January Funny Friday

Good gracious, the first month of the new year is almost over. How many times this month have you written 2014? I was barely used to writing 2014 and now it's 2015.
I have been in college for a week now. I'm sure you really want to know how it's going, right? Well, let me tell ya...I switched to all online classes, not sure that was a good idea considering there are 5, yes 5 classes! I hope I can keep up with it all. Only time will tell.

Fly On The Wall- Jan 2015

Staying at my moms I get to see LMSP on Mondays and Tuesdays sometimes Wednesday as well. She is full of attitude, questions and far too grown for her own good but I enjoy spending time with her, well, when she's in a good mood that is.

My DIL posted on FB:
DIL and son: singing "I believe I can Fly!!"
LMSP: No you can't!
DIL and son: "I believe I can touch the skyyy!"
LMSP: Noooo you can't!
DIL and son: "I think about it every night and day! Spread my wings and fly away!!"
LMSP: NOPE!!




LMSP comes in with my mom, "Hey Dawn guess what!"
Me: what?
LMSP: I went with Gran-ma and she didn't tell the man at Wheel of Fortune that my sissy is 11 years old. ugh
Me: Wheel of Fortune?
Mom: I keep telling her it's Cella Ford I don't know why she keeps saying that.
Me: I am seriously laughing at this point! this cracked me up

LMSP: So Dawn, what do you want to talk about? How about Halloween or Christmas. What do you want to be? 
Me: I want to be young and energetic. 
LMSP: NO what do you want to dress up as silly?
My mom: I'll be Snow White and you can be my lamb.
Me: You mean Bo Peep?
My mom: LOL yes, No Snow White
Me: Then she'd be your dwarf. Maybe Grumpy.
LMSP: throws her head back and laughs, "No DUMPY, that would be funny"
Me: You mean Dopey?
LMSP: eye rolls... "same thing"
Our breakfast conversations, sounds like we all need more sleep.



"I'm laying on my blanket at the beach" Then she picks up her stuff walks into the kitchen and lays down. Singing "I'm done at the beach, I'm done at the beach, now I'm gonna sleep sleep sleep"
LMSP is cracking me up.
Then she carried all her stuff back into the living room, laid out her towel and sang "I'm at the beach, I'm gonna stay at the beach, ah my sand melted! ARGH
My mom: "how'd your sand melt?"
LMSP "it's raining and its the worst time EVER!!! I'm never going back!"
It's been raining at our house for 4 days straight and we're all a little batty at this point.
Mom and I were laughing, LMSP is such a drama queen.
above is my LMSP and Lily. She loves Lily and Lily is an attention hog so it works great. The other two kitties stand hidden, they don't like her, she jumps around and makes a lot of noise, but hey she's 4.

LMSP: guys guys hey! what do you want to talk about?
She only ask us this about 100 times a day!

My mom and I are sitting at the stop light coming out of the dreaded wally world. I was just staring out the window. My mom says "look at all those "A Kerns" I know the squirrels at my house would love those"
I was stunned, look at WHAT? oh wait, you mean...acorns?!
My mom looks at me like I've lost my mind and said "yesss that's what I said"
I'm like, "ugh, no you said A KERN and I don't know what the heck that is and WHEN did you start saying it that way"
She refused to answer... has she always said this? I have no idea.

Other things my mom says that makes me go batty:
how she says it = what it is
A KERN = acorn
new mourn yah = pneumonia 
AL Man = almond
Sal Man = salmond
yes tur dee = yesterday
pitcher = picture or pitcher (both said the same way)
piller = pillow
winder = window

I guess I grew up with it and it was normal but having lived away and having home schooled my boys, I became a stickler for them to learn to speak correctly. I know we all live in different places and accents affect things, but this woman has never been anywhere and I swear her vernacular has changed over the years.

