Enchiladas and February Funny Friday

Holy Cannoli!! THIS is my 800th post!!

How are you today? This is another edition of "Funny Friday" and a recipe. Yes a recipe. I know, I haven't done much of that lately. Work, school, life...I don't do a lot of cooking. Thankfully my mom does. I don't share her recipes as she is a microwave, frozen dinner type of cook and I am a healthy, homemade and decadent cook. You can imagine the conversations we have about dinner prep. LOL

My son and I love Mexican and I had been wanting some enchiladas. My mom is not an "international" eater. She likes plain old fashioned Southern food but she agreed to try them. SHOCK she enjoyed them! She loved the saffron rice that I served with the enchiladas but she did not like the plantains. At least she ate them and didn't call them junk or mess which is her normal vernacular for my cooking. Gotta love our elderly folks...

Enchiladas
mix: 1 TBSP cornstarch
1 TBSP parsley flakes
1 tsp garlic
1 tsp smoked paprika
1 tsp chili powder
1/2 tsp cumin
1/2 tsp oregano

1 lb meatloaf mix (mixture lean ground beef, veal and pork)
half large yellow sweet onion
4 small sweet salad peppers
Cook the meat, onions, peppers and spice mix in a large skillet. Drain any fat if necessary. Take the flour tortillas and coat with refried beans, top with the cooked meat and roll. In a 13x9 pan pour enough sauce to coat the bottom. Lay the rolled tortillas on top and pour sauce over them and top with cheese, bake until bubbly. Serve with saffron rice, fried plantains and a salad.
2 cups shredded Mexican blend cheese
1 can Enchilada sauce mix
1 can fat free vegetarian refried beans
8 medium size flour tortilla shells
2 medium size plantains

Snow Cream

I don't know about you, but when I was growing up snow was a rare thing. Maybe once a year if we were lucky we'd get an inch of snow. We'd (we meaning me, my cousins or neighbor kids)bundle up and run outside, faces up to the sky, tongues stuck out catching those tiny flakes of snow. My mom would grab a bowl and gather up 4-6 cups of freshly fallen snow.

In the house she'd go to whip up some snow cream. You know, ice cream but made with snow. No machine needed. No freezing required. Just a bowl and a few key ingredients.
evaporated milk
crushed pineapple
sugar
snow
That's it.

Well, it is snowing today here on the coastal NC area and snow it is! In the last 4 hours we have gotten over 4 inches. I know for you folks living up north, over the Mason Dixon Line or in the Midwest you're thinking, 4 inches? Big deal. OH honey! On the east coast, coastal NC, it is a BIG ... no...it's a 
FREAKIN' HUGE deal!!
We are not prepared for such. We do not have the equipment and NO ONE knows how to drive in it!
There have already been dozens of accidents and 5 deaths in the last 4 hours.
I am sitting at home where it is safe and warm. I refuse to even try to head to work. DOT is talking about shutting down the bridges.
See here we are surrounded by water and have 2 major rivers that run through our city plus the inner coastal waterway. Bridges are everywhere and ice accumulates there first. It can be very dangerous.
I learned how to drive in the snow and ice when I lived in Germany, but many folks here have NO idea how to drive in anything, rain included.
My granddaughter is here also and she has been chomping at the bit to go outside in the snow. She does not have proper clothing to go outside, but, we did it anyway. Just for a few minutes so she wouldn't freeze. It made her happy and that's what life is all about. Being happy.

FOTW February

I decided I needed a change with my hair. I have let it grow for the last two years and it was almost to my waist. (I did have 3 inches cut off last September) So I decided to get it cut. I had 4 inches cut off and it shaped up but I swear you can barely tell its been cut. So I decided to color it. Yeah, it had been over 2 years for that as well and my arctic high lights are VERY prone...plus my son told me I needed to color it. sheez gotta love honest kids.

So I have been reading emails and notes from my English professor, man I hope he doesn't read my blog! One of this notes said "Do not send me a message to "axe" me a question. If you axe me you are killing me, putting an axe in my skull or chopping off a limb. You may "ask" me anything however." I had to laugh at this because I hear folks "axe" all the time.

