Hit and Run! Pineapple Upside Down Bundt

Hoover aka Potato May or Travi, asked me one day if I had ever made a pineapple upside down cake. I said of course and from scratch. I showed him  THIS POST
He said "Dawn it's my favorite, you need to make me one."
He REALLY liked it, gone in 7 bites! That's a teenage boy for ya, not even sure he knew what it tasted like that fast but he said it was good.
I saw a photo on Facebook of a bundt version and said OH YES he will love this. I have also in the past made individual cakes/cupcakes with the pineapple in the bottom and a cherry of course. But when you do that, you need to be careful and not over bake them. I hate dry crumbly cake my preference is moist. No one wants to have to drink a glass of milk, water, tea or coffee with each bite. Yuck

Now let me say this, when I hear the word "bundt" I can not help myself...I hear the Mom of "My Big Fat Greek Wedding" going, "butt, bun, budntttt? OH it's a cake"  It cracks me up!
Okay, back on track to the recipe.
You can use my homemade recipe for the cake portion or purchase a cake mix. When I purchase a cake mix, I prefer the pineapple supreme mix from Duncan Hines. No this is not a paid advertisement or endorsement, just my preferred brand for this type of cake.
Tip number 1 when using a cake mix that calls for water, drain the pineapple and use the juice in place of the water, it will add flavor and no waste. I'm frugal.
Tip number 2 if the box calls for butter or eggs, make sure they are at room temperature, this will eliminate the butter lumping up in the mix. 
Tip number 3 I also beat my eggs with the water, oil and whatever other liquid is called for, then add it all in at once. The blending process is smoother this way.
Due to this being a spur of the moment idea, I decided to use a box mix this time. I purchased the pineapple supreme mix, pineapple rings and a jar of cherries. I cut the rings in half and once the batter was mixed, I sprayed my bundt pan with baking spray. I placed a cherry in one curve and a slice in the next until I had gone around the circle. In order to get the slices to stand I had to pour some of the batter over the cherries and then place the rings. It worked wonderfully. Then pouring the remaining batter over the rings, I shook the pan slightly to eliminate bubbles and air pockets. Next it went into the oven. I followed the baking time on the box and well there you have it. I considering making a glaze to drizzle over the top but decided not to. Next time I think I will. Potato May loved it! The cake was gone in just a few days. It was his breakfast, after school snack and dessert.

Kid Dream Wich, FF and WTHeck

Yep, that's right. A kid dream wich. What the heck is that you ask. Well, it's a kids dream in sandwich form. Okay okay you caught me. I don't have "kids" at home anymore but I do have Hoover and at almost 18 the "kid" has some weird ideas of food. He will crush Doritos and put them in and on EVERYthing! So of course when I made my famous Doritos Casserole, he flipped his lid. Went total ga ga and swears "it is the perfect trifecta of foods!" Yes, these were his words. He can be a little mellow dramatic at times. With that being said, I wanted something different one morning. I was way too hungry, wanted something filling, sweet and packed with protein. I also wanted it NOW! Did I mention I was hungry? Picture the Snickers commercials, where Marsha just isn't herself. Haven't seen it?? What?! Here ya go:
So anyway, I'm in the kitchen looking around and I thought, "hmm a grilled cheese, nah, a peanutbutter and jelly, well duh I can't eat peanutbutter, but I do have WOWbutter. Hey I wonder what it taste like grilled? Do I want jelly or no?" I'm looking in the cabinet, grab my WOWbutter and then I see it! The hazelnut chocolate spread! YES!! Oh wait, what's this? A half jar of marshmallow whip?! OMGosh! That's it! So I hurry into the kitchen, grab my trusty skillet, butter and bread. I'm off to the races. Yes I whip that sandwich together, get the skillet hot but not too hot, smear butter on the bread, the WOWbutter, hazelnutspread and fluff on, smear butter on the other slice, slap them together, grill and BAM! THIS is what you get!! A yummy, gooey, not horrible but not healthy either sandwich that I made Hoover jealous over.
Yes, I know it's messy, but it was really good and no I had never put fluff on a sandwich before and NOW I get why people do it! One of my sons asked me, "Mom did you start smoking pot?" I was like "NO WHY in the world would you ask me such a thing?" He said "because this is the type of stuff stoners eat" Oh...dang. That's what happens when you're out of the loop, you don't know these things. LOL

Jennie-O Easter Side Dish "Bacon" wrapped asparagus

 If your guys are like mine, they LOVE and I mean LOVE bacon! But ladies let's be honest. It is not healthy to eat bacon everyday due to the fat. Now I agree with the guys, everything taste better with bacon. However, I know I need to cut back and well, so do the guys even if they don't agree. Sometimes it is better just to make changes, cut back, make healthier dishes and NOT tell them. One great way to do that is to make the switch from pork sausage and bacon to Jenni-O turkey sausage and bacon. I also use ground turkey in the place of ground beef. My honey is not found of turkey in any form, so I have to mix the ground turkey with lean ground chuck, when I do this he never notices.

Jennie-O is featuring side dishes for Easter and I was asked to come up with a dish. I busted my brain trying to figure out something "new" and exciting. This is not new, but it is exciting. I decided to use one of my favorite Spring vegetables. Asparagus. I love them raw or cooked.

I wrapped them with the Jennie-O bacon and sprinkled on a little fresh cracked pepper. Then popped them into the oven while the rest of the dinner was roasting. I set my oven to 350 degrees and allowed them to cook until the bacon was at the desired crispness and the asparagus tender. This took about 35 minutes in my oven. Your time may vary.

I hope you enjoy this easy side dish and will consider switching from all beef and pork to a less fatty healthier way of cooking by using Jennie-O.

Non Dairy Cocoa Mint Smoothie

I always looking for new recipes, new ideas and healthy solutions for my breakfast and snack choices. Especially here lately. I have packed on 12 lbs that I worked so terribly hard to lose, was in an accident, have several family members in the hospital with very serious health issues. These things by themselves would be enough but all at one time, well, it's been a bit overwhelming. When I become overwhelmed I fall into old habits...over eating and stress eating. I have made a vow to stop that, to rely more on Jesus and his peace and less on my own abilities which have gotten me no where.

That is how I came up with this smoothie, my pseudo step son "Potato May" loves chocolate mint and I thought, HEY how about a chocolate mint smoothie. Then I remember the new product that Ron from NuNaturals had sent me. The cocoa mint syrup! I had been agonizing over WHAT to do with it. Now I had an idea. The mint flavor is not overwhelming, too strong or bitter at all. It is actually refreshing. There is no need to add sugar, honey or any other sweetener as the banana is naturally sweet and the cocoa mint syrup is made with stevia. I used a green energy powder that I have to give me extra nutrients and energy. You could use protein powder or leave it out.
It was a beautiful sunny cool Spring day yesterday so I decided to go outside and enjoy my smoothie. Gorgeous day, delicious drink and food for thought.
If you enjoy this half as much as I did then I enjoyed it twice as much as you. LOL

Cocoa Mint Smoothie
10 oz Almond milk
1 frozen banana
1 tsp cocoa mint syrup NuNaturals
1 scoop green energy
1 tsp honey powder
