Chic-ger with balsamic ketchup AND fried pickles

After having such great success and responses from the Fried Green Tomato slider, I decided to try something else.

Similar but different.

A Chic-ger. YES a chicken burger slider, but nothing plain, a kicked up version. Lettuce, tomato, bacon, mayo, balsamic ketchup and fried pickles on the side.

No, not exact diet friendly, clean or the "best" way to eat. However, without a little guilty pleasure now and again, I won't stay true to this healthy eating AND this is not totally 'bad' either.

Besides, eating clean and healthy is something I wanted to do, not my husband. So every now and again I have to fix something that makes him think he's eating 'good  bad-for-you' food.

burger:
1 lb ground chicken
1 tsp white pepper
1 tsp smoked paprika
1 tsp garlic
1 tsp onion powder
4 TBSP Italian bread crumbs
1 egg beaten

Mix all these ingredients and make 8 patties. Saute in a pan with a dab of oil. Chicken is lean and will stick and be dry without some oil added.

Cook your bacon and set aside. Slice a tomato and tear some lettuce to fit your buns. I used slider size buns. (soft whole wheat buns)

Balsamic ketchup, you can find in the grocer or make your own. 4 TBSP ketchup and 1 TBSP balsamic vinegar with Modera. You can also make the ketchup from scratch if you prefer.

Fried Pickles
2 large kosher dill pickles, Mt. Olive
slice into 1/4 inch slices
roll in buttermilk fine ground corn meal
saute in oil, drain and serve
