Strawberry Lime Daiquiri Cake - FF and It's A Heat Wave

So much has been going on. Potato May just turned 18 and on June 11th he will
graduate. Hard to believe but it's true. Last year I asked him what type of cake he wanted and I made him a strawberry cake with fresh whipped banana frosting topped with silver glitter edible sprinkles and animal print candles. Yes, he is a little "far out" and absolutely loved it. This year he said he still wanted strawberry but not sure what else. So, I made him a strawberry lime daiquiri cake with lime fluffy frosting. I went a little crazy on the frosting but DANG it was good!! Potato May LOVED it and you'll see in the second photo, he was smelling it. He's so funny, he will smell stuff before eating it. While I'm cooking he drives me nuts, he always come in and wants to know if he can open the lid and smell.
If you've been around long, you'll be wondering just what in the Sam Hill has gotten into me? I know, seems like everything I've baked lately has had alcohol in it. Oh well, it's been REALLY good! Thankfully like the amaretto coke chocolate cake, W loved this one too. I'm on a roll.
Strawberry Lime Daiquiri Cake
1 box - Duncan Hines while cake mix
10 oz Strawberry Daiquiri Seagrams cooler
5-6 fresh strawberries, pureed
eggs, oil according to the box
1 lime, juiced and zested
1 can whipped cream white fluffy frosting
Prepare the cake according to the box,except adding the wine cooler instead of water, add the lime zest,also puree the strawberries and add in. Spray a bundt pan and pour the batter in, bake for the allotted time. Allow the cake to cool and invert onto a cake pan. Take the frosting out of the can and stir in the lime juice. Place into a zip top bag and clip the end, squeeze over the cake.

Cookie Cupcakes with Buttercream Frosting AND FOTW May

It's that time... Fly On The Wall. Yep, you get a peek into my life, home and activities. Plus if you scroll down you can peek into the lives of my blogging friends who are participating in this.
Let's start.....

Well my honey found my blog. I guess my hinting and commenting that he had not read any of it got to him. AND what post was up when he found it?? Yep, Fly On The Wall. Oh dear. My own fault. He said "WHY would you write about THAT??" I said, "why not it was funny." He shakes his head and walks off. Hmm 
may be the last time he reads it.

Look at these babies! Cookies! Cupcakes! Chocolate oh my!
We are driving down the road and W is talking about something, gives an example and I said "oh like..." and he looks at me all weird. I said "what". He says "Man I love you but you are so strange some times". I laughed, "yep and now that you know it, it's too late to back out". LOL now he's really shaking his head.

Super Easy Recipe!
1 pkg M&M Chocolate Chip cookies
1 yellow cake mix, butter
1 container of buttercream frosting
ingredients for the cake mix
cupcake liners
baking spray
muffin tin, 12
Preheat your oven to 350 degrees

Place the liners in the muffin tin, spray with baking spray (yes the liners) and drop a cookie in the bottom. Now take the remaining cookies and crush by hand or with a food processor. Prepare you cake mix according to the directions. Next add the crushed cookies. Now pour over the cookie. Bake for the time listed on the box for cupcakes. Allow to cool and frost.
YES I used "prepackaged" ingredients because I was in the mood for sweets and just didn't feel like baking cookies for the cupcakes first, so I used a mix as well. Lazy I know but they were REALLY good!

WOOT WOOT Potato May brought up his grades! His progress report last time was 53, 84, 78, 90. This time it is 84, 88, 85, 97. That's right! He CAN do this, he's just lazy. Sorry kid if you're reading this, you know it's true.

Last month Karen shared that she was almost in an accident due to trying to take a photo of a lady driving and brushing her teeth. Well, the very day that I read that, I had brushed my teeth while driving on the way to work. I know, it's crazy, the first time I've ever done that but it was easy and not distracting. This is what I used...
LMSP Little Miss Sassy Pants aka my grand daughter seems to think she is part spider these days. My DIL sends me this photo and says "I do not see this ending well."
My daughter in law posted on FB:
LMSP: What are you making?
DIL: Daddy's lunch!
LMSP: Why? Can't HE make it?
DIL: well yes, BUT, I love him, so I prepare it for him. Just like I make your food, cause I love you!
LMSP: (very matter-of-fact) Um, that's different cause I can't cook! (hand on hips)
LMSP is growing up fast. She has 2 bottom permanent teeth and now she is missing two top teeth!

