La Tortilla Factory Low Carb Tortillas - review

Disclosure: I got this product as part of an advertorial. **Disclaimer** I received a package of whole wheat low carb tortilla wraps at no cost to me in exchange for a written review, this was through Tomoson. I am in no way obligated to write a positive review or mislead my readers. ALL opinions are my own and given freely. I received no other compensation.

I love tortillas, however, they are loaded with carbohydrates, which I have tried to cut out. So when I learned I was chosen to receive a free package of LOW CARB tortillas to try I was excited.


I have tried others and to be honest, wasn't too thrilled with them. I can honestly say, I will buy these in the future. The La Tortilla Factory Low Carb whole wheat tortillas were soft and had the look of homemade, they were good and filling. They are LARGE, the size of my dinner plate! So you only need to eat one. Which is even better.

Some I have tried tasted like raw whole wheat flour, not very appetizing. These did not have that taste and no guilt with only 80 calories and 6 carbs.

I prepared some ground meat with peppers and onions, of course my homemade taco seasoning, added a little cheese, salsa and lettuce. Rolled it up and enjoyed!!

Thyme Lime Chicken

HAPPY FRIDAY! whew...we made it. I have had an exciting and exhausting week.

First my middle son Jesse is now a Daddy! YES, that makes me a grandma again. Little Daniel was born Wednesday night at 11:34 pm weighing in at 7 lbs and 5 oz, 21 inches long. Healthy and a cutie. Mom and Dad are exhausted and so am I. Wishing I was there and hopefully next week, but for now I have to settle for text photos and Facebook. Thank God for technology, otherwise I'd be waiting for weeks for those terrible hospital photos to arrive.

Exhausted because Little Man is sick and I've been keeping him this week. You think you are in shape, or getting that way, until you have to pick up a 23 lb toddler about 500 times a day and wrestle with him because he is sick and fighting sleep and his medications. MAN I'm sore and need the weekend to recover.

Excited because Saturday, tomorrow, my husband will be the BIG 5-0! YEPPERS and we're having a family cook out, which might be rained out, but we'll have fun anyway. Wishing our boys were here, but those days are over. They are married, grown and living states away :( makes me very sad.

OKAY enough or I'll be boo hooing. On to the chicken!

I love chicken, y'all know that already, but I needed to do something new. Dear old hubby (see that wink wink) old... gets bored and he'd rather eat ground beef. So I have to constantly do something new with the chicken to keep him happy.

Here is what I did: (which by the way he LOVED and raved over)



Thyme Lime Chicken
2 boneless skinless chicken breast
1 tsp dried thyme
1 lime juiced
1/2 tsp garlic powder
1/2 white ground pepper

Juice the lime over the chicken breast, sprinkle the seasonings over the breast, both sides and pan sear with a dab of olive oil. Cook until done, about 4 minutes per side. This time depends on the thickness of the chicken and the type of pan you are using.
I served ours with slaw and a baked sweet potato.

Fully Loaded Spaghetti

Yes, you read the name correctly. I am eating clean 90% of the time and this was a splurge.

I'm down a total of 44 lbs and plan on keeping them off, but sometimes ya want a little something. I didn't eat much, as it was super filling but oh so good. Now I'll admit, I paid for it later, as my body is NOT used to these types of food anymore.

My it made my husband happy and that's important. Fixing a meal like this every once in a blue moon helps him continue to smile and eat the spinach salads I hand him at lunch time. (big grin)

So, here was the deal.  I had planned on making homemade pizza on Saturday night, but then he comes home and tells me he had pizza for lunch. Okay, no problem, I really didn't need all that bread and cheese anyway.

So, I'm thinking spaghetti, then realize I only have about 1/3 of a box. hmmm, why not make pizza or FULLY loaded spaghetti? YEAH, now that's the ticket.

Super easy, filling and we had enough for lunch the next day. Even better, two meal, one time to cook.


