Pizza Cookie

I love pizza and so do most kids I know. So what  after school snack than a cookie that looks like a pizza? I wanted to make taco sugar cookies but do you know how hard it is to bake a cookie and it come out shaped like a taco shell? I have no idea how to make them 'pretty' so I gave up and made a pizza instead.

This post is the first for #Fillthecookiejar with Feeding Big, a monthly cookie party. Each month will have a different theme. This month is back to school or kids favorite. Since my kids are all grown, I was thinking about what they would want when they got home. Pizza, cookies,so why not make one that is both.

Here is my submission:
Pizza Cookie
1 family size bag of sugar cookie mix = pizza crust
1/3 cup mini chocolate chips = ground beef
2 kiwi = diced is the green peppers
5 strawberries = diced is the tomatoes
1/3 cup butterscotch chips = represents the cheese
Follow the directions on the bag of mix, I used my stone to bake my "pizza" and sprinkled everything on top.
Delicious and sort of healthy :)

Grab N Go Breakfast Sandwich

I actually made this for supper one night. I was hungry, not wanting to do any 'involved' cooking, plus no one was home.
Opening the fridge and looking around I saw several things that I wanted and decided to combine a few of them.
This would be great in the mornings, you could eat it on the way to work or sitting at your desk. A great anytime meal. With the kids already back in school, this is a great quick meal for them as well. You could even fix a few at a time and wrap them in the fridge. Then when you're ready just heat, go and eat. Perfect.

Grab N Go Breakfast Sandwich
1 egg
2-3 TBSP shredded cheese
2 slices of precooked bacon crumbled
1 slice breakfast sausage, cooked
1 bun

Whip the egg, add fresh cracked pepper, the bacon and cheese. Pour into a heated small saute pan with butter. Cook until done. About 2 minutes max. Fold and place on a bun with the cooked sausage patty and I used chipotle dipping mustard.

July Foodie Pen Pals reveal

Hard to believe it is the end of July already. I really don't know where the time goes.

It is hard to say what my favorite was. It was a tie between the chocolate crisp and the Meyer lemon cookies. Both were delicious and are my favorite flavors.

Ugly Peaches n' Creame Pie with home-made whipped cream

Happy Monday. Okay, it's Monday, not so sure about the happy part. It is super hot and muggy outside already. Yuck AND we are expecting more rain. I don't ever remember a year so filled with rain. We have been in drought conditions for...I'm not sure. I think about 7 years. Now we are WELL above our yearly rainfall due to the last 2 months. Severely flooding, ruined crops, collapsed roads, it is terrible.
For those of you in the flooding areas. I pray safety for you and that you don't lose your homes.
We are expected more rain everyday this week. Glad that the river is 3 miles from us and down hill some.

There should be a road, grass and a driveway here. About 25 minutes from my home.

On the right you can see the top of a car floating but yet someone STILL tried to drive through the water. You never know how deep or fast the water is. DO NOT try to drive through flood waters.

Okay, enough of all that. On to the recipe.

Have you ever had an idea in your head that worked but when you tried it - it bombed. Yeah, that's this pie. It taste great don't get me wrong. If it tasted bad I would not dare put it up here. However, I want you to know that everyone fixes something that just doesn't work out all the time.

My grandmother used to say that ugly cakes and pies were the best tasting. Well, this is one ugly pie and it tasted great. I will try again and see if I can fix the issue but for now. I thought I'd share it anyway.

UGLY Peaches N' Creame Pie
4 peaches, peeled, pitted and sliced
1/3 cup sugar
1 1/2 tsp cinnamon
1/2 tsp nutmeg
pie crust
home made whipped cream
1 1/2 cups Almond Milk
1 pkg french vanilla pudding

I used a pre-made pie crust that you unroll and bake. My crust don't normally turn out very well so I thought I'd cheat. HA! that didn't help much. When the package says DO NOT grease the pan. They know why. I did and well, my crust 'slid' down and formed lumps. Oh well. Lesson number one. Follow instructions.


