Parmesan Chicken with 4 cheese Risotto

How do you feel about Parmesan chicken? I love it and have cooked it about four or five different ways over the years. Last night I used panko crumbs instead of regular bread crumbs, fried the chicken in my cast iron pan and served it with a four cheese risotto. It was great. I used 3/4 cup of panko and 1/3 cup Parmesan cheese mixed well and rolled/dipped the chicken in.

  1. lay out the plastic wrap
  2. place the boneless skinless chicken breast on the wrap
  3. place another sheet of plastic on top
  4. pound the chicken thin
  5. dip the chicken in an egg wash
  6. dip in panko/Parmesan cheese mix(repeat 5 and 6)
  7. carefully place into a HOT cast iron skillet with oil
  8. cook thoroughly on each side
  9. heat spaghetti or marinara sauce
  10. cook risotto
  11. serve
  12. enjoy



  1. This looks good! We are not big fans of red sauce, but the chicken looks great! I would love to hear more about the risotto!

    1. Cynthia, the risotto was a box...which I normally do not do. I purchased it at Aldi. You cooked it and added butter and parmesan cheese to the mix when it was done. I love cheese but dh is not a cheese fan and he did not like it.

  3. I just made it for dinner & went looking for what others thought. I was not a fan, I thought it had an off chemical-y kind of flavor & I usually love things from Aldi's. The chicken looks yummy though, I love chicken parm!
