Mocha Nut Chewy Bars - Funny Friday

Okay this recipe will not go along with my "healthy" eating but man...you've got to admit they are yummy to the tummy!
I originally found this recipe on BHG but changed it a bit. These are great tasting, super easy and NO BAKE which is perfect right now because our weather has REALLY heated up!
My mom won't touch them because they have coffee in them and she is VERY anit-coffee, I know, I know it's unAmerican but that's her.
You could omit the coffee if you want, but why? LOL

Mocha Nut Chewy Bars
1/2 cup Almond Milk
1 TBSP coffee granules
1 cup dark chocolate pieces
1 7 oz container of marshmallow cream
1 15oz package of chocolate Oreo's CRUSHED(or any other sandwich cookie you'd like to use)
1 cup powdered sugar
1 cup chopped walnuts
1 cup semi sweet chocolate
1/3 cup whipping cream

Grease a 9x9x2 pan and set aside. (this was the size the original recipe called for however I did not have one so to kill two birds with one stone I used a shoe box size plastic storage container with lid, so I could prepare and store in the same one) In a sauce pan melt the dark chocolate pieces, almond milk and coffee until it is smooth, do not boil, then add the marshmallow cream, remove from the heat and stir until smooth. Next add the crushed cookies and powdered sugar. Still well and add the nuts. Pour into the prepared pan, smooth and set aside. In a microwave safe bowl or stove top pan, melt the semi sweet chocolate and stir in the cream. Blend well and smooth. Now pour over the mixture in the pan. Set in the fridge for at least an hour, cut into 32 bars and store in an air tight container for up to a week.
Believe it or not these have less than 175 calories per bar, but you can make them bigger but of course the calorie count goes up as well as the size.

Where I am...

What's going on in my world?

working out and oh yeah... I became a Beach Body Coach...this I struggled with. WHY would anyone want to listen to an overweight almost 50 year old about working out and loosing weight??!! Because I understand, I've been there, dang I'm still there but I can say that I may not be where I want to be but I'm not where I was!

I am inspired by Coach Tulin, a plus size bbc. She is amazing and has overcome so much. I have lost 70 lbs, over 100 inches and have gained a ton of confidence.

I love the shakeology and have found it REALLY helps keep me going. I don't get a lot of sleep. My days begin at 0600 and end around 2330 or as late as 0130 and begin again at 0600. FOTW MAY 2015

Welcome to a Fly on the Wall group post. Today 17 bloggers are inviting you to catch a glimpse of what you’d see if you were a fly on the wall in our homes. Come on in and buzz around my house.

My kitty Lily is a snoring cat. She will wake me up snoring sometimes and keep me from falling asleep. She is gorgeous but loud. We are sitting in the living room and my mom says "What is that noise?" I listen and then laugh, that's Lily. She looks at me, "Doing what?" I said snoring. Yep, poor kitty gets no respect. LOL

I'm in the kitchen and mom says "STOP licking that bunny's ear it doesn't need cleaning!" I said "who are you talking to?" She said "I don't know, whichever one of these cats it is that's licking my bunny" OMG I'm cracking up because for some reason that just sounded SO wrong! I look and Sugar, the baby kitty, is sitting in front of the TV licking the inside of a stuffed bunny my mom has sitting out for Easter. I said "well he thought the bunny's ear needed cleaning" she did NOT think it was funny.

Looking through some of my older FB post and I am reminded how far I've come and all I've been through. I shared a photo over a year ago and then again in December. I am not sure where the quote came from, but it is so true:

Well now that puts a fly in the Metamucil

Each night I have to gather up the kitties and corral them into the bedroom, my mom doesn't like them "out" in the house at night. I swear, sometimes gathering them up is like nailing jell-o to the wall, it just isn't easy! One runs one way, the second another way and the third meow's directions on which way I'm coming so they can run.

I'm typing this up and my mom walks into the living room, "Dawn can you come into the bathroom for a minute?" I said sure after I de-cat myself. I have 2 of the 3 laying on me. She laughs. I go into the bathroom and in the tub is this scary looking bug with about a hundred legs and 4 antenna. I actually have NO idea what this bug is. Which is odd because if it's a critter, I know what it is. Then she squished it before I could get a picture! How rude! LOL

Mother's Day I was playing "bertend" with LMSP, yes it is pretend but she insist on saying bertend. She tells me that she is going to marry her boyfriend and then date, she wants 3 boyfriends and 3 kids...oh dear

I've never been a "sports" person but my honey is a BIG and that is an understatement, BIG HUGE Football FAN, he loves EVERYTHING about football. So I am learning the game, reading the NFL site, blogs, Q&A, stats, scores, player info and I watched/followed the draft on May 1 and 2nd. It was actually fun and exciting. I'm getting into this football thing, I can see come football season I'll be one of "those" women, cooking, buying beer, watching the game, screaming at the TV! My boys will FLIP!
For almost a month now I've been working, I'm driving transport for the county. I transport elderly, mentally and/or physically disabled and I love it. I like to drive, I get to see places around town I've never seen and do a lot of out of town driving, plus I get to help people, which is what I love to do. I have a group of boys (mentally boys but age..well they are 21-62) and they make my day. K and A greet me with a big wave and huge smile everyday and always ask me how my evening was and how my morning has been. They are ultra polite and very helpful with the other passengers. L is the seat belt police, he is 62 and cracks me up. K and D are the two girls, and are both very challenging but I've noticed that if I greet them with a smile and tell them how nice they look they are very complacent. 

I became a beach body coach and am drinking my shakeology everyday, it keeps me going. I also joined the gym AND bought my first pair of shorts in over 15 years. I even wore them to the beach. ALL of these steps are moving me forward and are BIG steps in overcoming my body image issues.

Mango Chipotle Chicken Pasta - CIC May 2015

Another month and another CIC ... crazy ingredient challenge. This month I asked two of our faithful participants to choose the ingredients and hold the vote.

Our ingredients? Mango and Chipotles! YUM

I used the chilpotles in adobo sauce as you can see in my photo. I am a BIG fan of mango so this was a great combo for me.
I had several ideas in my head and had a hard time nailing down which one to use. Mango Chipotle ice cream, YES.. a sweet bread with mango puree and chipotles? sounds good right? Or a pasta dish...due to time and my restrictions on kitchen time/space I went for the pasta dish.
Quick, easy and super spicy, for me that is. My son thought it was good but needed heat, I thought it was down right hot! But my tolerance for spicy food is very low.
 With cheese or without... YUM

1 can fire roasted salsa style diced tomatoes
12 oz cooked shredded chicken, I used leftovers
1 1/2 cups dry pasta, cook according to package
1 cup finely diced mango
1/3 cup mango nectar
2 chilpotles in adobo sauce
Mexican blend shred cheese as a garnish
In my mini blender I combined half the tomatoes, chipotle peppers and mango with nectar. The other half of the tomatoes I left diced for texture. Cook the pasta according to the package, drain and return to the pot. Add the chicken, puree mixture and simmer until heated through. Serve plain or topped with shredded cheese and sour cream if you'd like.
