. For a gooey cake add lots of caramel and for a less gooey cake, add less. My son wanted gooey.
Once the cake is finished baking. Poke holes into the cake while it is still warm, I used the end of a wooden spoon.
Pour the caramel and sweetened condensed milk mixture over top of the cake. (it won't ruin it I promise)

Let the cake cool and prepare your whipped topping Or use cool whip or whatever type of whipped topping you prefer. 
Once the cake has cooled. Spread a layer of whipped cream over the top. 
Crush your Heath Bars. I leave them in their package and hit them with a hammer. Sprinkle the crushed heath bars over top of the whipped topping covering the entire cake.
I normally add more caramel to the top and drizzle a little chocolate syrup.You are finished! Eat and enjoy your masterpiece. Please be sure to store any leftovers in the fridge.

And if you're diabetic, DON'T eat this, it's a sugar coma waiting to happen, OR you can eat a piece and go outside for a run! All joking aside, be careful as it is LOADED with sugar grams. But oh so stinkin' good!

Sweet Potatoes and Apples

Having a sweet tooth I am either baking or drooling over some fabulous dessert. A few nights ago I wanted something sweet, it was close to pay day and I honestly was running unusually low. So I had to improvise.
Looking around I saw there were some sweet potatoes that needed using up as well. hmmm that got me to thinking.
Now as the temperature was over 100, I really did not want to crank up the oven, so I decided to try my crock pot. Well, let me tell you, it worked out wonderfully.

Sweet Potatoes and Apples

4 medium sweet potatoes, peeled and sliced
2 granny smith apples, cored and sliced
1/4 cup brown sugar
3 TBSP butter
1/4 cup dried cranberries
1/2 tsp Apple pie spice

Mix it all and toss it into the crock pot. set on high for 2-3 hours and that's it. I did stir it a few times during the cooking process.


Spaghetti Sauce

Who out there besides me fixes their own spaghetti sauce? I do not always for lots of reasons. Sometimes it is a last minute decision to have spaghetti or I just have too much to do that day. I do have a favorite store bought jar sauce, that is the Prego Chunky Garden. I love it. So if you see in one of my recipes where it indicates using a jar sauce, that is what I used.

Now back to the sauce. I never fix it the same way twice. So this recipe is not exact and open for changes. I normally use what I have available.

This time I had squash, carrots, onions, zucchini and sweet bell peppers out of the garden that needed using up. 

I toss all the veggies, washed and cut into chunks into my food processor, blitz it all up and then added 2 jars of homemade canned tomatoes. All of this went into my favorite Cuisinart pot. Added to this was 2 TBSP each of garlic, basil, oregano, paprika and 2 tsp of salt and pepper. I cooked 1 pound of lean ground beef with 1/3 cup of water and 1 TBSP of Italian seasoning. All of this was allowed to simmer for an hour and served over thin spaghetti noodles.

Korean Beef/Bagogi

This recipe is out of a church cookbook from years ago. The lady's daughter used to babysit for me at times. They had been stationed in Korea and this was her adaptation of the original.
My adaptation of her version is to fix it in the crock pot instead of stir fry. Now the reason I do this is, one, I no longer have a wok and two my husband can not eat steak unless it is tender.
I love this recipe and had not fixed it for probably ten years. I know, you're thinking, how can you love something and go that long without cooking it? Well, easy, I am ALWAYS looking at and trying new recipes, old ones get lost in the shuffle and we get burned out on certain things. So we go through cycles of what we eat. My husband may eat tuna everyday for lunch for a month and then not again for six. Are we the only ones who do this? Come on, someone out there has to be doing this besides us...right?

So, anyway, I was surfing through some old recipes and found this one. I said "OH MAN, I haven't fixed this in years" a must have this next week. SO , here ya go!