Fully Loaded Spaghetti
1/3 lean ground beef
1 8 oz package pepperoni, cut in half
1/3 cup olives
3 sweet salad peppers diced
1 small sweet onion diced
1/2 jar of garden chunky spaghetti sauce 
1/3 cup finely grated Parmesan cheese
1 TBSP Italian seasoning
1 tsp garlic
1 TBSP parsley flakes
1 tsp paprika
1/3 box Barrilla plus thin spaghetti (this pasta is high in protein and made with whole grains and legumes)

In a skillet, cook the ground beef with the seasonings, onion and peppers. Then add 3 cups of water along with the rest of the ingredients EXCEPT the Parmesan cheese and sauce. Cover and cook on med/high until the pasta is al'denta. Last add the cheese and sauce. Stir and allow the sauce to heat through. 
Serve and enjoy!

Taffy Active wear - carpi review

As most of you know, I changed my lifestyle in January. I went from decadent desserts and rich foods to a clean healthy eating life. And I mean this, lifestyle, not diet. Why? Because the first 3 letters in diet are DIE!

I make a conscience effort each day to eat healthy, clean and move my butt. Whereas before I ate whatever, whenever and sat around. I used my health as my excuse. But then I saw a video of a man who lost his legs and he is now a body builder. With tears I said to myself, NO MORE EXCUSES.

If you can't RUN  you Walk, if you can't WALK you crawl, but you MOVE! That is my new motto.

With this new mind set, and that is what it is, I have lost 44 lbs to date and over 30 inches. WOW I can hardly believe it myself. However, sadly enough, I still have a LONG way to go. How far you ask...ugh I hate to say it but 80 lbs. YES YES I Know, I R E A L L Y let myself go and shame on me.

Working out after over 20 years of not, has been a real struggle. When you wake up every single morning in pain, moving is not what you want to do. However, if I don't, one day all too soon, I won't be able to and it will be no ones fault but my own. SO...I resolved to change that.

Now I sleep better, wake up in FAR less pain (more of a throbbing annoyance)  I have more energy, my clothes are looser, and I just feel happier about me.

One of the things I find frustrating is finding clothes to work out in. My friend Kim at Sublime Reflection turned me on to Taffy Active Wear! I LOVE their clothes but they are out of my budget right now.

I went to Facebook and liked their page, followed them on Twitter and Pinterest. In doing so I saw they hold A LOT of giveaways with bloggers. THIS was exciting to me. I entered every one I saw and searched them out each day. It paid off! I WON a pair of their carpi pants and let me tell you, it really changed my workout! No more stopping to adjust my baggy hot sweats. They really are comfortable and I could live in them.

Olive You Chicken

My husband is a pun lover, not much on the fun end, but he loves a good pun. So this recipe was perfect for him.

One he loves olives, two he loves puns, put them together and it's a laugh riot!


Sort of a Mediterranean dish, but honestly, just something I threw together as I was cooking. That's how I roll.


 I'm a green pea lover, I could eat them everyday and this past week I've been a carrot lover. So here you see, we had carrots, yes again. Good thing my husband is not picky.

Olive You Chicken
2 chicken breast, boneless and skinless
smoked paprika
onion powder
garlic powder
white ground pepper
grape tomatoes
pitted stuffed olives, sliced
1 small sweet yellow onion, sliced

Season both sides of the chicken breast with seasonings, saute in a tab of oil in a skillet. Just before you are ready to take them up, add the fresh tomatoes, olives and sliced onion. Add 1/4 cup of water or broth and top the pan with a lid. Allow the food to steam, this will cook the vegetables without making them mushy and over cooked. This takes about 7 minutes. Serve with your favorite vegetables or a salad.

Chili Lime Wings

A few days ago I just wasn't in the salad mood at lunch, plus my husband was getting tired of them. So to keep on track and not eat processed lunch meat on white bread. Which by the way, he loves. I decided to bake up some wings.

Why? Because I can. LOL, seriously, I love wings and I had a large bag in the freezer. Plus, the wings are much healthier than a bologna sandwich.

We had chili lime wings and sweet carrot rounds. A delicious, filing lunch. What? You missed the carrot rounds. For shame! Here they are:


There are no exact measurements for the wings, as I work off of sight and knowing how much is right for my taste buds. So I apologize now.


