My mom loves these meatballs and used to make them once every few months when I was a teen. I had forgotten about them to be honest, but a few nights ago, she asked what we were doing for supper. Well, I rarely cook because she doesn't like my "mess". If it has spices, onions ,peppers or anything else in it, it is mess to her. I do love my mother, don't get me wrong, we are just two ENTIRELY different people when it comes to food, cooking and well, everything else.
So anyway she suggested these meatballs. I thought sure why not, it's been forever since I had them AND it beats the heck out of a microwave meal or fast food. Which is her normal.
This recipe she has changed a little due to allergies and her picky nature.
I enjoyed a salad first and then these meatballs served over rice. You could serve them over noodles, mashed potatoes or zucchini noodles.
Sweet N Savory Meatballs
1 lb lean ground beef
1/4 cup fine dry bread crumbs
1/4 cup finely chopped onion (I prefer to use a sweet onion)
1 egg beaten
1 small glove garlic minced, or 1 tsp garlic powder (my mom omits this)
1 TBSP shortening (I leave this out)
1 can cream mushroom soup (I use cream of celery)
1/2 cup drained chopped canned tomatoes (I use more tomatoes than my mom and I use the petite diced)
2 TBSP vinegar
2 TBSP brown sugar
2 tsp soy sauce (I use reduced sodium)
fresh cracked pepper to taste (about 1 TBSP for me)
*cooked rice or noodles to serve the meatballs on top of
Mix ground beef, crumbs, onion, egg and garlic, shape into 16-20 meatballs
In a skillet with shortening or oil which is what I use, brown the meatballs and pour off fat. I use a very lean ground beef so there is little fat. Add remaining ingredients except * . Cover and cook over low heat for about 20 minutes or until the meatballs are done to your liking. Stir occasionally and serve over rice or noodles.**this recipe was originally from Campbell's soup but we have changed or deleted a few things over the years. Those things are noted.