Korean Beef/Bagogi

2 lbs of beef,roast or steak cut into thin strips
1 Asian pear grated
3 green onions sliced
4 cloves of garlic
1 TBSP sesame seeds
1/3 cup sugar
1/2 cup soy sauce
1 tsp pepper
2 TBSP sesame oil
1 cup baby carrots sliced

Originally it  called for making a marinade, soaking the meat for 4 hours and then stir fry ingredients.
I mixed it all and poured it into my crock pot. set on high for 4 hours and served over rice.


4 ingredient chicken

Like most of you, I am on Pinterest. I love this place, it is addicting and relaxing. However, I find WAY too many recipes that I want to try. Don't believe it, if you saw my board of "recipes to try" you would know.

I kept seeing this recipe on there and everyone saying how "amazing" it is. So I had to fix it of course.

OK, it was good, but not amazing. Not to me anyway. The guys really liked it. Maybe I'm being a food snob or just too picky. It could be because it calls for making it in the oven and I used the crock pot.

You be the judge. It is easy to do and once you drop it in the crock pot, your done until time to eat and fix the sides.

4 Ingredient Chicken

4 chicken breast
4 gloves of garlic (I used 2 tsp)
4 TBSP of brown sugar
3 tsp oil (I used evoo)
salt and pepper optional (I used pepper only)

Now the recipe calls for popping it in the oven, but with temps hovering over 100 degrees. I used my crock pot. set on high for 4 hours and done. I used boneless skinless chicken breast tenders, frozen, because it was what I had.

Non Food Recipes

Here is a little something different. A few recipes for NON food type items. I like to make my own laundry detergent and am trying to be more "green". I know lots of people who are a lot greener than I, but I'm making an effort.

In this effort, I'd like to share a few recipes with you. I hope you find them useful.

Dish washing liquid

You will need a funnel, measuring cups, spoon, and a 24 oz bottle. Maybe a previous liquid dish soap bottle. Now you can recycle and be green :-)

2/3 cup liquid castile soap
3 tsp vegetable glycerin
5 drops tea tree essential oil
20 drops lemon essential oil
1/3 cup water

Using the funnel, pour the soap, glycerin, oils and water into the bottle. Shake well to emulsify. Place the bottle next to your sink and use on hands or dishes. The fragrant formula also helps clean your counter tops.

Toilet Bowl blaster

Now first I must say I have scrubbed my toilet and then popped in a denture tablet overnight, IF your toilet is clean, this works, if it is old and stained, it does not help but smells nice.

1/2 cup baking soda
10 drops tea tree essential oil
1/2 cup distilled white vinegar

Pour the baking soda directly into the toilet bowl, add oil and then the vinegar, in that order. Let the water effervesce for a few minutes, then scrub the bowl with a toilet brush.
No need to buy any other cleaner, what you need is in your kitchen.

Tub and tile scrub

You will need a funnel, measuring cup, spoons , 32 oz spray bottle, rubber gloves and a sponge

2 tsp borax
1/2 tsp liquid castile soap
1/2 cup distilled white vinegar
3 cups hot water

Using the funnel pour the borax, soap and vinegar into the bottle, add the water. shake well to mix. Wear gloves and use the sponge to scrub, rinse well with water.

Antibacterial spray

use this to kill germs on sinks, vanities and toilet seats. White thyme oil can be expensive but it inhibits the growth of bacteria.

2 cups water
2 TBSP liquid castile soap
1 TBSP while thyme essential oil (amazon.com)
10 drops lavender essential oil

Using a funnel pour water, soap and oil into a spray bottle and let it sit for 20 minutes. Spray and wipe down surfaces to keep them free from germs.

Want to boost your cleaning power? Try out these double duty products that add some extra elbow grease where needed.

