Moo Shu Chicken wraps

I love Asian food and while browsing through a magazine I found a recipe for Moo Shu pork in wraps. Well, I don't eat pork, except bacon but that doesn't count. shhh it doesn't ;) wink

Since I don't eat pork I decided to make them with chicken. Man where they ever good.

I'll be honest, I really didn't like the smell. I have only used hoisin sauce one other time. They tasted great but kinda smelly. I don't like the smell of fish sauce either but it adds a great depth of flavor in Asian food.


 Look at that lovely stir fry which would have been great over rice or noodles but I did something different and served it in heated/toasted tortillas.


Moo Shu Chicken (in wraps)
6 boneless skinless chicken tenders
2 TBSP soy sauce
1 TBSP olive oil (Pompeian extra virgin)
1 c shredded cabbage
1 c shredded broccoli slaw
2 TBSP hoisin sauce
flour tortilla

Cook the chicken in the olive oil and soy sauce. When the chicken is done stir in the hoisin sauce and vegetables. Saute until the vegetables are done to your liking.
In a small skillet, dry, heat the tortillas. Serve the Moo Shu in the tortillas.
Or you could serve it over warm rice or noodles.

Sweet and Spicy Red Beans over Rice

Can you believe I've never fixed "red beans and rice"? Why you ask, because growing up it wasn't something we ate. We only ate beans in chili or baked beans.
If I was at someone's house, it was plain pinto beans with plain rice. YUCK
It honestly never occurred to me to fix them the way I "would" eat them. Well, that changed a few days ago.

Here is what I did:



Sweet and Spicy Red Beans over Rice
1 can kidney beans, rinsed and drained
1 can diced tomatoes
1/2 cup tomato sauce
1 cup chicken broth
1 TBSP Worcestershire sauce
2 TBSP brown sugar
1/3 cup ketchup
1/4 cup grainy mustard
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika 
1 tsp chili powder
1/4 tsp red chili flake (more if you like heat)
1 pkg Johnsonville chicken sausage with apples, sliced

1 cup rice, cook according to package

All ingredients, except rice, go into the slow cooker. Stir well and place on low, cook for 6 hours and serve over rice. A super simple dish that is packed with flavor!

Monster eye cupcakes (one bowl chocolate cake)

Saturday night we went to my BIL house. We had not been to their new home, it was a long drive, an hour, but worth it.
Fun, food, family, friends, decorations and costumes! A great time inside and out.

Out back the kids ran wild on the 12 acres farm, chickens, dogs and wildlife. Over by the fire the men were cooking a big pot of "road kill stew", but not to worry, it was chicken and rice.

Inside, every room was decorated and 3 tables were lined with food.

Everyone brought something and it was a graze and eat as you were hungry kind of a deal. Which is great with a big crowd.

Most everyone was dressed up. I had no costume and so I wore one of my favorite t-shirts and tried to replicated the design on my face. Not too bad, my husband was some dark dead demon/man.  He hates dressing up.

Here you see my SIL (sister in law) and her best friend dressed as minions! Too funny!

Seems all the guys came as Duck Dynasty or just as 'dads'.

We had a great time.

I took Monster cupcakes, chocolate cupcakes decorated with candy to make owls and little monsters, or just tossing on the extra candy. The kids don't care, they just like candy and chocolate.  Here is my chocolate cake recipe that I used:

Monster Eye Cupcakes(Chocolate Cupcakes)
One bowl chocolate cake
2 cups all purpose flour
2 cups sugar
1 cup baking cocoa (I used Hershey's)
2 eggs
1 1/2 cup milk (I used Almond)
1/2 tsp salt
1 tsp baking soda
1/2 tsp baking powder

Stir all dry ingredients well, then add the wet. Mix well but do not over mix. Baking in 24 cupcakes, a 13 x 9 pan or two 9 inch round cake pans. 350 degrees for 30 minutes.
Frost and decorate.