This is the south and our weather has forgotten that this week! LOOK at what I have to deal with tonight/tomorrow. UGH (I know,those of you in the North and midwest think this is Spring, but not for the east coast)


LMSP: What are you doing?
Me: Getting ready to leave.
LMSP: Why?
Me: Because I have things to do but I'll be back later.
LMSP: lip poked out and says "why do you have to go?"
Me: Because I do.
LMSP: rolls eyes, "Fine, then go. Get out"
Me: I swear if you were mine or your Daddy was here you'd get your butt smacked.
LMSP: I know, I sorry, bye see you later.
Me: sigh...

YES!! I had a Happy Valentine's Day, finally <3 Amazing what being with the right person can do to change your life.

We're at the table eating and my LMSP is in my mom's lap.
LMSP: what are you doing?
My mom: move your hand it's in the way
LMSP: oh well, excuse me ma'am I didn't know it
Me: cracking up! LOL
And this is why I call her Sassy Pants!

Pearl and William 12 - one year later #UYW February 2015

One year ago I started writing about Pearl and William, last month I took a break so that I could concentrate on school and life. This month I am resuming the story. Rose and Caleb sat on the porch drinking a fresh glass of lemonade and reading Pearl's diary. WOW they had learned so much about their family but the love story of Pearl and William was fascinating even to Caleb. Reading about family and the detailed description of the geography where Pearl and William lived, Caleb could almost see it. The great Magnolia tree over yonder by the pond and hearing the old familiar sayings like "bless your heart". Having family in the several parts of the country Rose wasn't sure if she was a true "Southern Belle" , mid-westerner, Yankee or what. Maybe she was what Caleb said, American. The great melting pot of cultures and heritage, traditions and beliefs.

Rose had just finished reading about the wedding and all the wonderful food. What a great surprise to find several of the recipes in the diary as well. She wondered if her mom would be willing to make some of them. She thought about what it would be like if her family was still Amish, did she still have Amish descendants? Were there family members still living the clean simple non-cluttered life, what would that be like. She was envious in a way and then again very thankful. Just as she had that thought her phone went off, a text from Jake. She smiled and Caleb rolled his eyes.

While Rose was engrossed in her texting, Caleb turned the page. Hmm it seemed a few had been torn out, he shrugged and began to read.

Today is February 14: William and I have been married for 6 months and I am almost sure we have a wee one of our own on the way. Do I tell him tonight?


February 16: William was so sweet and insightful. He had taken one look at her and knew what she had to say. She was with child.

Pearl was so nervous but the house was empty, no one but the two of them. She stirred the fire and walked over to her rocker. She gently sat down and William looked up at her. Oh how she loved him, he smiled and she went weak. As if he could read her mind, he got up and gathered their coats. He held hers while she put it on, took her hand and out the door they went. It was their nightly ritual. They would walk holding hands and stare at the stars. They would discuss their thoughts, feelings and love of the beautiful night sky that God had created.
William stopped and took her hands in his. He looked deep into her eyes and smiled. She said, "William, my dear husband, I have news." He looked deeper into her eyes, into her soul and his smile widened. "Are you with child?" he boldly asked. Pearl blushed and dropped her eyes. He lifted her chin and smiled the widest smile she had ever seen. He leaned in and lightly kissed the tip of her nose, both cheeks and then her lips. She felt the heat flood her face and ...

Mozzarella Stuffed Meatballs

I know it's been some time since I posted a new recipe so I hope it will be worth the wait. My son and I feel it was! These mozzarella stuffed meatballs were a big hit with us and I am sure they will be requested again.

I was looking at my newsfeed on Facebook one night and saw a recipe for stuffed meatballs. All I could find was the photo, no author, no credit given, no recipe but it got me to thinking. My son loves meat and cheese so what better than a cheese stuffed meatball?