Club soda, add this to glass cleaner recipes for extra dirt lifting action, or dab it on a rag to make metal fixtures sparkle. It does not work if the club soda is flat.
Cream of tartar along with baking soda and lemon juice is a mildly abrasive grout cleaner.
Hydrogen peroxide to pinch hit for bleach on laundry stains. Wipe bathroom surfaces with white vinegar followed by a 3 to 1 water peroxide spray to kill germs as well.
Vodka, spritz this on ceramic bathroom tiles to remove pesky soap scum that cleaners didn't remove. Wait ten minutes and rinse clean.
Worcestershire sauce, mix this condiment into homemade furniture polish and apply to mask nicks and dents in dark finishes.
Soften fabrics with white vinegar, add it to the wash during the final rinse cycle instead of store bought fabric softener, NO your clothes will not smell funny and it works great. It also takes out odors and helps clean your machine.

HE friendly detergent
1/2 cup washing soda
/12 cup borax
1 bar natural soap, there are several on the market
grate this well
1/4 cup baking soda
15 drops lemon essential oil
Mix all these ingredients well and store in an air tight container. Shake or stir before using. Use 3 TBSP per load of laundry.

Stock your pantry with six staples: 
 *Baking soda: it is a great cleaner, deodorizer and cuts fatty acids in dirt/grease from clothing. Mix it with vinegar and lemon juice to lift soil and hard to clean items. It is gentle as a scouring and bleaching agent as well.
*Borax: sold in markets as a laundry booster, it cuts dirt, stops the growth of mold and mildew, softens water and deodorizes.
 *Castile soap: because it is made from olive oil, castile soap is purer and milder than most detergent based soaps.
 *Distilled white vinegar: this acid solution is powerful enough to dissolve mineral deposits from glass and acts as an adhesive solvent, a soap scum and stain remover, and a grease cutter, it even kills mold and mildew!
 *Lemon juice or rind, this fruit is a quick help. It is capable to deodorizer, de-grease and bleach.
 *Washing soda: this alkaline salt is touted for laundry use because it's an excellent water softener. It is also a powerful scourer, it is caustic, so wear gloves.

Heavenly scents:
*Grapefruit is an antibacterial disinfectant on its own; when paired with vinegar, it forms a mighty all purpose spray.
*Lavender, a well known insect repellent, has been shown to help treat people's skin conditions such as acne and eczema - which is why it's great for laundry.
* Lemon conditions wood, imparts shine, kills bacteria and is a mild astringent. Add a few drops to furniture polish and soap recipes.
* Tea tree, or Melaleuca alternifolia, is an extremely powerful fungicide. Mold and mildew don't stand a chance against it. It is also great for curing TOE fungus!
*White Thyme has been shown to stave off E.coli bacteria and is an all around antiseptic. Keep a thyme infused spray handy in the kitchen or bathroom.
* Eliminate streaks  and have crystal clear windows by wiping off cleanser with newspaper or paper coffee filters.

Floor wash

1 cup distilled white vinegar
1/2 cap full liquid castile soap
2 gallons warm water
Mix into a bucket and watch as the dirt if lifted off the floor while you mop. Let it air dry, no need to rinse.

Furniture polish

You will need a funnel, measuring cup and spoons, lidded 8 oz squirt bottle, microfiber cloth

2 TBSP olive oil
1/4 cup distilled white vinegar
1/4 tsp lemon oil or fresh lemon juice
Using the funnel pour the ingredients into the bottle. Shake well. Squirt onto a microfiber  cloth and wipe down wood furniture. Always go with the grain and evenly distribute polish. Remove any excess polish with a clean cloth.

Glass cleaner
3 cups water
2 TBSP rubbing alcohol
1/4 cup distilled white vinegar
5 drops lavender essential oil (optional for scent)
1/2 TBSP liquid castile soap
Pour into a spray bottle, shake well and spray on windows , wipe with a newspaper for streak free shine.

Wall spritz

Meant for use on painted walls, this spray has germ killing  capabilities and can remove a variety of marks including  crayon

2 TBSP borax
3 cups warm water
1/2 cup distilled white vinegar
6 drops grapefruit essential oil
1 tsp liquid castile soap
pour all into a spray bottle and shake to mix well. Use gloves when cleaning as it may irritate your hands. Lightly spray on walls and wipe with a damp clean sponge, rinsing as needed. Work from the bottom up so the streaks don't form.