Carnival Squash

We recently went to our state farmers market. WOW talk about incredible! Acres and acres of local grown produce, meats, cheese, wine, jams, jellies, flowers, plants, the list goes on. It was a great day.
I spoke with many of the farmers and enjoyed hearing about their family farms that have been there for generations. Changes they make to stay current and how many of them are self sustaining, green, eco friendly and organic.
I had an amazing time.
I made lots of purchases, and it was difficult to decide. I wanted ALL of it, but decided to purchase things I was not familiar with. Well, except for that 40 lb watermelon :) I couldn't resist.

One item that drew my attention were these lovely carnival squash. They look like pumpkins and ornamental gourds but are not. They are a fall harvest plant and these are actually from the first harvest of the year, from this particular farmer.

Aren't these lovely?


And had I known they would taste so good, I would have purchased a half dozen instead of two.

They were super easy to prepare. I washed them off, cut in half, scooped out the seeds and placed on a baking sheet.
I sprinkled them with honey powder and cinnamon. Roasted on 350 degrees until tender. Which took about 25 minutes.
Delicious and easy!
No need to peel them if you are roasting as I did. So pretty, I'm thinking next time to buy more and made a puree/bisque soup and use them as the bowl. Wouldn't that be pretty?

The taste is similar to butternut squash, acorn squash and sweet potatoes.

Precision GetFit journey with healthy recipes

*Disclaimer: I received the product free of charge to review, all opinions and comments are my own.

I may have mentioned before, I struggle with my weight and body image issues. Due to health reasons, surgeries and disability, I have gained a lot of weight over the years and find it next to impossible to loose.
I have been searching for something to help me track my weight, fat, muscle and BMI better. Well, I found it.
I read about the GetFit scale online and contacted them. They very gracious provided me with a scale to try and review.
I really like it. It lets you program more than one user, is super light weight and easy to set up.
I have only had it a short amount of time but have lost 10 lbs. I won't say it is all due to the scale, but it has helped.
My old scale was not accurate. This bad boy is accurate down to the ounce.

 As I use it and progress, I will from time to time update you on my progress. I won't be sharing my numbers as far as weight go, I'm not that secure. LOL
I can say sadly enough, that my doctor thinks I should loose 130 lbs. THAT sounds like an impossible goal to me. I hesitate even putting that number on here as people can be so cruel and I'm sure I get some nasty comments about being fat.
I know people do it. But I am taking it one pound at a time. Right now I am rejoicing that I lost 10, because that is 10 I'm not carrying.


I hope you'll stay tuned.

I will continue with my blog, my recipes and decadent foods, but you will see more healthy choices. I have already cut out all processed foods (almost all) and cook from scratch. I do not drink soda, coffee or tea unless it is herbal with honey.
I rarely eat out and even more rarely eat fast food.
I drink lots of water.
I won't give up my sweets but instead will make healthier meal choices so I can have the desserts I love and will eat smaller portions.


Hope you'll stop by to keep up with me and this journey and will be encouraged on your own journey to a healthier life style. I'm not doing a diet. Because the first three letters spell DIE. I have changed my life style.

Chicken Paprikash ~ 1950 throw back

I had this bright idea to look for recipes from the 1920's and 50's. What type of meal was typical during this time. You'd be amazed at what you will find.

During the 20's of course was the depression so money and staples were in short supply. Your average American was poor and struggling to provide for their families and keep their farms. If you did not grow it or trade with your farm neighbors, you likely did not buy it either. Times were hard.

In the 50's it was the June Clever (Leave it to Beaver), Mary Cunningham (Happy Days) and Father Knows Best times. These were shows if you are under 40 you probably have no idea what I'm referring to.
Moms were stay at home, baking, cooking meals from scratch, raising their children and keep a spotless house.

The shows portray these women in dresses, pearls and heels while keeping a spotless happy home. Women wore beehive hairdo's and made amazing meals. Little to no fast food was available and dinner time was a time where the family sat down together and caught up on the events of the day.
This is something we always tried hard to maintain. Dinner time with the family. sitting down and finding out who did what and how things were going.

