Chicken Quinoa Stuffed Peppers - Funny Friday July 2015

I have been wanting to try a dish with quinoa for some time now. I have eaten it before but wanted to try something "different" so this was a quick easy dish I came up with using things I had in my fridge.
It is not the prettiest dish but it tasted great and that's what counts. My 23 year old son even enjoyed it and he's not into "healthy".

1 cup leftover shredded chicken
1 cup quinoa prepared according to package (with 1 tsp garlic added)
3 wedges of Happy Cow creamy queso fresco chipotle
2 tsp sriracha sauce
After the quinoa is cooked add in the other ingredients and allow the cheese to melt, this adds a creamy texture. Fill 2 large peppers and serve! I did not bake, boil or heat the peppers because I wanted the fresh flavor to stand out and keep the crunch.

  5. Dawn, we have been adding more quinoa to our diets. I love the taste of it and it is so good for you. These stuffed peppers look like something I would enjoy for a weekday dinner. I am always looking for great healthy dinners.