All purpose grease cutter

This formula combines the antimicrobial and scouring powers of borax and washing soda - and good old soap and water-plus adds a lovely scent.

1 tsp washing soda
2 tsp borax
2 TBSP distilled white vinegar
2 1/2 cups hot water
5 drops lavender essential oil
7 drops lemon essential oil
1/4 cup liquid castile soap
Put on gloves, using a funnel pour ingredients (Except for soap)into a bottle large enough to hold 24 oz. Shake well and add soap, shake again. Spray on walls, counter tops and other surfaces. Wipe with a clean damp rag.

Any time you use a sponge, it can be cleaned by placing it in your dish washer with a load of dishes or in a microwave for 30 seconds to kill bacteria.

Veggie Tuna Mac (salad)

A year or two ago, I can't remember the way time flies, I saw a picture in a magazine of a lovely tuna pasta salad. I tried it and liked it but thought it needed a little something extra. I have made this salad several times and never make it the same, except for the spices. Go figure right, me changing things! ha

This time I started off my cleaning out the veggie bin in the fridge. A little of this a little of that and wa la! Clean bin AND a salad :-)

So, it is very simple and can be eaten warm or cold. This makes it the perfect lunch item or picnic/travel food.

With today's temperature over 100, I made this early yesterday and will enjoy it for lunch again today and possibly tomorrow.

Veggie Tuna Mac (salad)

2 cans of tuna, drained
1 1/2 cups of pasta(whichever style you prefer)
3 TBSP of mayo
garlic powder
McCormick's grilling steak seasoning
celery seed
onion powder
The amounts of the seasonings depends on the amount of salad you fix and how strong you like your flavors. I used maybe 1/2 to 1 tsp of each at the most.
Cook your pasta and drain well. Set aside to cool to room temperature.

Veggies: carrots, green onions, bell pepper, cucumber, squash, fresh peas, sweet corn, or whatever you have on hand. You can use celery and eliminate the celery seed just as you can use fresh garlic or diced onions and avoid those spices as well.

Place the veggies in a food processor to get a small chop or larger if you like. I like mine small in this salad.

Mix all ingredients together and serve warm or place in the fridge for several hours.

Serve as a side dish, a main dish, on a lettuce leaf, with crackers...I like to serve this with a cucumber salad, fresh sliced tomatoes and some multi-grain crackers. Serve watermelon, cantaloupe or a fruit salad for dessert and you have a meal fit for a hot summer day.

Monday Blues as in berries!

Oh yes, the Monday blue's. You know the feeling, starting another work week, chores from the weekend, home from vacation and back to reality...my Monday blue's consist of everyone else leaving for work and me being home alone. Not that I mind really, I get everything done with no one in the way, I upload pictures, edit and write without feeling guilty for not "being" there for someone but at the same time it is lonely. Do you get that? eh it may just be me.

So to combat my blue's, I made my own version of Bojangles Bo Berry biscuits. Let me tell ya, WOW were they good!

Monday Blue Biscuits

3 cups Bisquick or baking mix
1 cup + 2 TBSP milk
1 1/4 cup fresh blueberries
2 TBSP sugar

Once you have these items out, set your oven to 400 degrees, put 2 TBSP of butter into a cast iron skillet and place it in the oven.

Mix the baking mix and sugar, then add milk. Stir just until it is all blended, don't over mix it. Now fold in the blueberries. Let this sit for about 5 minutes.

Now that you have your mix, it should be loose but not runny, pour it into the hot pan. Spread it out and place into the oven for 20 minutes. It will come out all nice and golden brown.

Mix 1 TBSP of milk into 1 cup of powered sugar and pour on top of the biscuit.

Cut and serve while hot!