So in my pursuit of the "family meal" I found several. Most of which I was familiar with. Fried chicken, meat loaf, beef stew and other similar "family dinners" or your "typical" American meal.
I chose one I was not familiar with or I should say I've heard of it but had not prepared it myself.



 I used the Pompeian Extra Virgin Olive oil. If you have not tried this yet, you should. A beautiful green color ,very rich in flavor and no nasty aftertaste. 



Chicken Paprikash
serves 4, 30 minutes to prepare and $1.85 cost per serving
6 oz wide egg noodles
1TBSP parsley flakes OR 1/2 cup chopped fresh parsley
2 TBSP olive oil (Pompeian Extra Virgin Olive Oil)
1 lb boneless skinless chicken, cut into 2 1/2 inch pieces
kosher salt and pepper
1/2 cup white wine
1 large onion, chopped
1 green bell pepper (I used 1 orange sweet bell)
2 cloves garlic chopped, (I used 2 tsp garlic powder)
1 can diced tomatoes with juice
1 TBSP paprika + 2 tsp
1/2 cup sour cream
  • cook the egg noodles according to the package directions. Drain and return to the pot. Toss with parsley and a tsp butter.
  • heat 1 TBSP oil in a large skillet over medium heat. Season chicken with paprkia, garlic powder and pepper. Brown chicken and remove.
  • Add wine to the skillet and cook off the brown bits in the bottom, scrap as you need to, cook 2 minutes and transfer to the bowl with the chicken.
  • Add the remaining oil to the skillet and cook the onion and peppers until tender, add the tomatoes and other spices. Stir and cook for 5-6 minutes.
  • Add the chicken and sauce back into the pan. Cook until the chicken is done. remove chicken and stir in the sour cream. 
  • Serve the chicken and sauce over the noodles.


Now this dish was something I had not tried before and I enjoyed it but my husband was not real big on it. I was surprised. The flavor palate was nothing new and ingredients that I use on a normal daily basis. It may have been because he was not feeling well but he said it was "okay". It was not "Fabulous" by any means. But a good hearty dish.

Chickadilla Soup

With the cooler temps and watching the leaves fall, it puts me in the mood for a yummy soup. I thought I'd try something just a little different, but not too terribly much.
 My friend Jutta and I were talking about it. So we decided to do the same soup, but with our own twist. So I found a recipe, shared with her and then we did our own thing.
Here is her version, doesn't that look good? You can hop over to her page for the recipe.

Here is my take on it. As you can see, they are two very different soups but great and packed with flavor.
You could garnish with cilantro and cheese if you desire.

Chickadilla Soup
4 chicken tenders (boneless skinless breast strips)
1 can fire roasted tomatoes
1 can chick peas, rinsed and drained
1 can pinto beans, rinsed and drained
1 can green mild chili enchilada sauce
3 cups chicken broth
1 TBSP taco seasoning (I make my own)
1 tsp onion powder
1 tsp paprika
1/2 tsp chipotle rub seasoning

Place the chicken in the bottom of the crock pot and mix all other ingredients and pour on top. Cook for 4 hours on high, pull the chicken out and shred, place it back inside the pot and cook  2 more hours on low.
Instead of crackers with our soup we ate baked tortilla chips.

Sriracha Ranch Chicken with rice vermicelli

Sriracha seems to be the big thing these days. Everywhere I look I see a recipe that is using it or someone is squirting it on top of a dish. As someone who tends to go against the flow and stray from trends I figured what the heck. My husband loves the stuff so why not make something with it.

This was really good and a different way to use up veggies. A stir fry of sorts but not exactly.

