Meyer Lemon and Pecan Muffins - healthy

I purchased some Meyer lemons last week and kept wanting to do something new with them. I did put them in my smoothie each morning, added a little kick. I love lemons and if you look around in the dessert list on my recipe page, you will find a LOT of lemon recipes. Approximately...44 times you'll see "lemon"...yeah I'm sort of a lemon lover.

So anyway, since changing into this new lifestyle and eating clean, baking has not happened at my house. My husband hasn't complained but believe me, if I go in there and start to bake he will NOT complain either!

I wanted something sweet but not overly so and I didn't want to break the bank on fat and calories either. So after skimming through my cookbooks, I found a few recipes I liked. Well, you know me, I had to combine a few of them and make my own.

Here is what I came up with:

 There is no white granulated sugar in these muffins. Instead I used Tagatose which can be purchased through NuNaturals. A great all natural sweetener that comes from the tagatose fruit. It is diabetic friendly, can be used in baking or in beverages. I also used Lemon Stevia liquid drops from NuNaturals as well. This added a little more lemon without a lot of extra liquid in the batter.


 I also milled my own whole wheat flour for this recipe, using my mill from the Wonder Mill company. I love being able to make my own flour.
And to make sure I was as healthy as possible I also used grape-seed oil from Pompeian. Grape-seed oil is very healthy and can be used in frying, saute, dressings and baking.

Meyer Lemon and Pecan Muffins
1 1/3 cup whole wheat flour
3/4 old fashioned rolled oats
1/3 cup Tagatose
1/4 tsp salt
1 egg, beaten
3/4 cup milk (use whatever you are used to. Almond, soy, coconut it doesn't matter)
1/4 cup grape seed oil (you could use vegetable or coconut)
juice of 3 Meyer lemons
1/3 cup chopped pecans
20-40 drops (you decide on the amount) lemon stevia drops

Preheat oven to 400 degrees. Line a muffin tin with 12 holders.

Mix your dry ingredients in one bowl and beat your wet ingredients in another. Then combine the two. Allow this to sit for about 5 minutes. Then fold in the nuts.
Fill your muffin liners about half way and bake for 18 minutes.
When still hot, drizzle with topping...now this is NOT as healthy but added a little something :)

1 cup powdered sugar
juice and zest from 2 Meyer lemons
mix well and drizzle over muffins

Sweet and tangy!

Chocolate PB Oatmeal Bites - raw healthy snack

I'm doing really well, no baking, no cakes, no cookies, no anything. HEY are you okay?
I know you just fell out of your chair! hahaha Super hard to believe I know, trust me. Biggest thing, I'm okay with it. I miss baking and my husband is not thrilled but I really am not missing it. I think secretly I'm afraid that if I eat something decadent I might not be able to stop!

I did however want something last week but it wasn't a desire for cake really. So I found a few recipes and tweaked them to suit me and what I had in the house. I'm trying to be super frugal as well, and no unscheduled store trips.

This is what I came up with. A great raw snack. This one does not include dates or nuts, so if you weren't a fan of the raw cookies, you might like these.




Chocolate PB Oatmeal bites
1 cup old fashioned oats, raw
1/4 cup unsweetened baking cocoa (I used Hershey's)
1/4 cup coconut shreds
1/2 cup peanutbutter (I used WOWbutter)
1/4 cup raw honey

Mix the dry together, mix the honey and PB in a separate bowl. Now combine the two.
This is very hard, you can stir, you need to sort of mash and knead it together.
Take small amounts, about a teaspoon maybe two and knead in your hand, roll into a ball.
Place on a plate and cover, store in the fridge.
Made 24 small bite size balls

Wonderful Wednesday Hop - last one for January 2014

Man, can you believe it is the last week of January? Crazy!

Speaking of crazy, ya'll know I moved to South GA. Do you know they are saying snow for us! AND lots of it. By the time this post goes live, I may be looking at a winter wonderland.

I know I know, those of you up North or in the mid-West are saying big deal, snow, we'll send ya some. NO THANK YOU

I have enjoyed these 50-60 degree days, believe me. So has my fibro, it doesn't like cold weather. So I'll be bundled up in the house, hitting the treadmill.