This is what Potato May does in class. His explanation is: he doesn't need the class to graduate, he's the smartest one in the class to include the teacher and he was bored. sigh...
Potato May is graduating in June and has been working on several senior projects. With all the school work, it has increased his appetite. Yes my cupboards are bare.
I was visiting my uncle and his speech therapist came by, she worked with him for over an hour. He was so funny. My aunt and I sat in the living room while they sat in the dining room. He would say words and we had to repeat what he said. During the therapy time he got frustrated and if my aunt said a word that was not correct he would stick his tongue out at her, she could not see him but I could. I was laughing.
When I went to leave he said " Dawn needs to leave cause since she got here I've been hot" I started laughing , my aunt said "REALLY?! So do you want me to leave and her to stay?" He looked at her funny and said "No you stay, she can go". We were all laughing.
Back story, my uncle (they have been married 5 years together 15) said to me MANY times, if I met you first and was 20 years younger...
He's not my type. LOL but I do love the man and we've had many good laughs.

Potato May comes in the room and says "isn't this cute. I'm reading a book and the little girl calls it "hot spice" but I'm not sure what it is. When the nurse goes to see the dying. I said "You mean, hospice?" He says "yeah, that's it. I like Hot Spice better," walks back out.

Mother's Day I'm at my moms and LMSP says,
"Let me put on my Doc McStuffin coat and then you tell me what hurts so I can give you a eye pill"
I said "a what?"
She says , "an eye pill, you know I stick a needle in your arm and you are all better."
I said "a shot?"
My DIL says "she means an IV"

ROTFL Oh okay!
LMSP eye rolling says, " I gave Daddy one earlier and it fixed his brain"
I said, "Girl if you can fix the male brain with an IV you will be rich!"
She says "huh?"
We all laugh, well, except my son and he says "Oh  ha ha funny ladies."
I smiled and said "Thank you."

LMSP goes into the bedroom and comes out, hands behind her back snickering. I said "whatcha doing?" she smiles, "I got you this. She hands me some gold plastic beads and a sea shell. I said, "oh thank you, did you go to the beach?" She looks at me, shakes her head and said "NO I was in the BED ROOOM Silly". Good grief! This child.
Then very sweetly she whispers, "I'm a kid, got no money or job, so I got these from the room to give you for Mother's Day." OMGosh...okay after that I can deal with her sarcasm!

I had just finished dinner and W was asking about food. I needed to heat up the veggies and then we'd eat. The exchange went like this:
Me:As soon as the peas and corn heat up we'll eat.
W:WTF ? As soon as he pees in the floor and heats up we'll eat.
Me: WHAT? NO NO as soon as the PEAS AND CORN heat up we'll eat.
W: OH, good cause the other WAS NOT appealing.

Lemon Garlic Rosemary Chicken Bake with capers and potatoes

I'm trying so hard to make delicious low cal and low fat recipes that W will eat. This is a trick considering he likes, no loves, no demands (in a nice way) wings, pizza, burgers, spaghetti, rice, potatoes, fries or mac 'n' cheese. I see that look on your face, you're saying "what no veggies?" unless it is corn or collard greens, no veggies. Oh and corn is a starch, not a vegetable.
Thankfully Potato May will eat almost anything. So I have to prepare myself salads on a regular basis and I do prepare other vegetables for us. I will also prepare something for myself when they are out and I KNOW they won't eat it. Like a nice piece of salmon and some citrus slaw for example.

Surprisingly W ate this, after he scraped off the capers (because they are "green") LOL but the chicken and potatoes were deliciously packed with flavor.


Easy recipe:
roasting pan
cooking spray or a tsp of coconut oil to rub over the pan
4 legs
4 thighs
a small jar of capers, drained
a lemon, 2 slices, juice the halves
4-6 medium red potatoes cut into chunks
10 fresh cloves crushed garlic
2 TBSP rosemary
fresh cracked black pepper
1/3 cup olive oil
Preheat oven to 450 degrees. Stir together the olive oil, lemon juice, capers, s slices of lemon, garlic, rosemary and pepper do this is a large bowl or gallon zip top bag, add in the chicken and mix well. Rub to coat.
Dump on the greased roasting pan, toss in the potatoes and bake for 45 minutes. Allow to cool for 5 minutes and serve with fresh baked bread or rolls and a nice salad.