Sriracha Ranch Chicken with Rice Vermecilli noodles
6 boneless skinless chicken breast tenders
1 pkg ranch dip mix, dry
2 celery ribs, thin sliced
1/2 - 1 cup bean sprouts
2 cups broccoli slaw mix (shredded broccoli and carrots raw)
6 oz (half package) fine rice vermicelli noodles

Cut the chicken tender into bite size pieces and sprinkle the ranch mix on top. Coat well and saute in olive oil. When chicken is almost done add the celery and broccoli slaw. Boil water in a medium size sauce pan. Once it is at a rolling boil, add your noodles. Cook according to the package directions.
Drain and rinse with cold water.
Serve the ranch chicken mix on top of the noodles and squirt with as little or much sriracha sauce as you'd like.

Pumpkin Broccoli Rice Pilaf #CIC

Here we are with another CIC, Crazy Ingredient Challenge. Jutta, from Hungry Little Girl, just loves to stretch us in our cooking imagination.

I love a good challenge and when I read that Octobers ingredients were pumpkin and broccoli, well, I thought she might have just lost it.

I really had to put my creative juices flowing on this one and what I came up with was an absolutely FANfreakin'tastic dish! I'm a little biased. haha

My husband loved it. He took a bite and said "I don't know what this is but it is awesome". WOOT 2 thumbs up and a 5 fork rating from my husband. Good sign


Pumpkin Broccoli Rice Pilaf - CIC
Far East Rice Pilaf original mix (rice, orzo, tumeric)
2/3 cup pumpkin puree
2 1/2 cups water
2 TBSP butter, unsalted
1/2 - 3/4 cup fresh chopped broccoli
1/4 tsp nutmeg

In a skillet place butter, rice and orzo. Mix well and allow some browning to occur. Add water, pumpkin and nutmeg. Stir well ,cover and simmer for 10 minutes. Add more water if needed and chopped broccoli. Cover and simmer until tender.
That simple!

Basic Mexican Salad - #TheSaladBar

This month as part of  #TheSaladBar group our theme was Mexican. That was just too easy for me. I love Mexican food and would love to have thrown some nachos together or taco salad. mmm tacos with ground beef or fish. 

Instead I headed over to a friends house via online and found a great 'basic' salad that they eat all the time. Of course I made a few changes and made it my own.
She used tomatoes and I forgot to buy any. Not sure how I forgot, but I did. I added the peppers and radishes.

 Basic Mexican Salad
1 avocado, peeled and sliced
1 head green leaf lettuce
2 carrots, thin sliced
3 radishes, thin sliced
2 sweet salad peppers (orange and red)
1 large cucumber, peeled and thin sliced
4 TBSP white vinegar
3 TBSP olive oil
salt and pepper to taste
1 tsp garlic powder
2 tsp sugar
1 tsp Dijon mustard

Mix your marinade/dressing/vinaigrette and if possible slice the vegetables (not the avocado or lettuce) and allow to sit for a few hours so the flavors marry. Then arrange on top of the lettuce and top with the avocado.

Close up...mmm mmm good, yes?

Aunt Dianne's Macaroni Salad and Fly on the Wall

Time for another Fly On The Wall post...don't you just love these? A peek into the lives, kitchens and homes of bloggers. Some are just hysterical and will make you laugh until the tears run down your legs. I have to read them during the day, I find that when I read them late at night, I wake up my husband with my hysteria.

Hope you will visit some if not all of them. It will be worth your time. Because if you are having a bad day, you'll laugh, you'll cry and I promise you'll feel better.

Trying to decide what recipe to share with you all, I decided on my Aunt Dianne's macaroni salad. It was my Daddy's favorite. If we had a family gathering he always wanted her to fix it. I don't think anyone else even ate it except her daughter Tina and my Daddy. I never even ate it.

So a few weeks ago I called my mom and asked her if she knew what was in it. I would have loved to have called Aunt Dianne and asked her but she passed away the end of May. I have found myself wanting to call her a lot lately. She and I were very close. We were the "black sheep" of the family. The rebellious ones. Now without her AND my Daddy, I'm the "bad" one left. Oh well, guess I need to make up for them not being here and be "bad to the bone" LOL

Back to the salad. I added garden peas because I love them. Aunt Dianne added green bell pepper to hers, but they bother me. I can eat sweet red, yellow or orange ones all day long but not green.