For supper last night I was not expecting anyone to be here until late. Well, wouldn't ya know it, EVERYONE showed up! ha ha SO...since I had not prepared anything, it was our go to meal that was fixed. Chicken and noodles, however, I did change it a bit. I added 2 TBSP of heavy cream, 1/2 tsp garlic powder, 1/4 tsp onion powder, 1/8 celery seed, 12 oz of homemade chicken stock. WOW I think I will keep it this way. It was so rich, creamy and delicious. My husband said "hey what did you do different?" Whatever it is, leave it alone"

Italian Night

First, let me say THANK YOU for those who voted yesterday, Sunday July 22, on the FFF link.
Again, I made the top three! Thanks to wonderful friends and followers like you!

Now on to the update, yesterday was Italian day at our house. I made a wonderful Italian Herb loaf, baked ravioli and a summer crunch salad. Oh My!! All found in my own little head :-)

The Italian loaf was easy, I put all the ingredients into my trusty bread machine, set it on French and 3:50 hours later, wa la! Bread, oh and what a bread!

When my husband took the first bite of ravioli he said "WOW, I will never eat the stuff out of the can again" ! WOO  HOO a big hit! There were NO left overs, but there was enough however, that we had lunch and dinner. So 2 meals for 4 adults and 1 cooking :-) pretty good if you ask me.

Italian Herb Loaf

In a bread machine this makes a 1.5 lb loaf

1 cup water + 2 TBSP 80degrees
2 TBSP good EVOO (this added a richness that regular oil does not)
3 TBSP sugar
1 1/2 tsp sea salt
2 TBSP grated Parmesan cheese (in the can found in the refrigerator section of the grocery store)
3 1/4 cups bread flour
1 heaping TBSP Italian seasoning
Red Star active dry yeast, 1 pkg

Set to FRENCH program

Bake Ravioli

1 pkg frozen 4 cheese ravioli, mine was "Fresh Italian Ravioli" from Aldi
1 jar garden chunky spaghetti sauce
1 lb lean ground beef
1 TBSP Italian seasoning
1/2 cup ricotta cheese
1/4 cup Parmesan cheese
1 cup shredded Italian cheese mix
13 x 9 pan

Cook the meat with the Italian seasoning, stir in the jar of sauce, add the ricotta cheese and mix well. Set this aside. Boil a pot of water, add salt 1 tsp, then once the water boils, add the ravioli. They don't take long, once they float and the center is soft, they are done. Be gentle with them. Take the 13 x 9 pan, sprinkle in some Parmesan cheese, place enough ravioli on the bottom to cover, now take and sprinkle some of the Italian shredded cheese over this. Mix the remaining ravioli in the sauce, gently. Pour over the ravioli in the pan. Top with the remaining Parmesan and shredded cheese. Broil for 5 minutes. Done!

To top off this wonderful meal, I added a salad, I'm calling it summer crunch salad. Basically, I cleaned out the fridge!

Summer Crunch Salad

1/2 head of Romaine lettuce
1/2 pint blueberries
1 ripe pear
1/3 cup dried berry blend
2 TBSP pumpkin seeds, roasted
1 medium cucumber, peeled and sliced
3 TBSP poppy seed dressing

Mix well and serve

I got to thinking about this salad. I could do a Fall crunch as well. Replace the blueberries, pumpkin seeds and pear, with apple, cranberries and walnuts. Yum

Teriyaki chicken made quick and easy

So, on a Friday night with storms a brewing, I decided on a quick easy meal, Teriyaki Chicken. Now, you might not think that is quick and easy, but if you do it this way it is.
First, earlier in the day I precooked 2 large whole boneless skinless chicken breast.That way when it came time to cook supper it was as simple as tossing it all into a pot and setting the timer. Ah yes, easy.
I had not done the Teriyaki chicken this way before but it was simple, quick and tasty.