Pig on Pig Take 2- Bacon Wrapped Pork Tenderloin AND UYW

Today is #UseYourWords, a post where I am given 5-6 words or phrases randomly by another blogger and I have to use them in a story, real or fiction. For over two years now I have been using those words in an ongoing love story. #PearlAndWilliam then to shake things up I added a modern twist by giving you #CindyAndDillion.
Before we get to the post, here is today's recipe!
Yes, you read that correctly. Pig on Pig Take 2. Not sure what I'm talking about? Did you miss these Awesome chops? Bacon wrapped pork chops roasted to perfection with BBQ sauce to boot! MAN they were good.
Bacon Wrapped Pork Tenderloin
2 small pork tenderloins
2 pkgs seasoning, Sazon Goya Con Azafran
1 lb bacon, your favorite brand
roasting rack
Spray the rack with cooking spray so the bacon does not stick. Rub the tenderloins with the seasoning. Wrap with bacon. Place on the rack and bake/roast for 45 minutes at 325 degrees. Check to see if the internal temperature is at least 165 for doneness. 
Allow it to rest for 5 minutes, slice and enjoy!

This day we rejoice in welcoming another wee one into the world. Our Father is so faithful in seeing Cousin Sarah through a tough delivery. The babe is strong and healthy. There are five children for Sarah and Abe now, four for us. So many blessings.
Cindy put down the diary and looked out the window at the garden, the iron fence was looking a little worse for wears and there was some trash in the yard that had blown over from the neighbors. She took a deep breath and could hear the beach music drifting down the hall. It was getting warm so she stepped into the foyer to remove her thermal shirt. She was glad the cool morning was warming up. Dillion would be there soon and she was ready to see him.
To cool off, she wandered into the sun-room and picked up the diary again. Getting comfortable she picked up where she left off.

Such a lovely evening we had. Visited with the new wee one and blushed as I glanced at William. Feeling that desire to have another but no words are needed. He knows me so well, he winked and smiled.
Looking at the calendar it is so hard to believe that only seven short years ago I came to the farm to help out Cousin Sarah, never knowing I would find the man of my dreams and a life I could never have dreamed of. Ever so thankful.

Cindy put the diary down and smiled. Oh she knew how Pearl felt. She was living a life she never would have dreamed of. Dillion was all she ever wanted but was afraid she'd never find.

Flower or Flour; Power or Powder - A Poetry Challenge

A new month,
a new theme,
but the same old bad poetry.
BBQ Chicken Cheesy Quesadilla
2 flour tortillas
left over chicken,shredded
shredded cheese
a pad of butter and a skillet
Drop a dot of butter in a skillet, on the stove with medium heat. Place a flour tortilla in the skillet. Shredded chicken and a tablespoon or two of your favorite BBQ sauce, mix well and place on the tortilla. Sprinkle with cheese. Top with a second tortilla, brown one side, flip and repeat. Cut into quarters and enjoy! A super easy recipe that uses leftovers. Lunch, snack or dinner for one. You can grill yours less if you like, I enjoy it crispy.

When you do not speak correctly,
people may not know what you mean.
Did you say flower or flour?
Did you say power or powder?
Window or winder?
Picture or pitcher?
We have become lazy speakers
and yet we get upset when we have to repeat ourselves.
So when I'm thinking,
I speak correctly.
When I'm in a hurry,
it may be slurry.
The lines become blurry
but let's be assured.
That if I'm in the kitchen,
I want FLOUR.
When it is my birthday,
I want a flower.
I may need some powder as in sugar or after a bath.
But I love power
so I may keep you guessing just what this is all about.

