Easy Coconut Cream Cheese Pie

While preparing to move, this was another "throw together" dessert, that turned out well and was really a fluke.

I looked at what I had available, needing to get rid of some perishables and when finished, we had dessert and a recipe/pie worthy of being on the blog.

Not bad if I do say so myself.


My husband loved it, but then again, he loves dessert, and meat, and bacon. yes bacon is meat, but bacon is in a category all by itself for him.


Easy Coconut Cream Cheese Pie
1 frozen deep dish pie crust (baked according to the package)
1 - 8oz cream cheese, room temp
1 pkg instant coconut flavor pudding
1 cup dark chocolate chips
1 1/2 cups organic milk
1/2 cup coconut, toasted

On a baking sheet, place the coconut and toast while the pie crust is pre-baking. Allow both to fully cool off before finishing the pie.

In a bowl, place cream cheese and milk. Blend well, next add the pudding mix. Once it is blended well, stir in your chocolate chips. Spread the mix in the pie crust and top with toasted coconut. 

Place in the fridge and allow to cool for 2-4 hours. Slice and ENJOY!