I'm going to do something different for the first time in a year. Yep, no Pearl and William. I'm saving a big special for February :)

Unassuming: means modest, not arrogant, pleasant or polite.
That is what I want, an unassuming man. Someone who is pleasant, polite and NOT arrogant. Is there such a thing?

Perspective: a particular attitude toward or way of regarding something.
My aunt said to me: why are you smiling?
My response was why not? I'm alive, well and have a new future to look forward to. WHY would I not smile? It is all about perspective I guess. I see a bright future and she sees my bleak past. I prefer my perspective over hers any day.

Bemused: puzzled, confused, perplexed, baffled, mystified
My life has bemused me in the last several months, confused me, puzzled me, baffled me but then I realized that somethings are not meant for us to understand and I read a quote a few days ago that said "there are two days you can't change. Yesterday and tomorrow so live for today" this is a great philosophy in order to get over a bemused life.

Aberration: a departure of what is normal, usual or expected, typically one that is unwelcome. Example: "they described the outbreak of violence in the area as an aberration"

OH MAN! My life became an aberration in September of 2014, it bemused me, changed me from unassuming to one of siding on caution and then I changed my perspective on the whole situation.

Italian Chicken Pasta - one pot one meal

No, I have not forgotten how to cook but living with my mom (who is the pickiest eater you'll ever meet) presents difficulties. I made this last night and am sharing today for a #tastytuesday meal.

She doesn't like "mess" which translates to flavor, or "junk" which means any vegetable other than corn, green beans, cabbage or collards.

I love my mom but she is very judgmental of food and spices. She wrinkles up her nose and will push it around the plate. (I guess that's what happens when you're almost 70 and have never been anywhere other than a small town. Her idea of good food means it comes out of a box, can or frozen. She loves easy microwave prepared food. I am all about fresh, homemade and full of flavor. We are two entirely different people.)

Well, this was no different. It was delicious but she coughed, fanned, made all sorts of comments and noises. Oh well, I tried. It is so different than cooking the past 25 years for a man who would eat anything and loved it.

It was really simple and prepared all in one pot. Less mess, easy clean up and less standing at the stove.
All cooked and ready to eat! It was still bubbling when I took the photo so it looks kinda funny but oh man I loved it.

Italian Chicken Pasta
4 boneless skinless chicken thighs, cut into bite size pieces
1 can petite diced tomatoes
2 large sweet salad peppers
1/2 large sweet onion diced
2 tsp extra virgin olive oil
3/4 cup small pasta shells
1 tsp oregano
1/2 tsp basil
1 tsp garlic powder
1 tsp smoked paprika
1/4 tsp white pepper
1/3 cup Parmesan cheese
1 cup finely shredded Italian blend cheese

I cut the chicken into bite size pieces, sauteed it and the onion in the evoo. Once the onions were clear and the chicken was done I added the diced peppers and spices. Add 3/4 cup pasta shells and pour the tomatoes on top. Then add 3/4 cup water and sprinkle a little more garlic and oregano on top. Cover and simmer until the pasta is done about 8 minutes. Then I stirred in the Parmesan cheese, topped with the Italian blend and covered for 5 minutes until the cheese was all bubbly.
Serve with your favorite veggie. We had sweet garden peas.
A delicious easy meal all in one pot.

I have no idea if Evil Joy reads my blog or not and as these topics are assigned randomly it really doesn't matter. My first thought was, wow, she read my mail. Then I remembered it's randomly assigned.

What am I talking about? The subject "the past year and how 2015 will rock" well, it has GOT to be better than 2014! If you've been around any length of time you know that 2014 was NOT my best year as far as my personal life is concerned. 
My soon-to-be-ex left me, no money, no car, no home, no job, no nothing but personal stuff, kitties and my son after 25 years. Gee thanks! I had to relocate not once but twice in a 8 week period. All my life went into boxes and storage. But don't feel sorry for me, please. It was a blessing in disguise. I won't go into the gory details but God knew it would happen, He was not surprised and He has a plan. Now...

