Tomorrow is Cinco de Mayo and I'd like to share my celebration recipes with you, then on to the party. Funny that this is week "5" and it is Cinco de Mayo, could not have planned that any better.
Mango Salsa Chicken Tacos
8 boneless skinless chicken tenders
Chipotle Rub (Pampered Chef)
8 flour tortillas
rub the tenders and allow to marinate for at least an hour. Saute and shred the meat for tacos. Serve on warmed tortillas with tropical salsa. Quick, easy and delicious.
1 ripe mango, diced
5 sweet salad peppers, diced
1/2 red onion diced
1/3 cup drained crushed pineapple
1 tsp dried cilantro
2 limes, juiced and zested
Dice and mix all ingredients, allow flavors to marry while chicken marinates. Enjoy!
With the leftover chicken the next day (no leftover salsa because it was so good I ate it with chips as a snack.) So with the chicken I made quesadillas, add the chicken, some cheese and grill. YUM ~ I make quesadillas from leftovers a lot. Use leftover ground beef, cheese and salsa, use just cheese and salsa, leftover chicken. Quick, easy and delicious.