Speaking of which, I'm up to 35 minutes a day and I'm down 10.6 lbs for the month!! WOOT YEAH

Aunt Olean's Potato crust pizza

While visiting one day with my husband's aunt, she was telling me about this pizza she makes that they all love. It was very interesting.

She uses potatoes as the crust. Potatoes? Yes, potatoes. I thought it was odd but ya know, it is sort of like a flatten out stuffed baked potato.

A few nights later, she made her pizza and called us over. We had already eat, but of course my husband had some.

This is a photo of her pizza.
How she does it...

Potato crust bacon cheese pizza
3-4 potatoes, peeled and thinly sliced
par boil the potatoes
layer on a pizza stone
top with:
ranch
bacon, cooked drained and crumbled
cheese

Bake at 350 degrees until the potatoes are done, the cheese is melted and the "crust" has formed.
Not exactly on my list of "clean" healthy foods, but hey, everyone needs a little something special every now and again. Plus, it had bacon.

Have you ever heard of, seen or eaten a pizza like this? I had not.

Faux oyster stew - Meatless Monday

Living in Georgia is interesting. Food is NOT the same as in NC let me tell ya. (Sorry if you from GA no offense) just saying it is a lot different.

A lot of deep frying goes on, not something I'm used to and not something I'm eating either. Does NOT fit in with my new healthy lifestyle and food choices.

Lots of peas, beans, greens, cornbread and 'different' foods. What am I talking about, well, the potato crust pizza for one, you'll see tomorrow and this...oyster stew, that has NO oysters but sure taste just like it! 

NO JOKE 

My husband's cousin was wanting 'oyster stew'. She asked me if I liked it, well not really. I'm not an oyster person. 

"Oh me neither but this stew taste just like it but there's no oysters"


Say what? WHAT can you cook that will taste like oysters but not use any oysters , oyster sauce or fish sauce?

Curious...

Egg plant. No lie! I watched as his aunt prepared it and I tried it. Sure enough it taste like oyster stew, but is meat and seafood free!

Crazy!

Faux Oyster Stew
1/2 large egg plant, peeled and minced
1/2 onion, finely diced
salt
pepper
3 cups milk
1/3 cup butter
2 cups water

In a sauce pan, add water, salt, pepper, onion and eggplant. Stew (boil and cook down)approximately 20 minutes. Now stir in your butter and milk. Cook this on low for 10-15 minutes and serve.

Mill City Bread Co. review

I love baking homemade bread, there is nothing like the smell of fresh baked bread floating through the house, unless it is the smell of fried chicken! YIKES... no I'm not frying chicken. Too messy and it is NOT on my list of "clean" foods.

Oh wait, I digress.

I wanted to tell you about these great Artisan breads. I received several mixes from a new company, Mill City Bread Co.
All natural Artisan bread mixes, very high quality with NO preservatives, NO GMO ingredients , no soy and no corn. They come in 100% recycled paperboard and they are produced using 100% wind energy!
How's that for green?!

So far I have made 2 of the breads and I have to say, they are wonderful. Great flavor and really easy. You add water, that's it. The yeast, base and flour mix are all included. Along with detailed instructions.

The directions call for using a clay baker with lid. I did not have one so I went to their website, which was great and full of information. I found that I could use a cast iron dutch oven, which I do have.

My husband LOVED both loaves but enjoyed the hard crunchy crust and chewy center of the German farmer bread the best.

Ranch Slaw Chicken Tacos and Fly on the Wall

There has been so much to happen since our last fly on the wall post until I feel like if I shared it all, you'd be totally overwhelmed.

We moved, I went back to NC for almost 3 weeks, we are working a new business, saw my AF son, spent time with my future DIL and met lots of new friends/family members.

So Ms. Sassy Pants has an Obi Wan Kenobi bath toy...

J: "What is this?"
Me: "Obi Wan Kenobi!"
J: "Where's the second one?"
Justin: "The second what?"
J: "Kenobi!!!" (She thought that Wan was "one")

So stinking cute!!!

