This was quick, easy, start to finish 30 minutes AND it is healthy. What could be better? Yeah, someone else to clean would be great, but this only messes up 1 pan, the cutting board, a knife, 2 plates and 2 forks. Now that makes it even better in my book.
If you are feeding more than 2 people, double the recipe. You could even stretch this to feed 3-4 if the portion was smaller and if you served it over rice or noodles.
We just ate the dish by itself. I'm cutting back and this satisfied me just fine.
Chicken and Asparagus Stir Fry
1 TBSP soy sauce
1 TBSP raw honey
1 TBSP extra virgin olive oil
1 TBSP garlic powder or 4 crushed cloves
2-3 green onions, diced, tops an bottoms
2 tsp sesame oil
2 tsp sesame seeds
2 boneless skinless chicken breast, cut into bite size pieces
1 bunch asparagus, ends cut off and chopped into 2-3 inch pieces
Combine the first 7 ingredients into a zip lock bag and mix well, dice chicken and green onions. Add to the bag and mix well. Allow to sit for 10-20 minutes.
In a hot skillet or wok, pour out the ingredients from the bag into the hot pan. Cook until done, about 10 minutes.
Just before it is finished, toss in the asparagus and stir well. Cook to your desired tenderness.