Teriyaki Chicken

2 large whole chicken breast, boneless and skinless, precooked
1 1/2 cups rice
3 1/4 cups water
4 TBSP ketchup
1/2 cup soy sauce
1/3 cup brown sugar

In a large pot combine your mix, water, ketchup, soy and brown sugar. Stir well and add your rice. Next break apart the chicken breast and add. Set your timer for 20 minutes, cover, cook on low-med. heat. When the rice is almost done, add in your favorite frozen or fresh veggie. I kept it simple and added a cup of fresh broccoli chopped.
Wa-la done.

At Long Last

This was what my husband said about supper last night, At Long Last! He has been waiting on this for over a week. I had other things planned, dishes to try, heat to beat and so on. I finally succumbed to the pressure of his stomach. These were a hit! I am glad, since he had waited so 'patiently' for them, that he really loved them. He was also pleased with the roasted veggies. These I have done numerous times but never thought of fixing them in the crock pot.

I did however change the recipe for the peppers, of course (wink) you know by now that I don't do well with following directions.

But Thank You to Divalicious Dishes for this recipe and idea. I have done stuffed peppers many ways but her looks so yummy. However, in my haste I did leave out a few things and change a few. Sooo, you can check out her recipe but here is what I did:

Mexican Stuffed Peppers

1 lb lean ground beef
1/3 cup water
2 TBSP taco seasoning
1 cup fresh white sweet corn
1 can pinto beans, rinsed and drained
4 large sweet bell peppers, cut in half
1 cup Mexican cheese, shredded
1 cup rice
2 cup beef broth
1 cups water
1 TBSP dried cilantro

Cook the beef with the water and taco seasoning, breaking up the meat well. Add the beans and corn, stir and turn off. In a medium sauce pan cook the rice in broth and water adding the cilantro. Cook until done. 
Mix the rice with the meat mixture.
Stuff into peppers and steam. I chose to steam them versus heating up the kitchen with the oven. Once the peppers are tender, top with cheese and allow this to melt.
Serve immediately

I have health issues and sometimes just want to lay off the meat, so I also prepared a crock pot full of roasted veggies. I normally do these in the oven as well but chose to give my faithful crock pot a crack at it. I must say it worked out well, I will not cook them as long next time as some veggies turned a little mushy, but tasty all the same. This recipe I normally fix in a 13x9 pan and roast for 45 minutes if you would like to try the original way.

Crock Pot Roasted Veggies

1 large sweet potato
3 small red potatoes and 1 large white(this was what I had)
1/2 bag of baby carrots
1 can chick peas, rinsed and drained
1 red onion chopped
2 small squash
1 med. zucchini
2 TBSP brown sugar
3 TBSP olive oil
1 TBSP Rosemary

Stir the oil, brown sugar and rosemary together and place in the crock pot. Dice and chop all your vegetables. Dump them into the pot and stir well. Set on high for 4 hours. Every hour give a good stir.

When I do this in the oven, all veggies go into a roasting pan or 13 x 9 and the brown sugar is sprinkled on top, the rosemary is sprinkled on top and the oil is drizzled over. This roast for 45 minutes. Stir at the half way mark.

Crispy Fried Shrimp with spicy Asian sauce

So, what caught your attention the most? Crispy fried shrimp or spicy Asian sauce? For me it was the crispy fried shrimp and then for my husband it was the sauce.

Let me tell you what, these little buggers are light, crispy, spicy and delightful! Each bite and your taste buds do a happy dance.

I saw the recipe on Pinterest and followed it to the original website. I did change the amounts for the sauce due to tasting and thinking for me it needed some adjustments, but otherwise I followed the recipe. I also used more shrimp than the recipe called for because I have 3 adult males in the house who LOVE to eat and just will not be satisfied with a 'few' bites of food. They must have a 'plateful'.

My husband said, "What is in this sauce?" I said I don't think you want to know, because for me (I am not a mayo person) it sounded gross. He laughed and said "I don't care what it is, it taste so good I could take a bath in it." LOL he is so funny sometimes! He kept eating and saying "man these are good". When the boys came home, the devoured the entire plate! There should have been enough for 4 people, not 2! Oh well, at least I know they enjoyed it.