First let's look back and remember the GOOD of 2014:
I saw my youngest son (he's in the USAF and lives 2800 miles from me now)
There was reconciliation with my father-in-law and sister-in-law
My oldest son got married! WOOT
I have a new daughter-in-love
My middle son came home! (good and bad for reasons I won't go into)
I left GA! Hallelujah
I enrolled in college, yes at almost 50 I am now a student.
My little grandson was born.
I went on vacation for the first time in 19 years. WAY over due!
I lost 60 lbs without pills, surgery, special drinks, etc...
I met some wonderful online ladies who support me in my struggle to say bye-bye to fat and hello to healthy.
I joined several new writing challenges, this being one, and have met some fabulous bloggers and regained my love of writing.
My Sissy (heart sister not biological for I'm an only child) got married!
A dear dear friend that was like a big sister to me, we lost contact about 8 years ago, found me on Facebook and we've reconnected like we never missed a day! OH How I love technology!

How can 2015 top this? Easy!
I will begin classes on the 26th and am planning to rock the socks off this semester.
I have a job, a full time job, for the first time in YEARS.
The plan is to lose another 60 lbs.
With my job I will be able to support myself, my son, get our own place and a car. Live independently free from a toxic relationship and enjoy life for maybe the first time ever or at-least in 25 years.
My son has found a job and he likes it.
There are plans for a vacation, a trip to see my youngest son and his wife, day trips, and weekends out and about.
Going to festivals, being around friends, watching the sunset over the water, cooking what "I" want.
Learning who I am and who I want to be. Setting goals and reaching them.
Being successful at work and school.
Being a happy person. No joyful person.
Attending church again and not having to fight about it with anyone.

Will 2015 have it's trials? Of course, it already has and it is only the 9th of the month. But that's life.
Will I see victory this year? YES, I already have and will continue. I refuse to be a victim or survive.
I want to be will be a victor and thrive! THAT is the biggest goal this year and THAT is how I will "Rock the socks off of 2015".

U-G-L-Y duckling cake

Happy New Year! Man, 2015! Hard to believe. I remember as a teen and Prince was singing 1999 and that seemed like FOREVER and now we've moved way past the whole Y2K scare and after we blink a few times it will be 2020.

Lord willing this year will be good, it will definitely be a year of more changes. I ended 2014 NOT how I thought I would. Instead of looking forward to another 25 years of marriage, it ended and I faced starting life over at almost 50 years old. We never know where tomorrow will take us.

Now I am enrolled in college and looks like I'll be starting classes on the 12th and working full time for the first time in YEARS. I'm in training and it's only my first week but so far so good.

I have a few recipes planned out and some things in the works but for today I'm sharing my moms ugly duckling cake with you. This recipe came out of a magazine many years ago. Yep, it's U G L Y but it is tasty and simple. Nothing healthy but it's still the holiday week. LOL

Stay tuned for upcoming recipes, reviews, updates and of course the 4 writing challenges that I take part in. Also, the CIC that falls on the 20th of each month.
** for those who complained about the small type in the photo:
1 package 2 layer size yellow cake mix
1 can 16 oz fruit cocktail
2 1/3 cups coconut
2 eggs
1/2 cup firmly packed brown sugar
1/2 cup butter
1/2 cup sugar
1/2 cup evaporated milk
Combine the cake mix, fruit cocktail with syrup, 1 cup coconut and eggs in a large bowl. Blend then beat at medium speed for 2 minutes. Pour into a greased 13x9 pan. Sprinkle with brown sugar. Bake at 325 degrees for 45 minutes or until cake is done. Bring butter, sugar and milk to a boil in a small saucepan, boil 2 minutes. Remove from heat; stir in remaining coconut and spoon over hot cake, serve warm or cool.

When I make this cake I put half the coconut IN the cake mix, my mother puts it all on top. I also use more brown sugar, half cup IN the cake and half cup sprinkled on top. Either way it's a good cake.
