turkey salad and Secret Subject

Are you tired of turkey yet? Maybe you have a large plastic zip top bag full in your freezer and you NEED to use it up. How about something simple, like turkey salad?
2 cups diced turkey
1/3 cup diced celery OR use 1 tsp celery seed
1/3 cup sweet pickle relish
3-4 TBSP mayo (I use Dukes)
salt and fresh cracked pepper to taste
a sprinkle, 1 tsp of sugar (yes it sounds weird but if you don't use it the salad lacks something)
Stir well and chill. I like to eat mine with pretzel chips or on toasted bread.

Well a long time ago I stopped making resolutions because I could not keep them. Why you may ask. Easy, because I set goals that were just not realistic and thus set myself up for failure.
Last year my goal was to finish my first semester of college. To find a job. To do more than survive but to live and enjoy. Those goals or accomplishments I actually fulfilled. Along with that I found love and a renewed trust in men. That may sound strange to you but if you've been around it totally makes sense.
One of my list items for this year was to complete college and graduate. Well with unforeseen issues that will not happen. At first I was beating myself up over it and speaking negativity to myself like "what made you think you could do this" and so on. Then I stopped. Life happens. Plans change. You need to adjust with them, go with the flow or be overcome by it all.
So this year I am moving forward, continuing with school as I am able, working, living, loving and enjoying life. Because NO ONE ever said on their death bed that they wished they had of worked more, gotten a degree, spent less time having fun, visited less with friends or family. They say the exact opposite.
So my goals are realistic. Fun. Life. Live. Love. Laugh. Travel.
Heck I will be 50 this year! YES the big 5-0 and I want this to be my best year yet! I have a new grand-baby on the way (7 weeks to go and counting) plus who knows what else this year has in store for me? Whatever it is I will embrace it. Now someone remind me of this if the rug gets pulled out from under me. I pray not but there are no guarantees in life except these: we all must eat, live, breath, pay taxes and die.

  1. I'll drink to moving forward! Of course, I'll drink to pretty much anything. Not that I'm a big drinker... I'm super jealous about your up and coming new arrival! I tell my girls, I can't wait to be a grandma, well I can, but I can't...you know what I mean :)

    That Degree is not going anywhere, take your time and enjoy being 50!
    2015 was such an intense year for you. Being courageous and not givng up has paid off so much!

  9. I'm getting caught up on UYW and SSS today! Sorry for being so late. I cannot believe you are 50! I would have said about 35! I'm glad you fell in love again and everything seems to be going great. My daughter gave me what we thought was a grandbaby but turned out to be twins! Twice the fun...and twice the work!