Crispy Fried Shrimp with Spicy Asian Chili Sauce

Crispy Fried Shrimp with Spicy Asian Sauce
1/2 cup Duke's Mayo
1/2 cup sweet n' spicy chili sauce
2 tsp honey

Salad and baked potato as our sides

oil for frying
2 eggs, beaten
3/4 cup flour
1/2 cup cornstarch
1 tsp fresh cracked black pepper
2 lb shrimp, medium size

Mix the sauce and set it aside.
Beat the egg in a bowl
Mix flour, cornstarch and pepper in a bowl/plate
Dip the shrimp in the flour, then egg, then flour and fry.
Drain on a paper towel.
Toss the shrimp in the sauce and serve.

Taco, Taco, oh, how I love you!

Tacos! I love tacos, soft, crunchy, homemade, chicken, beef, veggie, I don't care. I just love tacos!

Last night I had my mind wrapped around a wonderful taco salad, but then to my surprise...someone had eaten the chips. sigh...

OK, no problem, readjust my mind and plan. Tacos, yes, I had flour tortillas so it was no big deal.

I do mine a different way every time. I don't know, it is just the randomness in me I guess, ADD or something. Sometimes I used canned tomatoes, or fresh, salsa or not, beans or re-fried beans, saffron rice or no rice.

Here is the result of last night.

Soft Tacos

4 small ears of corn (white and fresh out of the garden)
cut off the cob
1 large tomato diced
1 lb lean ground beef
taco seasoning 2 TBSP
1 can black beans rinsed and drained
1 cup finely shredded fiesta blend cheese
romaine lettuce julianned
4 green onions thinly sliced
1/3 cup water ( I add the water because it helps break the meat down into a more fine mixture)

First pour the water into a skillet, add the taco seasoning  and chop with Pampered Chef Mix 'n Chop . I LOVE this tool, I use it almost everyday. Add in the green onions and cook till done. Rinse and drain the beans, add to the skillet along with the corn. Stir and simmer until heated through.
Serve in a soft tortilla shell with cheese, lettuce and tomato. I topped it off with a little ranch dressing,  I don't like sour cream by itself. You can add guacamole, sour cream, salsa or whatever else you may like.

Creamy Lime Bars

Oh my! How could I have forgotten? Dessert!!

Last night was one of our favorites, yes I know, I say that about all the desserts. But this is a summer favorite, how's that?

This recipe needs to be made early in the day so that it can sit in the fridge all day or overnight for the best 'setting' and marrying of flavors. Trust me, if you love cool, refreshing, lime, summery desserts, you most definitely want to give this a try.


Crock Pot Lemon Chicken

Terrific Tuesday morning! Well, at least that is what I'm trying to tell myself. For you see, I am not feeling so great. I have Crohn's, Fibromyalgia and Lupus just to name a few. Today is a high pain day so forgive me if I ramble or don't make sense. I'll come back later and edit :-)

Last night was night of fresh and easy. Fresh out of the garden corn, squash and zucchini. Easy, crock pot meal.

For the corn I boiled a pot of water and poured it over the corn in a stainless steel pot, covered it and let it sit. I read somewhere that this prevents over cooking. It works great, second time I've done it. Perfect corn!

For the squash and zucchini I used my Pampered Chef julianne peeler. It is old but still works great. So I julianned the vegetables and thinly sliced an onion. These were all thrown into a skillet with a tablespoon or so of grape-seed oil and fresh cracked pepper. Sauteed up and done, easy peasy.

Last the chicken, that was started hours before we ate.

Crock Pot Lemon Chicken

1 whole chicken cut up
1 package Italian dry dressing mix
2 TBSP butter
2 lemons, juiced

Place the butter in the bottom of the crock pot. Set your heat on high for 4-6 hours. Next place the chicken, sprinkle the seasoning on top and squirt the juice over the chicken. Place the lid on and let it set. Wonderful flavor and aroma!

Redneck Dinner anyone?