After the crust was baked and cooled off. I prepared the pudding with 1 1/2 cups Almond Milk. Letting this firm and then spreading it in the pie shell.
While this was going on I sliced, pitted and peeled the peaches. Cooking them in the sugar, nutmeg and cinnamon.
Once they have cooled and the pudding has set. Lay the peaches on top.
Chill again for at least an hour. * Lesson number 2 I was impatient and so when I sliced it the pudding was not set enough and it ran. Hence the 'ugly' pie.
Top with homemade whipped cream and the juice from the cooked peaches.


ENJOY

Oh wait, you don't know how to fix home-made whipped cream? You buy the can or plastic container stuff? Well, I did too until I fixed my own. OMGosh there is NO comparison. Once you make your own, see how easy it is and how fabulous it taste, you won't buy the other stuff again.

Homemade whipped cream
1 pint heavy whipping cream
1 cup sugar
2 tsp vanilla extract

Pour your cream into a bowl and start your mixer on low. Beat for 5 minutes. 
Add 1/2 the sugar.
Beat for 5 minutes on medium/high speed.
Add 1/2 the sugar and the vanilla.
Beat 3 minutes on medium/high and then switch to high for 1 minute and back to low for 1 minute.
DONE
You will have the loveliest whipped cream and oh so decadent!
*I stored the leftover whipped cream in a plastic air tight container in the fridge. It lasted a week before the tiny amount left was tossed out. I have not tried to freeze it but I'm sure you could.

How's it going?

yeah, not sure where all that came from but it was floating around in my head. Now that it's out, maybe I can get down to work. LOL

How has your week been? Mine has been good all things considered. My ankle is better but of course not well and my leg, well, that's another matter. A sprained ankle and popped tendon do NOT heal as fast as I would like.
Our oldest son bought his first new car. He is a happy camper. Our youngest son moved into his first home with his new bride AND they are the proud parents of Finnick. An adorable puppy! whew... husky shepherd mix. My oldest is off for the weekend with his girlfriend celebrating her birthday. awww My husband is on vacation and I'm here holding down the fort.

Let's see what I can create in the kitchen this week with no distractions....hmmm You all inspire me with your delicious looking recipes. So without further ado, on to the PARTY!

One change, I'm starting the party at 6 p.m. EST instead of the normal 9. This is a permanent change.

Here is a great smoothie I made using leftovers.
Peaches N Cream Smoothie
1/2 cup cooked peaches (leftover from a pie) cinnamon and nutmeg and sugar, cooked down.
1 cup frozen peaches
1 frozen banana
1/2 cup homemade whipped cream (leftover from the pie)
1/2 cup almond milk
Blitzed up in the Vita Mix and done!
Easy, used up my leftovers and it was like drinkable dessert. Just what I needed :)

Facts I learned this month:
If you put hot liquid in the Vita-Mix, place the lid on it and turn it on. The lid WILL come off and you WILL get a shower of whatever you put in there.

As soon as I hang out clothes on a sunny day, it starts to rain.

I clean out the litter box and one of the three IMMEDIATELY has to poop.

If I drop an egg in the floor, the dog will clean it faster than I can grab a towel.

We've had so much rain I'm expecting the chickens to start lining up two by two. OR their feet will become flippers.

When trapped in the hen house without your phone, a weapon or anyone home, you WILL see the biggest (*&^&^^%$ snake of the year! Now I know where the eggs have been disappearing too.

Shopping:
The one day I go out for just 1 item and don't change from my 'house cleaning clothes' is the 1 day I see EVERYONE I know. :(

When you have a headache is the one day that NO toddler or baby in town has had a nap and their moms ALL needed something from the same store I'm in.

