If you don't know by now, you'll figure it out by reading recipes, I love lemon, not like, LOVE.
I was in the mood for cookies one day but wanted something lemony as well. These cookies provide the fulfillment for both cravings.
1 c shortening (I use butter)
1 1/2 c sugar
2 c flour (all purpose)
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
zest of one lemon
juice of one lemon
Cream the shortening/butter, eggs and sugar together in a large bowl. In a medium bowl mix all the dry ingredients. Add the dry to the cream mix and fold in zest.
Make dough into 1 inch balls and roll in the lemon sugar. ( 3/4 cup sugar and juice of 1 lemon)
Place the dough balls on a cookie sheet.
Bake at 350 degrees for 8-10 minutes.
These will spread out so leave room between the dough balls.
Cool on a cookie rack and enjoy!
