Meaty Veggie Soup and #FOTW

A few weeks ago we had temperatures in the TEENS! YES you read that right. Teens! Saturday morning I woke up to 19! So what did I do? Stayed in where it was warm and made a big pot of homemade vegetable soup but since I added meat to it, that made it hearty, stick to your ribs and delicious! I ate it for a week.
Why? Because I don't know how to make a "little" bit of soup. That's okay. I loved it and gladly ate it.

Meaty Veggie Soup
1 can cream of corn 
1 can regular corn, rinsed and drained
1 can garden peas, rinsed and drained
1 can green beans, rinsed and drained
3 cans of water, 48 oz
1 large can, 32 oz, tomato puree
1 lb lean ground beef cooked and drained
1 tsp paprika
1 tsp onion powder
1 tsp parsley flakes
1/2 tsp chili powder
1 tsp fresh cracked pepper
Cook and drain the ground beef, rinse and drain the cans of vegetables or you could use 1 cup of each vegetable in frozen form. Combine all in a large stock pot. Allow to simmer for 30-60 minutes. Serve with fresh bread, crackers or even croutons.

We had a tremendously busy Christmas, a full house, lots of driving, shopping and cleaning. The kids had a great time. My tree survived two toddlers and my kitty kept his lives. I survived driving to DE and back twice with a van full of kids. I'd say it was a success.
The prediction was for 4-6 inches of snow, a rare thing in our area. My granddaughter LMSP (Little Miss Sassy Pants) woke up all excited, but no snow. As the day wore on, she became very impatient. Then she wanted to know just WHY she could not go outside dressed this way! LOL
Headed back to the airport this truck pulled out in front of me. I looked up and was like, what the heck is that??!! A ghastly looking head on a traffic cone in the back of the truck! Okay if it were October, I'd say it was for Halloween but since it was the end of December I could not fathom WHY they had this. Oh well, I managed to get the best shot I could.
My precious little man is so funny. His LaLa (grandmother) posted this on Facebook.

  1. Good thing it was you driving behind that truck and not me, I probably would have driven right off the road. And OH MY. LMSP, she's hysterical!
    Gotta try that soup, winter is in full freezing mode here.

  2. yeah, that is freaky to drive behind. OH MY that LMSP, she cracks me up, but yeah I get upset when I think tehre will be a snow day and it's a bust.

  4. LMSP is precious! What a great shot. I love this soup. I almost feel guilty not using beef broth, but nothing is easier than water. My mom only bought a can of chicken broth at Thanksgiving! She made delicious soups and sauces and fed 6 hungry people hearty meals. Thanks for sharing.