Chilaquiles - guest post

Chilaquiles Recipe| Spatulas on Parade
Staring at the menu of one of my favorite local restaurants, I saw a peculiar looking dish which a name I could barely pronounce that seemed a little heavy for brunch; so I ordered it. It was called “Chilaquiles” and it immediately became one of my favorite foods. Chilaquiles are a traditional Mexican dish that can actually be served for any meal. It’s a hearty and savory mix of chili, cheese, tortilla chips and chorizo. The best part is that it’s fairly easy to make at home.  So whether you want to impress guests with spicy and delicious recipe, or you just want to treat your family to a yummy weekend brunch, this is a great recipe to try.
Ingredients:
No-Stick Cooking Spray
1 can  of no bean chili
1 can of seasoned beans, undrained
3 cups yellow tortilla chips (about 35 chips)
1 can  of diced tomatoes with green chilies, drained
10 ounces crumbled queso fresco cheese
1 tablespoon chopped fresh cilantro
1 cup of chorizo, broken up into small pieces (optional)

Directions:
1.  Preheat oven to 400°F. Spray 2-quart deep baking dish with cooking spray.
2.  Cook the chili, beans, and chorizo in a large saucepan over medium-high heat for about 5 minutes, or until hot.  Add the tortilla chips and stir to combine.
3. Layer 1/3 each of chili mixture, drained tomatoes and cheese in baking dish. Repeat layers twice, ending with a layer of queso fresco. You can sprinkle a few tortilla chips on top as well.
4. Cover the dish with foil and bake for 25 minutes. Garnish with chopped cilantro and serve hot.
** If you’re serving this as a breakfast dish, serve the Chilaquiles with a poached or scrambled egg to complete the meal. Enjoy!

sandwiches

It is just too stinkin' hot to cook!! So it's salad and sandwich time. Not something I normally do, but considering I popped a tendon and sprained my ankle, a sandwich is a meal saver. Throw in some ice cream for dessert and we're all set.

Since we are over run with tomatoes, a BLT sounds good all the time. No I haven't fixed them everyday, bacon cost too much otherwise I would. :)

I have 3 favorite sandwiches that are super easy and filling. You can precook your bacon early in the day before the heat sets in and serve it room temperature, heat it in the toaster oven or in the microwave if you must.

A 'regular' BLT but only with Dukes Mayo. My kicked up version-grilled cheese and then our Buffalo chicken grill cheese.

Home made tomato sauce

We were over run with zucchini for two weeks, now it is tomatoes. At least it did not happen all at one time. With so many tomatoes, I've made salsa, spaghetti sauce and I decided to can my own tomato sauce.

Homemade Tomato Sauce
2-3 qts tomatoes (I used 5 types of tomatoes)
2 cups water

Cook this down for 20 minutes and then add:
2 tsp garlic powder
1 tsp black pepper
2 tsp sea salt
2 tsp oregano
1 tsp parsley
4 basil leaves
1 TBSP olive oil

Cook for another 20 minutes. Allow this to cool to room temperature. Then you pour it into a Vita Mix and blend well. After this is done I poured the mixture through a strainer to removed all the seeds and bits of skin left from the tomatoes.
Ladle into sterilized jars and place in your canning pot.
Can process as you would any jar.
Cool and store.


As you can tell I recycle jars :)

I am nursing a bum ankle right now. Crazy thing totally folded on me earlier and I thought it was broken. Not so, just a severe sprain and a lot lot lot of pain.

Smoothie Surprise - Crazy Ingredient Challenge

Each month I normally take part in the Surprise Recipe Swap. Well, that has changed and now it is the Crazy Ingredient Challenge. You can find all the details HERE


This month the challenge was... Chocolate AND Cauliflower. My first thought was to shred cauliflower and put it in chocolate muffins. Which I may still do, but I thought I'd try something different. A smoothie. Yep, I drank my cauliflower.

Surprise Smoothie
1 cup almond milk
1 cup cauliflower
2 TBSP chocolate syrup
1 frozen banana

All items placed into my Vita Mix. I blended the almond milk and cauliflower first, then added the chocolate and frozen banana. It whirled on low, then medium and then high for about 2-3 minutes.



Beautiful isn't it? Nice and smooth, you would never have known what was in it if I did not tell you.



Proof that I did drink it. Now I had been working in the yard so not the best photo but the best refreshing drink afterwards that was for sure.