Well, now, let's just hit straight from the hip. Redneck dinner, what does that thought invoke in your mind? Hot dogs on a stick, beer soaked chicken, burnt burgers?
How about a turtle burger? Yep, a turtle. Not a real turtle of course, but a mock turtle. When I saw these online I knew I had to make them. Not for me, but for my guys.
Oh My Gosh, my husband said "and you've not made these yet why?" when I showed him the picture. ha ha

To go along with this 'meat feast'  I made a wonderful light poppy seed slaw, a Fully loaded bake potato salad and sliced up some garden ripe tomatoes. Now mind you,I did not partake of the turtle eating, only in the making and baking.

The recipe on line, does not give you the correct amounts of food needed for these turtles. A pound of bacon, 9 hot dogs, 3 buns and almost 2 pounds of good lean ground beef went into the makings of just 3, yes 3 turtle burgers. ALSO, they are very hard to keep together. So there were a lot of toothpicks involved as well. I felt like a world class heart surgeon while making these and that's funny because this is an artery clotting meal!

Turtle Burgers
I used:
2 lbs lean ground beef
1/4 cup steak sauce
1 egg
1 slice homemade honey wheat bread, crumbled
pepper, fresh cracked black

This was for the burgers.

Plus a pound of bacon and 9 hot dogs, cut in half and cut for feet, head and tail sections of the 'turtle'. You need to weave the bacon.

Next make your burgers and place on the weave, stick the hot dogs in to form legs, head and tail, then wrap the bacon around. This was a trick and took me a minute to figure it out.

Next is your turtle on a bun! ha ha I know I'm sort of sick and twisted. My guys are big eaters and they each were 'stuffed' after consuming this plate of food.
Poppy seed cole slaw was super easy. I took a bag of cabbage with carrots, diced up 1/2 of a green bell pepper and added 2 sliced green onions. The cole slaw mix was a little big for my taste so I chopped it up with my collard chopper. Then 1/2 of a bottle of Kraft's new anywhere dressing/dip Poppy seed. Mixed it well and done. I love the taste, the boys loved it but hubby not so much.

Last we had the Loaded baked potato salad. YUM I could make a meal off of this all by itself. Loved it.

Loaded Baked potato salad
6 medium potatoes diced and boiled, then cooled off
1/2 cup sour cream
1/4 cup mayo
1/2 cup shredded cheese
8 slices of bacon cooked crispy and chopped fine
1 green onion sliced thin for garnish, you could use chives but I did not have any and did not want to make another store run.
Mix the mayo and sour cream, add black pepper, bacon and cheese, stir in potatoes and top with green onions. We ate this at room temperature and loved it. The cold leftovers were good as well.

However, I have no idea if I'm doing it right! ha-ha

My recipe submitted is: Sock It To Me cake

Sock It To Me Cake

3/4 cup softened butter, unsalted
4 eggs
2 1/2 cups flour
2 1/2 tsp baking powder (I use the kind without aluminum)
1/2 tsp salt
2 cups sugar
1 1/2 tsp vanilla
1 cup sour cream
1/3 cup all natural applesauce (I use this instead of oil)
1/4 cup water

Cream your eggs and butter, then slowly add the sour cream, applesauce, water, vanilla. Once this is done, sift together the dry ingredients and add into the creamed mix. Reserve 2 TBSP of the dry mix for the filling.

You should prepare a bundt cake pan, spray with baking spray or grease and flour the pan well. Preheat your oven to 375 degrees.

2 TBSP dry cake mix
2 TBSP brown sugar
1 TBSP cinnamon
1 cup chopped pecans

Pour 2/3 of the mix into the bundt. Add in your filling on top of the batter. Now finish pouring the batter on top of  the filling.

Bake for 45-55 minutes depending on your oven.

Cool in the pan for 10 minutes then remove and cool on a rack.

Glaze the cake with : 1 cup powdered sugar and 2 TBSP milk mixed. Pour over cake.