Chili Lime Wings
zest 1 lime and juice
approx. 1 lb wings = 12
chili powder
smoked paprika
cilantro
white ground pepper
*I would say that I used 1-2 tsp of each seasoning*

Place the wings in a baking pan. Squeeze the lime juice over the wings and add zest. Now sprinkle each seasoning over the wings until coated or the amount you think would be best for your taste. Cover with foil and bake at 350 degrees for 45 minutes. Drain any fat and return to the over uncovered for 15 minutes.

Pineapple Coconut Bread and Fly On The Wall- March 2014 edition

Where has the past month gone? I think I blinked and missed it. Honestly, the middle of March.

Let's see, what has happened? Life, lots of rain and some beautiful sunny days. Flowers are in bloom, the trees are budded out, pollen is in the air. Spring is officially here in South Georgia. Which means grilling, a lot, fishing even more, and watching kids play ball at the park.

While in Florida this past weekend with my husband and FIL, we're getting ready to leave for breakfast.

I put on shoes and off we go...sheez

I've only talked with Miss Sassy once in the past month. This makes me sad and worried that she'll forget who I am. But when I did talk with her, she was like "HEY Dawn!" and sounded excited to talk with me, that made me smile all over.

Little Man keeps us cracking up. He is now doing the "coffee dance" when coffee and milk and mixed into a juice cup and shook up, he dances around. Too funny. No bashing, it's not my child, and yes he drinks coffee, decaf.

Last weekend was the Wild Chicken Festival...very interesting. I'll do a post about the chickens later, as they deserve their own post.

Pineapple Coconut Bread
1 1/2 cup coconut
1/2 cup butter, room temp unsalted
1 1/2 cup flour (I used a whole grain baking blend)
1/2 tsp baking soda
1/2 tsp salt
1 cup tagatose (you can use sugar)
3 eggs
1 cup Greek yogurt
2 cups crushed pineapple with juice
1 tsp vanilla
1 heaping TBSP More Fiber Baking Blend (if you do not have this you can omit)

Preheat over to 350 degrees. Grease a bundt pan and  prepare mix. In a mixing bowl blend your butter, eggs and sugar or tagatose. Beat in the yogurt and slowly add in the dry ingredients. Once blended, add the pineapple and 1 cup of the coconut. Sprinkle the 1/2 cup on top.
Bake for 60 minutes. The first 45 minutes cover with foil, the last 15 remove the foil so the coconut can toast.
Cool in the pan for 15 minutes. Invert onto a bakers cooling rack.
Cool completely as the cake is moist and will fall apart when hot if sliced too soon.
Slice and enjoy!

The batter is VERY wet and so instead of using a loaf pan, I baked mine in a bundt. The 'bread' is wet and dense but delicious.

Sweet Carrot Rounds

We love Chinese food but haven't really enjoyed Japanese food. Well, that changed a few weeks ago. We went to a place about 45 minutes from us with my husband's cousin.

OMGosh it was delicious. What I really enjoyed was the rice and carrots. They were so sweet, like candy.

I figured I could replicate them and I did. We loved them so much I made them twice yesterday. For lunch and supper. Oh yeah that good!

Sweet Carrot Rounds
2 cups  sliced carrots
water
dash salt
2 tsp butter
2 tsp brown sugar

In a sauce pan, place carrots and just cover with water. Place a lid on the pot and boil until the carrots are tender. Mine took 12 minutes. Drain the water and add the butter and brown sugar. Stir well and return the pot to the burner but make sure it is OFF. Allow them to set for a few minutes.

Fish Taco -revised

Hey and Happy Wednesday...now if you have fixed the fish taco before, you know it did not need a revision.

However, I was out of mango :( boo and made a lime cilantro slaw instead. 

PLUS I changed the rub ingredients just a tad.

But here is the newest version:

3 Talapia fillets, cut into 2-3 pieces depending on the size of the fillet
6 flour tortillas
rub
slaw

Rub:
1 tsp dried thyme
1 tsp chili powder
2 tsp smoked paprika
1 tsp onion powder
1 tsp white ground pepper
1/2 tsp course ground black pepper

Mix this well and coat 3 talapia fillets, cut into 8 pieces. More if needed. Saute fish in olive oil and serve while hot.


Slaw:
2-3 cups tri-colored shredded slaw
4 salad sweet peppers, julienne
juice from 1 lime
2 tsp cilantro
1 tsp honey
2 tsp rice wine vinegar
Toss well and serve over fish on a tortilla shell or just as a side dish.