After getting off work the other day I made a quick dash through the store to pick up the items I needed. I went home and my mom already had dinner cooked. I was really bummed, so I did my school, talked with a friend and at 11 p.m that night I made these meatballs for the next day.
Of course I taste tested one to make sure it was as delicious as it looked, oh yeah, we have a winner here!

So the next night I came home, popped them in the oven, made some garlic cheese bread and a salad. Oh yes and cooked some pasta to serve the meatballs over. DEElicious

Mozzarella Stuffed Meatballs
1 lb ground pork
1 lb ground turkey
1 TBSP parsley
1 1/2 tsp garlic
1 tsp onion powder
1 tsp oregano
1/2 cup Italian bread crumbs
1 egg
8 mozzarella sticks, cut into bite size pieces

Thoroughly combine your meat, spices, egg and bread crumbs. Form a thick small patty and place a piece of cheese in it. Wrap around to form a meatball. Saute in a pan on low heat so as to cook through but not allowing the cheese to cook out. Once they are done cover them in the sauce and serve over noodles, with peppers, onions and over rice or on a bun as a delicious sub! There are several possibilities.

Sauce
2  16 oz cans pureed tomatoes
parsley
garlic
onion
1/4 cup Parmesan cheese
In a medium sauce pan combine these items and allow to simmer while you prepare the meatballs.

SSS February

Hi everyone! So glad you stopped by. I know you think I fell off the planet. I didn't, I just feel into a new life.
Work, school, my family, a new love interest. Yeah, it's been kinda crazy. I work 20 hours a week and go to school 30 hours a week. I am averaging about 4 hours sleep a night but am the happiest I've been in YEARS! This is all so new to me. Who would have thought that at 25 years of age (with 24 years of experience) that I'd be starting my life over AND enjoying it?! Crazy? Yes!
You did catch the math quiz above, right? wink ;)
I promise, one day I WILL get back to cooking and sharing with you all, but for this stage in my life, I'm enjoying it as it comes and participating in these Friday writing challenges.

Thank you to gndisney for sending this prompt. There are several places I have not traveled and would love. Why have I not been so far? One word, okay, two words...money, time. If I had the money I would have made the time. Here are a few places I'd love to go and why I want to.

Germany: I lived there for 3 years and LOVED every minute of it.  I would go back in a heart beat, no questions asked. I lived in the area of Bavaria and have dreamed of returning for 27 years now. My youngest son is now in the Air Force and has been informed that IF he is ever stationed there, that his momma WILL be visiting! LOL 
This was me in October 1986 not long before returning to the US.

Australia: Because it's Australia! The land down under. The home to Steve Irwin, who I admire and loved dearly. It was so heart breaking to see his life snuffed out but he was doing what he loved. I'd of course visit the zoo, and spend days upon days traveling the country side. I have watched numerous TV shows from Australia that made me want to visit there even more.

I would love to travel the US and hit all the National Landmarks, the Grand Canyon, the Statue of Liberty (actually I'd love to spend 2 weeks in NYC touring and trying all the fabulous restaurants there), Yellowstone, Niagara Falls, the Golden Gate Bridge, the list goes on and on.

Spain: I have always thought of it as a passionate and romantic place. There seems to be a slower pace, they are passionate, the history is rich, the country side is gorgeous and who doesn't want to visit somewhere on the Mediterranean Sea.

Did you ever see the BucketList movie? Well, I have a long bucket list and it is filled with places I'd love to go and things I'd love to do. I have actually started marking things off! For instance, last September when my world fell apart. I decided to do something off of my bucket list. So I grabbed a friend and we set off for the day. We drove in the convertible all over the Outer Banks of NC, ate fabulous food, whistled at some construction workers, walked on the beach, wrote in the sand, laughed, took ridiculous photos of each other, and just lived for the day. We watched the sun rise and set from a boat out in the ocean. It was an incredible time and I had to ask myself WHY had I waited so long to "LIVE", the answer was simple. I was waiting on someone else, waiting for him to do these things with me and realized it was never going to happen. He was not interested. I had spent 25 years being miserable, missing out on life, while he was "doing his own thing" to put it mildly. So now I'm living and loving every minute of it.
