HAPPY EASTERHi and welcome to the April 2014 Crazy Ingredient Challenge, also known as CIC. Each month we are given 2 ingredients to create a NEW recipe. One that we have not posted on our blogs before. Sometimes the ingredients are more of a challenge than others. You may have seen some of them previously...

Now for my creation, it is not very original but it was tasty! I had first thought of using the PEEPS in the pie, but changed my mind, then I thought of using them for the meringue but didn't. After my first bite I wish I had of, they would have worked wonderfully.
Don't get me wrong, the pie was good, I really liked it, but using the PEEPS as the meringue would have been better.
1/4 lemon juice
1 1/2 cups sugar
1 1/2 cups water
1/3 cup corn starch
3 egg yokes (save the whites for your meringue)
3 TBSP butter (unsalted)
3 egg whites
1/4 tsp cream of tartar
6 TBSP sugar
2 1/2 cups pretzels crushed
1/4 cup sugar
5 TBSP butter, melted
Crush your pretzels, then add your sugar and melted butter. Press into a pie pan. I used a large 10 inch pan.
In a medium sauce pan, bring water, sugar, butter and cornstarch to a boil, reduce heat and stir well. Once the mixture begins to thicken remove from the heat and stir in your egg yokes, stir well and set on the heat again. Once it begins to boil, stir for 2 minutes and remove, last add the lemon juice. Stir well and let it sit for 2 minutes.
Pour into your prepared pie pan.
In a mixer, add your egg whites and cream of tartar. Beat on high until it begins to peak and thicken, add sugar 1 TBSP at a time and allow it to beat/mix well. Once you are done, spread on top of your pie. Insert your PEEPS.
Bake at 350 degrees for 10 minutes careful to not burn the meringue.
Cool completely and serve.