She kills me, that BCS. We were doing a MAJOR clean up and re-arranging day in her room. After she, K and I had finished moving her “tall” dresser (full), and, her double bed (crazy heavy) – she turns around and looks at the newly “opened space” and without missing a beat says, “So much room for activities!”  My brother J would be proud, BonBon!) **just keep giggling every time I think about it....so stinkin' funny)

Dinner table: Mr.S finds a long hair in his food, and, I am SERIOUSLY trying to figure out how it got there. middle daughter says, "Mom, you're old - your hair is falling out of your head!" Me to K, "K, you're young, and stupid things are falling out of your mouth!"

My friend and I are both on the "healthy" band wagon, she has been on over a year and lost 114 lbs. From her FB page: I have totally worn off on my children with this healthy thing. I made spicy veggie soup for supper. My little one--age 5--just looked at me and said, "mom this is sooooo good and it is very low in cholesterol... I can tell!" Lol! Tooo funny!

My heart is so full of sweet love from little baby...the four year old. He just looked at me and said, "Mom, your chicken and rice is sooo good. I am going to marry you one day!" 

I love it!!!! When I told him that I was already married to daddy, he said, "But he won't mind. He loves you too."

Adventures with Ms. Sassy Pants

My mom met me and my son at the half way point. J was with her. I walked up to the car and knocked on the window. She started jumping up and down and hollering!!! Gramma gramma it's DAWN her here! LET ME OUT
I opened the door, gave her and hug and she ran behind my mom. I said, what are you doing? She said "I hiding from him" my son. LOL Then she hugged him.

DAWN guess what?

NO you didn't! You no see her!
Okay. I saw her picture on facebook.
Oh (she sounded very disappointed) haha

She has gone from calling my mom, momma, gramma, pink gramma to Pink. No one knows why. She calls her maternal grandmother green. Who knows, she calls me Dawn. oy evy! 


Christmas Day, here we go again. J you want turkey?

Eww, no, I no want no turkey
Okay how about chicken?
YES I love shekin
Good. And I hand her a piece.

Sassy Pants: hey Daddy this is how you stick out your tongue
Dad: I know, but don't do it , it's rude
Sassy: Oh. WELL, this is how you roll your eyes
Dad: I know and DON'T do that either
Sassy: deep sigh, UGH, eye roll and runs from the room
Lord help us with this one!

Little Miss Sassy Pants has not seen my youngest son since he got married last June and she does not remember that. So while he was home, surprise visit for Christmas, we drove the 2 hours to my mom's house to see her. My oldest son, his fiance and Sassy came over. She would NOT talk to Joey or go to him but after several hours he won her over.
In the process of all this, Jesse was making faces at her, playing and having fun.
She runs in the kitchen, turns around toward the living room, one hand on her hip, points to him and goes
"YOU are SO adorable! hahaha
Oh my gosh Dawn isn't he sooooo adorable!"
We all cracked up!

My son and his fiance were playing around...

No and so on
Miss Sassy Pants, puts on one mitten (channeling MJ?) steps between them and says "WHOA, hold on guys, SLOW DOWN"
LOL everyone lost it!

She had her first professional mani/pedi...what have we started?!



My kitty, Beau. Here I was trying to work and he wanted attention. Can you tell? And trust me, he had a serious grip on my arm.



Ranch Slaw Chicken Tacos
2 large chicken breast,sliced
1 yellow onion, sliced
1 tsp grapeseed oil
2 tsp dry cilantro
1-2 TBSP taco seasoning (homemade)
8 flour tortillas
shredded slaw mix 2 cups
1 TBSP mayo
3 tsp dry ranch dip mix

Mix the ranch dip mix with the mayo and stir well into the slaw mix/shredded cabbage. Set aside while you prepare the chicken.

In a skillet, place grapeseed oil, stir chicken with taco seasoning, onions and cilantro. Saute until done. about 10 minutes

Heat your tortillas in a dry skillet on each side until you get the desired brown/crisp you desire.

Serve chicken on tortilla with slaw on top!

ENJOY ** I found no need for salsa, sour cream or anything else. These were so good we had them twice in one week** A lot less fat and calories than normal tacos and just different enough to satisfy!