It is really simple:

Aunt Dianne's macaroni salad
2 cups dry pasta
1 cup frozen peas
Duke's mayo
2 boiled eggs
3-4 TBSP sweet pickle relish
1-2 tsp mustard
1/2 diced onion
salt and pepper to taste

Boil the pasta and peas together. When the pasta is done so will the peas. Drain well. Chop or mash up your peeled boiled eggs. Now mix all the ingredients together. Eat warm or chilled. 
Perfect for a picnic, potluck, side dish for either lunch or supper.
**Aunt Dianne always used elbow macaroni, but I was out. she also used diced green bell peppers but I used garden peas.

I receive a text from my youngest son "your Christmas present is on the way, it will have my name on it. Don't open it until Christmas"
Really?!? He's in TX, like he's gonna know. I mean come on, I have to sit here missing him and his gift in front of me for almost 3 months? I don't know if I can handle this stress. LOL

Random text  from our oldest sons friend in GA. Who by the way I have not seen or heard from in...oh 10 years.

"I just found out that my family came from Germany and we fought in the Revolutionary War."

Pet peeve time. Talking with a friend and she says "I seen you at Wal-Marts the udder day" 
In my head, I'm thinking "REALLY" and out my mouth came. "NO you 'saw' me at Wal-Mart.
friend:Yeah I seen you at Wal-Marts
Me: "No. I was not at ALL of them and Wal-Mart is singular.
friend: whatever

Here I am walking from one end of the house to the other and back. My husband says "what are you doing?"
Me: I raise my hand to start talking because I talk with my hands and then I say "uh, never mind"
He just shakes his head.
I didn't want to tell him I was looking for my cell phone. It was in my hand.

We were driving home and discussing some friends and their political views. I said "you know they are part of that tea bag stuff"
dh: laughs You mean tea party
me: laughing- yeah, you know what I mean
dh: yeah but I think I like the tea bag name better, you gonna tell her what you called it?
me: ugh, NO
more laughing 

With modern technology, we are getting more and more dependent on our cell phones. If you want to avoid embarrassments like these, maybe you should call and not text.

We get in the truck, my husband is sitting there looking at me. I'm like "what".
He says: "Nothing. I was looking for my seat belt, but I already hooked it up."
Bahahahaa

More conversations with Miss Sassy Pants, little J my grand daughter:
Oct 6th she turned 3. We were on the phone and I asked her if she was getting ready to go to her moms. And she said "jes"
I said "I see"
J: NO you don't! You not here, you can NO see my mommy!"
LOL

She got lots of Doc McStuffin' stuff. She loves that show.

Here she is in her cute dress, however, she topped it with her fairy costume. LOL - she's rotten

She grabs the phone "HEY"
I said "hey, don't be rude and grab the phone from gramma. Okay?"
J: who dis?
Me: who is this?
J: dis is J..., now who is dis?
Me: Mimi Dawn.
J: OH why you no here?
Me: I can't today, I'm at my house.
J: oh, okay bye
phone falls to the floor

On the 5th she had a party at my moms with my sons friends. (he and "baby mama" are not together) and then on the 6th her birthday I spoke with her on the phone.
Me: Hey Happy Birthday
J: IT'S OVER!!! (yelling)
Me: why are you yelling? That's not nice AND today IS your birthday.
J: NO IT NOT! IT'S OVER, ugh..(deep sigh) I keep telling you people it's over. (drops phone)
Picks phone up
J: I had a party and got...blah blah blah
Me: I know and you're having one today at your mommy's house.
J: GRRR NO, IT'S OVER
Me: okay fine, then I'll call your mommy and tell her no party, no presents and no cake.
J: OH NO I going to my mommys howse for pwesents and  can nuhl cake. BYE
drops phone