A is for Apple, T is for Teacher Appreciation - #BlogWithFriends

Apple Amaretto Almond Streusel Topped Muffins!!!
A is for apple, A is for almonds, A is for amaretto! And T is for Teacher Appreciation. May is teacher appreciation and we decided that this would be our theme for May with our #BlogWithFriends group post.
Many years ago I was a teacher's helper, assistant, class mom and president of the PTA. My plate was a little full and I loved every minute of it. Fast forward 2 years and I was home-schooling my boys, tutoring 2 others, running a support group, working with the state, running a co-op, volunteering for several organizations and our church, once again my plate was over running and I loved every minute of it.
Working so closely with the teachers as the PTA president I can tell you that they loved, yes LOVED, teacher appreciation. I went out of my way to listen to our teachers and provide them with a luncheon and gifts that truly spoke to them of our love and appreciation for them. They told me no one had ever done that for them. I was shocked. WHY would the school, the PTA and parents NOT show their appreciation?
When I asked this question at a PTA meeting I was met with "It's their job" and "They get paid". WOW do you have ANY idea just how LITTLE a teacher makes in NC?? Straight out of college a first year teacher can expect $22-28k a year. Now you may think that sounds like a lot, but remember they supply their rooms with activity centers, books, games, rugs, chairs, cleaning supplies and the list goes on and on. Break that down and you will quickly realize that their salary is spread very thinly.
As a mom and former (my boys are grown and graduated) home-school mom, I can tell you being appreciated is rare and wonderful. My support group parents were appreciative and were quick to thank me for my efforts.
I tried every few months to thank my boys Sunday School teachers, youth leaders and anyone who taught them like piano, guitar, football, etc...they always seemed shocked but were always pleased.
As the end of the school year ends, the kids become restless and the teachers are tired. With that in mind, I made these delicious muffins. I know many of my teacher friends would LOVE these. Apple, Almonds and Amaretto! Oh yeah baby! You could make them without the booze,but it's only 2 tablespoons and the flavor is great. Plus after a long day, week or year in the classroom, we all need a little booze :)

Cooking spray and muffin liners 12
all-purpose flour 1 1/2 cups
1/2 teaspoon baking powder
1/4 teaspoon salt
1/4 teaspoon baking soda
3/4 cup sugar
1/4 cup whipped cream cheese, softened
1/4 cup butter, softened
2 tablespoons amaretto (OR almond extract)
1 teaspoon vanilla extract
large egg
1/2 cup plain Greek yogurt
1/4 cup almond milk (or you could use 2% or skim milk)
3/4 cup finely chopped Gala apple (1 medium apple)
1 tablespoon all-purpose flour (to toss the apple in)
STREUSEL:
2 tablespoons all-purpose flour
2 tablespoons brown sugar
1/4 teaspoon ground cinnamon
2 tablespoons butter, chilled
2 tablespoons chopped almonds
GLAZE:
1 cup powdered sugar
3 tsp almond milk
1 tsp amaretto
1. Preheat oven to 350°.
2. Place muffin cup liners in 12 muffin cups then spray with baking spray.
3. Weigh or lightly spoon 1 1/2 cup flour into dry measuring cup; level with a knife. Combine flour, baking powder, salt, and baking soda in a small bowl, stirring with a whisk. Combine granulated sugar, cream cheese, and 1/4 cup butter in a large bowl; beat with a mixer at high speed until well blended. Add amaretto, vanilla, and egg to sugar mixture; beat with a mixer at medium speed until well blended. Combine Greek yogurt and 1/4 cup milk in a small bowl; stir with a whisk until well blended. Combine apple and 1 tablespoon flour in a small bowl; toss well.
4. Add flour mixture and Greek yogurt mixture alternately to sugar mixture, beginning and ending with flour mixture. Beat just until blended. Fold in apple mixture. Divide batter evenly among muffin cups.
5. To prepare the streusel, combine 2 tablespoons flour, brown sugar, and ground cinnamon in a small bowl. Cut in 2 tablespoons butter with a pastry blender or fork until mixture resembles coarse meal; stir in almonds. Sprinkle streusel evenly over muffins. Bake at 350° for 27 minutes or until a wooden pick inserted in center comes out clean. Cool in pan for 15 minutes on a wire rack, and remove from pan.
6. Glaze, combine powdered sugar, milk and amaretto in a small bowl, stirring with a whisk. Drizzle glaze over muffins.