5. How often do you blog and how long have you been doing it? I have been blogging 2 years in June and normally post M - F but sometimes I have weekend post as well. I started out 7 days a week with a different recipe every single day.

Grit Bowl

We really enjoy breakfast and my husband loves his sausage and bacon. However, pork is not the cleanest of meats to be eating.

Recently while at the store I saw a new product. Smithfield "all natural" pork breakfast sausage.

I thought, what the heck, I'll give it a try.

The sausage does not smell like regular, it smells clean if that makes sense. The taste is not as strong, sort of bland actually and had way less fat.

I cooked this with sweet salad peppers, onions, smoked paprika, a little garlic and fresh cracked pepper. I then scrambled eggs into it with a 1/4 cup of shredded cheese and served it over creamy grits.

Simple, filing and satisfying.

Veggie Fritatta and March 2014 Use Your Words

A quick, easy, no fuss, no muss, no meat, 1 dish meal. How's that?

We love eating breakfast and do so often, especially on Sunday nights. Not sure what it is, but that seems to be our chosen night. Omelets, breakfast casserole, pancakes with fruit and now this delicious veggie fritatta.

Basically a fritatta is a baked omelet and can be made with or without a crust. I chose to make mine without, who needs the empty calories? Plus this kept me in my "clean" category.

I used organic farm fresh eggs, almond milk and fresh Colby cheese but only a 1/4 cup. Keeping in mind again my 90% clean.


I chose to use zucchini, onion, along with red, yellow and orange sweet salad peppers. Using what I had available. This allows for a frugal dish and it has the veggies that we enjoy. My husband would have loved mushrooms in it, but I'm allergic.


6 eggs, 1/4 cup almond milk, 1/4 cup cheese

Last month, in UYW I introduced you to Pearl and William. This month the saga continues: (if you missed it, you can read Part 1 here)

Weary from her long trip, Pearl was so elated to see her cousin-in-law, she almost forgot herself by hugging him full force. He being married to her cousin, was not family and it would be completely improper for her to do so. Elated to see them or not, she could not forget her upbringing, Mama would be ever so vexed. Gathering her wits she composed herself and squeezed his arm.  
    
Turning, she thanked William for his retrieving her and hoped it was not too much of a bother.

Bother, laughed Abe,(her cousins husband) William is my brother.   

Pearl was almost giddy inside, if he was family, then she'd see a lot more of him. Oh, stop it she chided herself. Here you are having just met the man and you act as if you're betrothed already. Don't be so furhoodled.

She dipped her head and went inside to see Cousin Sara.

Oh just look at this mess! Oh I do have my work cut out for me. Seems working endlessly will be no worries here. Papa wanted to keep me busy. With 3 wee ones, a sick cousin and a man to care for, oh yes, busy indeed.

After changing into her work dress, Pearl set about straightening the living quarters, making tea, changing the babe and setting dough aside for the next mornings bread. She finalized her list of "to do" in her head before checking on Sara.


Sara hardly spoke that night. Pearl had heard of women who suffered after child birth but had never witness someone so sorrowful. She did not care for the babe, her other children or even to breath it seemed. I must set about praying right away for Cousin Sara or she will waste away and leave these poor children motherless.

Oh what a rough night it was, the babe woke numerous times and try as she might, Pearl could not rouse Sara to feed the babe. She even dared to wake Abe for his assistance but once was enough of that. He was so mean to her, Pearl learned her lesson quickly and understood that NO ONE at home knew what was going on here.


Finally, having to make do with a make shift bottle she had the wee one fed. Ach, the poor babe she thought. No one even told me your name. He ate heartily and fell fast asleep but all too soon the sun was up and Pearl was late getting things in order for the day.


Days turned into weeks and weeks turned into a month. No sign of William, poor Pearl was beside herself. Had she been wrong? Was he one of those men who only teased her and was off to find a godly woman as a mate? Had she spoiled her chances? Oh dear, she fretted. Then chided herself, oh never you mind. God is my husband, busy are my hands, long are my days. I have no time for childish romantic day dreams, mama would be ever so disappointed in me...a deep sigh escaped her lips at the very moment she heard a wagon outside.
